BEST HEALTHY VEGAN INDIAN NAAN (OR GARLIC NAAN) BREAD!
Most healthier naan recipes didn't taste as good to us as the recipes that included oil and dairy. So, we came up with this yummy and healthier alternative that amazingly still has no added oil or dairy! Like most naan recipes it is time consuming, but we love Indian food and can't seem to eat it without the naan. Add the garlic to turn the plain naan into garlic naan (our favorite). We use our recipe Recipe #247817 for the vegan sour cream, but you can also find it in grocery or health food stores.

Steps:
- Mix together flour, baking powder,salt, cumin and corriander in a lerge mixing bowl.
- Stir in the soy milk and vegan sour cream, then knead it in the bowl till it holds together well, adding more flour if necessary.
- Place on a floured surface and continue kneading for about 5 to 10 minutes till the dough feels smooth and elastic.
- Form the dough into a ball and put it in a non-stick bowl, covered with a towel, to rest for an hour or longer.
- Take the dough out and cut it into 12 equal pieces.
- Form each into a ball and press the balls flat into round discs.
- Heat a large non-stick frying pan or griddle on medium heat.
- Take 1 piece of dough at a time and roll it out on a floured surface till it is about 8-10 inches across and less than 1/4 inch thick.
- Lay it on the hot griddle and cook it over a medium heat for 2-3 minutes on each side or until it puffs up and some blackish-brown spots apear.
- Serve hot.
- To reheat, wrap them in aluminum foil, in packets of 5 or 6 breads (or less) and bake (in pre-heated oven) at 400 degrees for 10-15 minutes.

- Measure out warm water (3/4 cup as original recipe is written // ~110 degrees F or 43 C to properly activate yeast) and add yeast and sugar. Stir and set aside until frothy and foamy - about 10 minutes.
- In the meantime, add flour(s), salt, and baking powder to a large mixing bowl and whisk to combine.
- Once the yeast mixture is foaming, add the vegan yogurt and oil* and stir to combine. Add to dry ingredients and use a fork to mix - the dough will be sticky.
- Turn onto a floured surface and add just enough flour to gently knead for 5 turns and form into a loose ball. Place back in mixing bowl and rub with a bit more oil and turn to coat. Cover with a damp towel or plastic wrap and set in a warm place for at least 2 hours (up to 4 hours). (I like setting it in a sunny spot in the kitchen or in the laundry room.)

- Add a little lukewarm water and yogurt at a time to knead the dough together. If needed, add a little more lukewarm water.
- Finish the dough off with the olive oil. The dough should feel moist and a little sticky (this is what gives it a nice, not dry texture), but you should still be able to handle it easily. Knead for 3-4 minutes. Cover with a towel and let it rise in a warm place for 1.5-2 hours or until it has doubled in size.
- Separate dough into six round pieces. Let them rest until ready to roll out on a floured surface. Roll out to ~ 1/4 inch thick.

- Mix all the ingredients under sponge in order. Mix well to combine and cover with a towel. Let the sponge sit for 25 - 30 mins in a warm place.
- Then add 3/4 cup flour, baking powder, salt, and add to the sponge bowl. Add oil, mix well. Add more flour as needed to make a somewhat sticky but cohesive mixture. Knead for 2-3 mins to get to a somewhat smooth dough. Cover the bowl with a thick towel and let sit until dough is almost double in size. 1 to 1.5 hour depending on the ambient temperature.
- Drizzle a few drops of oil on the dough and spread. Use a tbsp of flour if needed to bring it together into a smooth ball. Divide the dough into 3 or 4 equal portions. Shape into smooth balls. Place the balls on parchment, cover with a towel and let sit for 10-15 mins. Meanwhile prep the skillet, toppings etc.
- Use some flour to shape the balls into naans using a rolling pin or just pressing with your hand(lightly so that all the air from the rising dough isnt squeezed out). Spritz water on top and press in any toppings like garlic, cilantro, nigella seeds or other seeds.
