COCONUT CREAM TRUFFLES
Steps:
- Place coconut in food processor and pulse repeatedly until coconut is fine and not stringy. Set aside.
- In a separate, large bowl, stir together condensed milk, melted butter, vanilla extract, and coconut extract (if using).
- Pour in coconut and stir well.
- Add powdered sugar, stir well.
- Place bowl in refrigerator and chill at least 15 minutes.
- Remove from refrigerator and roll into 1 1/2 Tablespoon-sized balls (if the filling is too sticky, return to fridge for an additional 10 minutes to chill).
- Place on wax-paper lined cookie sheet, repeating until all filling is rolled.
- Place cookie sheet in the freezer for 10 minutes.
- Prepare melting wafers according to instructions on package.
- Dip chilled coconut truffles into dark chocolate, return to wax paper lined cookie sheet and allow chocolate to harden before serving. If topping with sprinkles or toasted coconut, be sure to add before chocolate hardens.
- Keep uneaten truffles refrigerated in airtight container.

Steps:
- Line a baking sheet with wax paper or parchment.
- Sift the confectioners' sugar into a large bowl. Add the sweetened coconut, almonds and condensed milk. Stir to combine.
- Remove a heaping tablespoon of the coconut mixture and use the palms of your hands to roll it into a ball about 1 1/4 inches in diameter and place on the prepared baking sheet. Repeat with remaining coconut mixture. Refrigerate the truffles until firm, about 15 minutes.
- Meanwhile, add the white chocolate chips to a microwave-safe bowl and heat in the microwave on 50 percent power in 30-second intervals, stirring in between each, until the chocolate is melted and smooth. Stir in the shortening to combine.
- Add the unsweetened coconut to a small bowl. Dip a truffle into the melted chocolate to coat completely, then use 2 forks to lift it out, allowing the excess chocolate to drip off. Place the truffle in the unsweetened coconut and roll to coat, then return to the baking sheet and allow the chocolate to set, about 20 minutes. Repeat to coat the remaining truffles.
- Enjoy immediately or store the truffles in an airtight container at room temperature for up to 4 days.
COCONUT CREAM TRUFFLES
I ripped this out of a magazine I was finished with while traveling abroad... they looked so tempting.I'm not a big fan of white chocolate or coconut flavour but made them for a party and thought hubby would love them... well, shock ! they were the surprise hit of the party & I really like these too :) They made it into my family handwritten recipe book. It's easy to make and can be made in advance, both major points for making it onto my menu's. Recipe calls for Coconut essence and I can't get it here in The Netherlands ... it probably makes the taste a little less intense. You choose .. if you are a true fan of coconut throw it in, if you don't have it or like the taste as much, I wouldn't worry at all about not adding it. Enjoy ! Note: butter measurement 150g = 5 1/4 oz and chocolate measurement 375g = 13 1/4 oz.

Steps:
- Gently melt butter and white chocolate in large bowl in microwave.
- For best results don't over melt, if just a few chocolate pieces appear solid, stir them in with what has already melted until it's all smooth.
- Add coconut milk, coconut essence (optional), desiccated coconut and icing sugar.
- Stir until well mixed.
- Recipe says chill so you can roll it into balls, freeze etc, but personally I spooned my mixture into two small plastic bags so that it formed slabs about 2cm thick, then threw it into the freezer for at least 2 hours.
- Remove slabs from freezer, peel away plastic bags and"dice" your mixture so that you have a plate full of little cubes.
- Microwave your dark or milk chocolate mixture until half of it is melted, stir until all is smooth (doing it like this meant that the mixture started to set quickly and evenly around the cubes and didn't just make puddles at their bases).
- Dip the cubes one by one into the darker chocolate mixture, turning over with a teaspoon until evenly coated.
- Place coated cubes onto a tray lined with foil.
- Leave at room temperature to set, and store in a cool place (not the fridge).
- Edited to add: making the filling into round balls does look more professional and less "home made" -- mind you, once your family and friends have tasted these they honestly won't care how they look, they'll be too busy diving back in for another one :).
- I loved the suggestion about the other flavours and played around with it -- some of my guests preferred 2T Tia Maria etc for a softer more mellow taste, other preferred theirs with 3T for a stronger taste.
- The mixtures with the Baileys/Tia Maria were softer and a little more sticky than the original, so *slightly* more messy rolling them, but your guests will love you for the 10 minutes extra work.

- Microwave caramels and milk in microwaveable bowl on HIGH 2 min. or until caramels are completely melted, stirring after 1 min. Pour over coconut in separate bowl; mix lightly. Cool 5 min.

- 1. Toast coconut AND nuts. Spread each out on a separate baking sheet in a single layer. Bake at 350 F for 12-14 minutes, stirring often to avoid burning. Coconut and macadamia nuts are toasted when they are lightly browned and fragrant. Coconut will toast faster than the nuts.
- 2. Cut or tear angel food cake into bite-size pieces. Set aside.
- 3. In a medium-size bowl, combine crushed pineapple and 1/2 jar of pineapple preserves. Mix well and set aside.
- 4. In a large bowl, combine the instant pudding mix and milk. Using a wire whisk, mix well. Then add 1 cup of the whipped topping. Set aside.
- 5. Using a trifle bowl or a large glass bowl, layer ingredients: half of the cake pieces for the first layer.
- 6. Next, half of the pineapple.
- 7. Next, half of the coconut and half of the macadamia nuts.
- 8. Spread half of the pudding over everything. Repeat layers using the rest of the cake, pineapple, coconut, macadamia nuts, and then the pudding.
- 9. Generously spread top with whipped topping. Garnish with reserved toasted coconut and nuts.
- 10. Cover and refrigerate for at least 1 hour.

- Place cake cubes in a large bowl. In a bowl, whisk the milk, extract and pudding mixes for 2 minutes (mixture will be thick). Stir in ice cream and 3/4 cup coconut until blended. - Preheat oven to 350* Place 1 cup coconut in a baking pan. (I like to use a little 9" round one)and toast coconut as the oven preheats. Stir coconut every few minutes and remove from the oven once it is toasted and golden brown. Set aside for use later.
- Place the cake mix in a large mixing bowl (or in the bowl of a standing mixer). Add cream of coconut, eggs, buttermilk and vanilla and mix well, scraping down sides of bowl once or twice during mixing.
- Line a 9x13" cake pan with a piece of wax paper. Pour batter into the pan. Place cake in the oven and bake for 20-24 mins. or until cake springs back to the touch. Remove from the oven and let cool in the pan.
- Crumble cake into a large bowl
- Make the frosting: In a standing mixer, cream the butter and the cream cheese until fluffy. Add 1 cup of the powdered sugar, sifting it into the mixer bowl and mix well. Add the cream of coconut, vanilla and coconut flavoring, salt and mix well. Add another cup of the powdered sugar and beat until fluffy. Add more powdered sugar if needed to stiffen frosting to spreadable consistency.
- Use a spatula to mix the frosting into the cake crumbs. Fold in the toasted coconut. Add 2-3 tbsp of rum if desired.
- Shape mixture into 1" balls and place them on a cookie sheet. Chill or freeze cake balls until firm.
- Place Dark chocolate chips and vegetables oil in a medium heat proof bowl that will fit over a saucepan holding a couple inches of simmering water (or use a double boiler). Dont let the bottom of the bowl touch the boiling water. It should rest just above it. Melt chocolate over the simmering water, stirring from time to time.
- Using a fork, lower the cake balls into the chocolate one at a time until covered with chocolate. Lift the cake balls out of the chocolate letting the excess chocolate drip off. Sprinkle truffles in the remaining coconut and let cool on wax paper. Store in refridgerator but serve at room temperature.
