Provided by Michael Symon : Food Network

Categories     main-dish

Time 1h20m

Yield 6 servings

Number Of Ingredients 12

1/4 cup extra-virgin olive oil
1 medium red onion, finely chopped
2 cloves garlic, minced
Kosher salt and freshly ground black pepper
5 cups thinly sliced cremini mushrooms
2 tablespoons finely chopped fresh rosemary
1/4 cup unbleached, nonbromated flour
1/2 cup dry red wine
4 cups beef stock or chicken stock
1 cup pearled barley
1 cup unsweetened oat milk
Fresh dill, for garnish

Steps:

  • Place a large heavy-bottomed Dutch oven over medium heat. Add the olive oil and heat to shimmering, then add the onion, garlic, and a pinch of salt. Cook until aromatic and just starting to soften, about 2 minutes.
  • Add the mushrooms and rosemary and cook, stirring occasionally, until the mushrooms have given up most of their liquid and are beginning to brown, about 5 minutes.
  • Add the flour and cook for 1 minute, stirring constantly. Add the red wine and stock to deglaze the pan, scraping with a wooden spoon to loosen the browned bits on the bottom. Bring to a boil and then reduce the heat to medium-low to maintain a gentle simmer. Add the barley and cook, stirring occasionally, until it's tender, about 1 hour.
  • Stir in the oat milk. Taste and add salt and pepper if needed. Garnish with dill and serve.

HEALTHY DRIED MUSHROOM AND BARLEY SOUP

Healthy Dried Mushroom and Barley Soup image

If you're looking for a hearty and healthful meal, consider this dried mushroom and barley soup. The barley adds nuttiness, a sprinkle of flour lends viscosity to the broth and the dried mushrooms provide meatiness and umami. If you have fresh mushrooms on hand, you can add them, too. The result is a deliciously nourishing, vegetarian dish that everyone will love.

Provided by Food Network Kitchen

Time 1h

Yield 4 servings

Number Of Ingredients 17

1 ounce dried porcini mushrooms (about 1 cup)
3 cups boiling water
2 tablespoons olive oil
2 medium carrots, finely diced
1 medium onion, diced
8 ounces cremini mushrooms, thinly sliced, optional
Kosher salt and freshly ground black pepper
4 cloves garlic, minced
2 tablespoons sherry vinegar
1 tablespoon tomato paste
1 tablespoon all-purpose flour
1/2 teaspoon dried thyme
1 cup pearl barley
4 cups low-sodium vegetable or mushroom broth
1/4 cup sour cream, for serving
Chopped fresh parsley, for serving
4 slices hearty white or sourdough bread, for serving

Steps:

  • Place the dried mushrooms in a medium bowl and cover with the boiling water. Let soak until well hydrated and softened, about 15 minutes. Strain through a fine-mesh sieve, reserving the liquid. Roughly chop the porcini and set aside.
  • Heat the olive oil in a large pot or Dutch oven over medium-high heat. Add the carrots, onion, cremini mushrooms if using, 1/4 teaspoon salt and several grinds of pepper. Cook, stirring occasionally, until all vegetables are tender and mushrooms are golden brown, 8 to 10 minutes.
  • Add the garlic, 1 tablespoon of the vinegar and the tomato paste to the pot, then continue to cook, scraping up any brown bits from the bottom of the pan with a wooden spoon. Sprinkle the flour and thyme evenly over the vegetables and cook, stirring, until flour is dissolved and no longer raw, about 1 minute. Stir in the barley, broth, reserved mushroom liquid and porcini, 1/2 teaspoon salt and several grinds of pepper. Bring to a boil, then reduce to a simmer, cover slightly and cook until the barley is tender and the soup has thickened and reduced slightly, 30 to 35 minutes.
  • Season with salt and pepper. Stir in the remaining 1 tablespoon vinegar and ladle into 4 bowls. Dollop with sour cream, sprinkle with parsley and serve with a slice of bread, for dipping.

Beef Mushroom Barley Soup image

Provided by Food Network Kitchen

Time 3h35m

Yield 6 to 8 servings

Number Of Ingredients 13

2 tablespoons plus 1 teaspoon canola oil
One 1- 1/4 to 1-1/2 pounds beef shin on the bone, trimmed of excess fat
Kosher salt and freshly ground black pepper
1 carrot, diced
1/2 onion, diced
1 rib celery, diced
1/2 teaspoon dried thyme
6 cups water
1/3 cup pearl barley, rinsed
1 cup chopped canned tomato
1 tablespoon unsalted butter
3/4 pound medium-sized button mushrooms, brushed, trimmed, and quartered
3 tablespoons minced flat-leaf parsley

Steps:

  • Heat a large soup pot or Dutch oven over medium-high heat; add 2 tablespoons of the oil. Season the meat generously with salt and pepper. Sear the meat on all sides until well browned; this will take about 15 minutes. Set the meat aside and wipe the pan out with a paper towel. Lower the heat to medium, add the oil to the pan. Add the carrot, onion, and celery to the pan and saute until tender, about 10 minutes. Return the meat to the pan with the water. Bring to a boil, adjust the heat to maintain a gentle simmer, cover, and cook for 1 1/2 hours or until the meat is just tender. Add the thyme, barley, and tomato, continue to simmer the soup, covered, for 45 minutes.
  • Meanwhile, in a medium saute pan, heat the butter over medium-high heat, add the mushrooms and saute until golden, about 10 minutes. Season the mushrooms with salt and pepper to taste, and add them to the soup, and simmer for 15 minutes more. Remove the meat from the soup; cut the meat from the bone and dice. Skim any fat from the surface of the soup with a ladle or large spoon. Return the meat to the soup with the parsley. Season the soup with salt and pepper to taste. Serve in warm bowls.

WILD MUSHROOM BARLEY SOUP WITH FLANKEN (BEEF SHORT RIBS)

Wild Mushroom Barley Soup with Flanken (Beef Short Ribs) image

This soup looks very clean and modern -- not the way Grandma served it. The next day, you can mix leftovers up into old-fashioned style "thick soup."

Provided by Food Network

Categories     main-dish

Time 3h20m

Yield 4 servings

Number Of Ingredients 15

1 ounce dried porcini mushrooms
3 quarts water
1 tablespoon canola oil
3 pounds short ribs or flanken
1 large Spanish onion, chopped
6 cloves garlic
6 ounces oyster mushrooms (cut into small bouquets)
1/2 pound shiitakes, stemmed
3 to 3 1/2 ounces enokis
Salt and freshly ground black pepper
1 cup barley, cooked in stock
Mustard-Horseradish Sauce, recipe follows
1 serrano or jalapeno
1/4 cup prepared horseradish
1/4 cup Dijon mustard

Steps:

  • Simmer dried mushrooms in water for 15 minutes. Let sit for 1/2 hour, then drain through coffee filter or fine mesh sieve, squeezing juice from mushrooms. Reserve the liquid.
  • In a large, heavy-bottomed braising pan or Dutch oven, heat the oil to very hot. In batches, brown the short ribs. Remove them to a side platter. Add the onions and cook until lightly colored. Add the garlic and cook for 1 more minute. Return the short ribs to the pan and add the mushroom reconstituting water.
  • On low flame, cook for 1 hour and 15 minutes, occasionally re-positioning the ribs for even cooking until very tender.
  • Remove the ribs and strain the stock. Skim off most of the fat (you can do this by cooling it down, then setting it in the refrigerator). Bring stock to slow boil in the pan. Add all the mushrooms and meat. Simmer and heat through. Season with salt and pepper.
  • To serve, put soup into bowls. Place 2 ribs in center, scoop of barley to the side, and mushrooms around. Serve with Mustard-Horseradish Sauce.
  • Remove ribs and seeds from the chile and mince. Mix into horseradish and mustard.

WILD MUSHROOM SOUP WITH CANNELLINI BEANS & PEARLED BARLEY

Wild Mushroom Soup With Cannellini Beans & Pearled Barley image

This recipe is suitable for vegetarian, vegan, anti-inflammatory, low-glycemic, gluten-sensitive, or diabetic diets. It is my of my own creation, I have cooked professionally and personally for over 25 years. It takes about ½ hour for the celery seed and wakame flavors to blend beautifully - be patient - this is a soup which develops rather quickly in its taste. Mustard and fenugreek are soothing to the digestive system, while fennel is lubricating, and cumin reduces flatulence. Cooking beans with seaweed also serves as a natural "Bean-O." All of the ingredients in the soup are naturally alkaline, which are soothing to the digestive system and nourishing for the blood. The wild mushrooms and wakame add a wonderful dimension of heartiness and "meatiness" to the broth which will become most apparent towards the end of cooking. This recipe is also extremely low in fat, and is dairy-free.

Time 55m

Yield 6 serving(s)

Number Of Ingredients 22

2 tablespoons olive oil
1/8 teaspoon sesame oil (a few drops)
1/8 teaspoon brown mustard seeds
1/8 teaspoon fenugreek seeds (or pinch ground)
1/8 teaspoon celery seed (or pinch ground)
1/4 teaspoon whole cumin seed (or 1/8 t ground)
1 pinch ground fennel (or 1/8 t whole seeds)
1/4 teaspoon dried tarragon leaves (or 1/8 t ground)
1/8 teaspoon ground black pepper
1/4 teaspoon white pepper
2 tablespoons mirin (Rice cooking wine, may substitute a sweet sherry if necessary)
1 tablespoon tamari
1/2 lemon, juice of
1/4 cup wakame seaweed (can substitute arame, hijiki, or smaller amount of dulse or kelp to your taste)
1/4 cup Italian parsley
1 quart vegetable broth
1/2 lb wild mushroom, roughly sliced (fresh or dried and reconstituted)
1/2 cup pearl barley, rinsed
1/2 large white onion, minced
5 garlic cloves, sliced thin
2 stalks celery, sliced
salt, to taste

Steps:

  • Heat olive and sesame oil in a large saucepan over medium heat. Add mustard, fenugreek, fennel, celery and cumin seeds or powder into the oil and gently toast, with the lid on for about one minute. This method flavors the oil and thus the soup with the aromatic as well as flavor properties of the spices. Be sure to keep the pot covered as the mustard seeds will "pop" and scatter.
  • Once you've heard the seeds pop for about 15-20 seconds, add the onions and sautee for a few minutes. Once the onions have begun to become translucent, add the garlic and the celery. Adjust the flame as necessary, and sautee until the celery pieces are translucent.
  • Squeeze the juice of ½ lemon and 2T of mirin into the pan to deglaze it. Then, add the mushrooms and gently stir over a medium flame for approximately five minutes.
  • Add the cannelloni beans (you may use canned, this will reduce the cooking time), rinsed pearled barley, wakame, tamari, and broth. Add enough broth to cover the beans. If you are using fresh beans, add extra broth to cover an additional inch.
  • Gently stir the soup for 40 minutes, more or less, or until beans are cooked to taste. Adjust salt to your preference.

WALKERS' WILD MUSHROOM, BACON & BARLEY BROTH

Walkers' wild mushroom, bacon & barley broth image

This is the perfect welcome-home warmer after a cold country walk, simply add some crusty bread

Provided by Good Food team

Categories     Lunch, Soup

Time 1h35m

Number Of Ingredients 12

200g pack bacon lardons or rashers
2 onions
4 medium carrots
3 celery sticks
2 garlic cloves , crushed
1 sprig rosemary and thyme
30g pack dried porcini or dried mixed wild mushrooms
1 glass white wine
1 ½l chicken stock
175g pearl barley , well rinsed
1 small head spring greens or chunk of Savoy cabbage
parmesan or any strong hard cheese, grated, to serve

Steps:

  • Put a large saucepan over a medium heat. Sizzle the lardons or bacon for 10 mins until golden, stirring now and then. While they cook, chop the onions, carrots and celery into smallish pieces. When the bacon is ready, stir in the veg, garlic and herbs, cover and gently cook for 10 mins.
  • Meanwhile, put the mushrooms into a jug, then fill up to the 600ml mark with boiling water. Leave to soak for 10 mins.
  • Lift the mushrooms out of their juice with a slotted spoon and roughly chop. Turn up the heat under the pan, add the mushrooms, fry for 1 min, then pour in the wine. Let it evaporate right down, then pour the liquid from the mushroom jug into the pan, avoiding the last drops, as they can be gritty. Add the stock and barley. Simmer for 40 mins until the barley is tender. Lift out the thyme and rosemary stalks. Can be made up to 2 days ahead or frozen for up to 1 month. If you make ahead, the soup will need loosening with a little more stock as the barley will thicken it over time.
  • When ready to serve, finely shred the greens and simmer in the soup for 5 mins until tender. Season to taste, then serve with cheese for sprinkling over the top, crusty bread and buttter.
