  • Toss to combine, thinning with pasta water if necessary.

1 1/2 lbs Italian sausage
1/4 cup hot water
10 fresh mushrooms, sliced
1 carrot, diced
1 onion, minced
2 tablespoons olive oil
2 (28 ounce) cans ready-cut peeled tomatoes
1 (6 ounce) can tomato paste
1 cup dry red wine
3 tablespoons fresh parsley, chopped
1 teaspoon basil
1/2 teaspoon oregano
fresh ground black pepper

Steps:

  • Place sausage in a skillet. Add hot water, cover, and cook for 10 minutes.
  • Remove sausages and separate links if necessary. Discard drippings.
  • In a large Dutch Oven, saute mushrooms, carrot and onion just until al dente.
  • Add sausages.
  • Add remaining ingredients. Cover and simmer 1 hour, or until thickened, stirring occasionally.
  • Serve over pasta, or by itself with hot crusty bread.

This is one of those all-day simmering beef, tomato and herb sauces. It is very good and very nutritious! Ingredients can be increased or lessened to your taste. Freeze the remainder of sauce in plastic bags in serving sizes. Tastes better with each heating!!

1 pound lean ground beef
2 (28 ounce) cans whole peeled tomatoes
2 (6 ounce) cans tomato paste
1 large onion, chopped
4 stalks celery, chopped
2 green bell peppers, chopped
1 red bell pepper, chopped
15 fresh mushrooms, sliced
5 tablespoons Italian seasoning
1 teaspoon dried red pepper flakes
4 bay leaves
2 tablespoons chopped fresh basil
3 cloves garlic, minced
1 pound spaghetti

Steps:

  • In a large skillet, brown beef over medium heat until no longer pink; cut up any remaining chunks of beef and reserve.
  • In a large saucepan, combine whole tomatoes and paste; mash until smooth. Cover and heat on low.
  • In a large skillet over medium heat, quickly sear onion and celery until transparent; add to tomato sauce in saucepan. In same skillet, saute bell peppers and mushrooms for a few minutes, but do not allow them to become soft; add to tomato sauce.
  • Add Italian seasoning, dried red pepper flakes, bay leaves, basil and garlic to tomato sauce; add beef and mix. Remove cover, simmer over low heat and continue to simmer all day, stirring occasionally.
  • Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
  • Add sauce to pasta; serve.

3 tbsp olive oil
1 onion, finely chopped
2 large garlic cloves, crushed
½ tsp chilli flakes (optional)
400g can chopped tomatoes
5 anchovy fillets, finely chopped
120g pitted black olives
2 tbsp capers, drained
300g dried spaghetti
½ small bunch of parsley, finely chopped

Steps:

  • Heat the oil in a non-stick pan over a medium-low heat. Add the onion along with a generous pinch of salt and fry for 10 mins, or until soft. Add the garlic and chilli, if using, and cook for a further minute.
  • Stir the tomatoes, anchovies, olives and capers into the onion, bring to a gentle simmer and cook, uncovered, for 15 mins. Season to taste.
  • Meanwhile, bring a large pan of salted water to the boil. Cook the spaghetti following pack instructions, then drain and toss with the sauce and parsley.

5 garlic cloves, minced
1/3 cup olive oil
3 onions, sliced into thin crescents
1/2 cup fresh parsley, finely chopped
1 lb spaghetti or 1 lb linguine
water for cooking pasta
3 large eggs
4 tablespoons parmesan cheese, grated
1/2 cup fresh basil, torn into small pieces
fresh ground pepper
parsley
basil
grated parmesan cheese

Steps:

  • Brown garlic in olive oil.
  • Add onions and gently saute until crunchy and brown.
  • When onions are almost done, add parsley and saute until limp.
  • Cook pasta in boiling water until al dente.
  • While pasta is cooking, beat eggs, cheese, and basil together.
  • Drain pasta and place in serving bowl.
  • Fold egg mixture into hot pasta.
  • Add onion mixture and mix well.
  • Sprinkle with pepper and top with additional parsley, basil and Parmesan.

  • This is enough sauce for 1 pound of pasta. If you want to turn it into a baked dish, cook up a pound of penne or zitti pasta and drain, then stir into the finished meat sauce. Layer half in a 9x13 pan or 4 quart casserole, sprinkle some Mozzarella and Parmesan cheese on top, spread the over half on that, then finish with some Mozarella and Parmesan. Bake at 350 F for 25-30 minutes and let stand for 5 minutes before serving.
