This pound cake is all about the earthy sweetness of maple syrup and the nutty crunch of toasted pecans.

1 cup (2 sticks) unsalted butter, room temperature, plus more for pan
1 1/2 cups all-purpose flour (spooned and leveled), sifted, plus more for pan
1/2 cup granulated sugar
1/2 cup light-brown sugar
2 tablespoons pure maple syrup
5 large eggs, room temperature, lightly beaten
1/2 teaspoon coarse salt
1 cup pecans, lightly toasted and roughly chopped

Steps:

  • Preheat oven to 350 degrees. Lightly butter and flour a 4 1/2-by-8 1/2-inch loaf pan. In a large bowl, using an electric mixer, beat butter and both sugars on medium-high until very light and fluffy, 7 minutes. Scrape down bowl and beat 1 minute more. Add maple syrup, then gradually add eggs, beating well and scraping down bowl as needed. With mixer on low, add salt, then gradually add flour, beating well to combine and scraping down bowl as needed. Fold pecans into batter.
  • Transfer batter to pan and bake until a toothpick inserted in center of cake comes out with a few moist crumbs attached, 65 minutes. Let cool in pan on a wire rack, 1 hour. Remove cake from pan and let cool completely on rack before slicing.
  • To store, freeze for up to 3 weeks. (Thaw, wrapped, at room temperature.)

2-1/4 cups packed brown sugar
5 large eggs, room temperature
2 teaspoons vanilla extract
3 cups all-purpose flour

GLAZE:
3 tablespoons unsalted butter
1/4 cup chopped pecans
1 cup confectioners' sugar
1/4 teaspoon vanilla extract
Dash salt
2 to 3 tablespoons half-and-half cream

Steps:

  • Preheat oven to 350°. Grease and flour a 10-in. fluted tube pan., Cream butter and brown sugar until light and fluffy, 5-7 minutes. Add 1 egg at a time, beating well after each addition. Beat in vanilla. In another bowl, whisk flour, baking powder and salt; add to creamed mixture alternately with sour cream, beating after each addition just until combined., Transfer to prepared pan. Bake until a toothpick inserted near center comes out clean, 55-65 minutes. Cool in pan 10 minutes before removing to a wire rack to cool completely., For glaze, combine butter and pecans in a small saucepan over medium heat, stirring constantly, until butter is light golden brown, 4-5 minutes. Stir into confectioners' sugar. Add vanilla, salt and enough cream to reach a drizzling consistency. Drizzle glaze over cake, allowing some to drip down sides. Let stand until set.

1 tbsp. vanilla extract
6 eggs, room temperature
1 c. buttermilk, room temperature
1 c. sour cream
1 1/2 c. cake flour

GLAZE
1 stick salted butter
1/2 c. sugar
1 tsp. vanilla extract
2 tbsp. light corn syrup
Powdered sugar, garnish

Steps:

  • Preheat oven to 350 Degrees and spray or grease a bundt cake pan
  • In a large mixing bowl, cream the butter. Add the sugar and beat until light and fluffy. Add the vanilla extract and begin to beat in the eggs one at a time. Once the eggs have been added begin to add the flour, buttermilk, and sour cream. Beat until smooth.
  • Pour the batter into the bundt cake pan and smooth so the cake batter is even. Bake for 40-45 minutes or until toothpick is inserted and comes out clean. Allow the cake to cook for 15 minutes and remove from pan and place on a cool rack while placing paper towels underneath. Take a toothpick and poke holes around the top of the cake.
  • In a small pot, melt the butter on low to medium heat. Add the sugar and corn syrup and bring to a slight simmer and stir for 5 minutes then remove from heat. Add the vanilla extract and pour the glaze on top of the cake. Once the cake has been completely cooled, garnish with powdered sugar.

1 1/2 cups plus 2 tablespoons all-purpose flour, plus more for pan
4 large eggs, room temperature
1 cup packed light-brown sugar
1/2 teaspoon pure vanilla extract
1/2 teaspoon pure almond extract
1 1/2 teaspoons baking powder
1/2 teaspoon salt

Steps:

  • Heat oven to 375 degrees. Butter and lightly flour a 9-by-4 1/2-by-2 3/4-inch loaf pan; set aside. Whisk eggs together in a bowl; set aside.

  • Add the brown sugar, granulated sugar and butter to the bowl of a stand mixer fitted with a paddle attachment and stir on medium speed until creamed and fully combined. Add the eggs, one at a time, until completely combined. Add the vanilla extract and sour cream and stir until combined.
  • Combine the cake flour, baking powder, baking soda and salt in a large bowl with a whisk. Slowly add the dry mixture to the wet mixture in the stand mixer until just combined.   • Butter a 10-inch fluted tube pan.
  • Coat lightly with flour, shaking out excess; set pan aside.

  • Add brown sugar and vanilla; beat on high speed until mixture is smooth and light, about 3 minutes.

  • Cook and stir over medium heat until mixture just boils and sugar is dissolved.
  • Remove cake from pan and place on wire rack.
  • Place a piece of waxed paper under the wire rack.
  • With a pastry brush, brush the warm glaze over the entire surface of the cake.
  • Cool cake completely.
  • Serve with Pear Sauce.
  • To make Pear Sauce: In a medium saucepan combine pears, lemon juice, pear nectar, sugar, and vitamin C tablet.
  • Bring to boiling over medium heat; reduce heat.
  • Simmer, covered, about 15 minutes or until pears are soft.
  • If mixture seems dry and in danger of scorching, add a bit more nectar to pan.
  • Remove from heat.
  • Cool slightly.
  • Puree mixture in a food processor or blender; strain through a fine-mesh sieve.
  • Stir in vanilla.
  • Taste sauce and adjust sugar if necessary.
  • Cool and refrigerate in an airtight container for up to 72 hours.
  • Makes about 2 cups.
  • Make-Ahead Tip: Store cooled cake tightly wrapped at room temperature up to 2 days.

1 lb box light brown sugar
5 large eggs
3 c all purpose flour
1/2 tsp salt
1/2 tsp baking powder
1 c evaporated milk

brown sugar glaze
BROWN SUGAR GLAZE
1/2 c butter
1 c brown sugar, firmly packed
1/4 c evaporated milk
3 c powdered sugar
1 tsp vanilla extract

Steps:

  • 1. Beat shortening, butter and brown sugar at medium speed with electric mixer about 2 minutes or until creamy. Add eggs, one at a time, mixing well after each addition.
  • 2. Combine flour, salt, and baking powder; add alternately with milk, biginning & ending with flour mixture. Stir in flavoring. Pour batter into a greased & floured bundt pan.
  • 3. Bake at 300o for 1 hour and 15 minutes or until wooden pick inserted in center comes out clean. Let cool on wire rack for 15 minutes; remove from pan & cool completely. Pur warm brown sugar glaze over cake.
  • 4. Brown Sugar Glaze: Melt butter in saucepan over medium heat. Whisk in brown sugar and cook 1 minute. Add milk, powdered sugar, and vanilla; whisk until creamy. Remove from heat and pour immediately over cooled cake.

4 large eggs, room temp
1 cup brown sugar, firmly packed
1 teaspoon vanilla extract
1 1/2 teaspoons baking powder
1/2 teaspoon salt

Steps:

  • Heat oven to 350°F Lightly grease and flour a 1 1/2 quart loaf pan and set aside.
  • Whisk eggs together in a bowl; set aside.
  • Cream butter and brown sugar on medium speed until light and fluffy, about 2-4 minutes.
  • Add vanilla and mix until combined.
  • Drizzle in beaten eggs, a little at a time, mixing to incorporate.
  • In a medium bowl mix flour, baking powder and salt.
  • Add flour mixture to butter mixture and mix on low speed, until just mixed.
  • Spread batter evenly into prepared loaf pan.
  • Bake until cake is browned and a toothpick comes out clean-about 1 hour 10 minutes.
  • Remove from oven and let pan cool completely for 1 hour.
  • Run a knife around the inside of the pan and turn out the cake.
  • Let cool and serve.

1/2 cup shortening
1 lb brown sugar, about 2-1/4 cups
1/2 cup granulated sugar
5 large eggs, at room temperature
3 cups all-purpose flour
1/2 teaspoon baking powder
1 cup milk
2 tablespoons vanilla extract
1/2 cup unsalted butter, at room temperature
8 ounces cream cheese, at room temperature
2 teaspoons vanilla extract
16 ounces confectioners' sugar, sifted

Steps:

  • For the cake: Preheat the oven to 350 degrees, with the rack in the middle. Line the bottom of a 10-inch tube pan with parchment and coat the pan and paper with nonstick spray.
  • Cut the butter and shortening into thick slices and add to an electric mixer fitted with the paddle attachment. Cream for 3 or 4 minutes on medium speed, then add the sugars, 1/2 cup at a time, beating 1 to 2 minutes between each addition. Add the eggs one at a time, and beat 1 to 2 minutes between each addition.
  • Whisk the flour and baking powder together. With the mixer on low speed, add the flour mixture and milk, alternately, to the batter, in 3 additions. Raise speed and mix for an additional minute. Lower speed again, add the vanilla, and beat another minute.
  • Scrape batter into the prepared tube pan. Bake for 70 minutes, or until a skewer inserted close to the center withdraws clean. Cool in the pan for 15 minutes, then invert onto a wire rack. Cool completely before frosting.
  • For frosting: Wash the mixing bowl and paddle, then re-attach to the mixer. Cream the butter and cream cheese on medium speed until light and creamy, then add the vanilla. Add the powdered sugar 1/2 cup at a time, beating until smooth after each addition. When cake is completely cool, frost.
