An interesting salad that is definitely not low cal! Very popular as a side dish or a meal with my family and friends.

6 eggs
1 pound bacon
2 bunches fresh spinach, rinsed and dried
4 green onions, thinly sliced
2 eggs
¼ cup white sugar
¼ cup white vinegar
¼ cup red wine vinegar

Steps:

  • Place 6 eggs in a medium saucepan with enough cold water to cover. Bring water to a boil, and immediately remove from heat. Cover, and let eggs stand in hot water for 10 to 12 minutes. Remove from hot water, cool, peel, and chop.
  • Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble, and set aside, reserving approximately 1/2 cup of drippings in the skillet.
  • In a large bowl, toss together the spinach and green onions.
  • Heat the reserved drippings over low heat. In a small bowl, whisk together the 2 remaining eggs, sugar, white vinegar, and red wine vinegar. Add to warm grease, and whisk for about a minute, until thickened. Pour at once over spinach, add crumbled bacon, and toss to coat. Garnish with chopped egg.

I served this terrific salad to guests and it was a hit! Pour the hot dressing over the salad right before serving time. I found this recipe in an old Farm Journal cookbook. Cook time is for the time it takes to boil the eggs and fry the bacon.

6 cups spinach, washed,drained very well and torn into bite-size pieces
1/4 cup sliced green onion
3 hardboiled egg, coarsely chopped
5 slices bacon, chopped
1/4 cup vinegar
2 tablespoons sugar
2 tablespoons water
1/2 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Combine spinach, onions and eggs in a large salad bowl.
  • Cook bacon in skillet until crispy; remove bacon and drain on paper towels.
  • Pour off all but 3 tablespoons of bacon drippings.
  • Add vinegar, water, sugar, salt and pepper to bacon drippings, heat to boiling, stirring to blend.
  • Pour over spinach mixture; toss gently.
  • Sprinkle with bacon.

4 cloves garlic, minced
1 pound triple washed spinach, stems removed
1/2 teaspoon ground or freshly grated nutmeg

Steps:

  • Heat a skillet over medium heat. Add oil and garlic. Saute garlic in oil 2 or 3 minutes. Add spinach to the pan in stages. Fill the pan with leaves and turn leaves in warm oil until they wilt. Add more spinach to the skillet and repeat the process until all of the spinach is incorporated. Season the wilted spinach with salt and pepper and nutmeg, then serve.

I saw this recipe made on an Italian cooking show, it was all in Italian, but the recipe was so easy to follow I didn't need to know the language. You can use either fresh spinach, or frozen, but if you do, make sure the excess moisture has been squeezed out. I served it with roasted chicken.

1/4 cup red onion (chopped)
1/4 cup black olives (chopped)
2 cups spinach (chopped)
1/4 cup feta cheese (crumbled)
5 leaves basil (chopped)
1/3 cup rice vinegar (or these substitutes)
Salt and black pepper to taste

Steps:

  • Boil your orzo pasta according to package instructions
  • Once boiling, immediately wash your orzo pasta with cold water
  • Once washed, drain all excess water from the orzo
  • Transfer the pasta to a serving bowl
  • Add 3tbsp olive oil to the pasta immediately and stir to prevent clumping
  • In a saucepan, add 2tbsp olive oil and bring to medium heat
  • Add your spinach and basil leaves and cook for about 2-3 minutes, until wilted
  • Turn off the stove and let it cool
  • Once cool, add to a serving bowl
  • Add the chopped olives, onions and feta crumbles to the same bowl
  • Now add the rice vinegar, salt, and pepper to the bowl
  • Add your orzo
  • Stir to combine, add more olive oil if needed
