WILD RICE SALAD WITH MUSHROOMS

Use this recipe as a guide, not dogma. You'll see options below. Once made, it's tasty either warm or at room temperature, and will keep in the fridge a few days.

1 cup wild rice
1 quart chicken broth, (or any other nice broth)
1 pound shiitake mushrooms, (or any other mushroom you like)
Salt
2 tablespoons butter or vegetable oil
1 yellow or white onion, (sliced thin)
2 cloves garlic, (minced)
1 tablespoon minced fresh sage ((or rosemary))
2 tablespoons walnut oil, (or some other nice oil)
2 tablespoons dark beer vinegar, Worcestershire or walnut ketchup
Black pepper to taste

Steps:

  • Bring the broth to a boil and add the wild rice. Simmer this until the rice is done, checking after 20 minutes; real wild rice will be done, but farmed will likely need up to another 20 minutes. When the rice is done, drain it and set it aside.
  • Get a large sauté pan hot over medium-high heat. Add the mushrooms. Shake the pan and let the mushrooms sear until they start to give up their water. Once they do, sprinkle with salt. Once the water has mostly boiled away, add the butter or vegetable oil and the sliced onion. Toss to combine. Cook, stirring often, until you get some nice browning on both the mushrooms and the onion.
  • Add the garlic and sage and cook another minute or two. Add the wild rice and the remaining ingredients to the pan, toss to combine and let cook one more minute. Serve hot or at room temperature.

1-1/2 cups uncooked wild rice
1/2 teaspoon salt
1/4 teaspoon pepper
3 bacon strips, cut into 1/2-inch pieces
2 cups sliced fresh mushrooms
1 small onion, chopped
1/2 cup sliced almonds

Steps:

  • In a large saucepan, bring broth to a boil. Stir in the rice, salt and pepper. Reduce heat to low; cover and simmer for 55 minutes or until rice is tender. Remove from the heat. , Meanwhile, in a large skillet, cook bacon over medium heat until crisp. Using a slotted spoon, remove to paper towels to drain. Saute the mushrooms, onion and almonds in drippings until vegetables are tender; stir into rice mixture. Add bacon.

8 eggs
2 Tbsp. water
1/4 tsp. pepper
6 slices cooked OSCAR MAYER Bacon, chopped
1 cup KRAFT Shredded Sharp Cheddar Cheese, divided
1/4 cup finely chopped drained oil-packed sun-dried tomatoes

Steps:

  • Heat oven to 350ºF.
  • Press rice onto bottom of 9-inch pie plate sprayed with cooking spray.
  • Whisk eggs, water and pepper in medium bowl until blended. Add bacon, 1/2 cup cheese and tomatoes; mix well. Pour over rice; top with remaining cheese.
  • Bake 25 min. or until knife inserted in center comes out clean.

This casserole is very special to me. I found the recipe when visiting a friend in Canada, and now my daughter send me wild rice from Wisconsin. I like to serve this with Cornish game hens.

2 small green peppers, chopped
1 large onion, chopped
2 tablespoons butter
2 jars (4-1/2 ounces each) sliced mushrooms, drained
1 teaspoon salt
4 to 6 bacon strips, cooked and crumbled

Steps:

  • In a large saucepan, cook wild rice according to package directions. Meanwhile, in a skillet, saute green peppers and onion in butter until tender. Add mushrooms and salt; heat through. Stir into wild rice; add bacon., Transfer to a greased 13-in. x 9-in. baking dish. Cover and bake at 350° for 30 minutes. Uncover; bake 5-10 minutes longer or until heated through.

Here's a tasty sounding recipe I found in a local newspaper. I haven't tried this one yet, but it's made with some of my favorite foods, so I imagine it'll be quite tasty. Per all reviewers I've changed the amount of chicken broth from the original 4 cups to 3 cups.

6 slices bacon, cut up
1/2 lb sliced fresh mushrooms
1 cup wild rice
3 cups chicken broth
salt

Steps:

  • Fry bacon til crisp and drain most of the drippings.
  • Crumble bacon and set aside.
  • Sauté mushrooms and wild rice in remaining bacon drippings about 3 minutes.
  • Add chicken broth and bring to a boil.
  • Cover pan and reduce heat to a simmer.
  • Cook 45-60 minutes or'til rice is puffed and tender.
  • Fluff rice with a fork, tast, and add salt to taste.
  • Cook uncovered to evaporate any excess moisture if necessary.
  • Toss with crumbled bacon before serving.
  • Makes about 6 cups.

Steps:

  • In a small sauce pan, cook rice with two cups of water until tender; set aside. Fry the bacon until crisp. Drain, but reserve 5 tablespoons of the grease. Crumble bacon and set aside.
  • Fry the onions, celery and green peppers in the bacon grease until the onions are translucent. Transfer the vegetables, rice and crumbled bacon to a 5 quart pan. Stir in the mushroom and chicken soups, chicken broth and remaining 3 1/2 cups of water. Simmer over medium heat for one hour to blend all of the flavors.
