- Heat oven to 350°F. Lightly grease 12-cup fluted tube pan with shortening or cooking spray. In large -storage plastic food bag, mix granulated sugar and cinnamon. Separate dough into 16 biscuits; cut each into quarters. Shake in bag to coat. Arrange in pan, adding walnuts and raisins among the biscuit pieces. In small bowl, mix brown sugar and butter; pour over biscuit pieces. Bake 28 to 32 minutes or until golden brown and no longer doughy in center. Cool in pan 10 minutes. Turn upside down onto serving plate; pull apart to serve. Serve warm.
CHOCOLATE AND FIG TART

- For the crust: Whisk together the all-purpose flour, almond flour, sugar, baking powder and salt in a medium bowl. Add the butter and, working quickly with the tips of your fingers, work the butter into the flour until the size of chickpeas. Make a well in the center and add the egg yolks, vanilla and 1 tablespoon of the milk (reserving the last tablespoon if needed to moisten). Work the flour into the well until it comes together. Knead one or two times in the bowl for a smooth ball. Flour your hands well and press the dough into a tart pan. Refrigerate for at least 2 hours or up to overnight.
- For the filling: Preheat the oven to 350 degrees F.
- Combine the figs, orange juice and 1 tablespoon of the granulated sugar in a small bowl. Set aside for 15 minutes.
- Melt the chocolate chips over a double boiler. Set aside. Add the ricotta, sour cream, egg yolk, remaining 1 tablespoon granulated sugar, salt, cream and orange zest to a medium bowl. Whisk together until smooth. Add the chocolate and marinated figs with their juice; stir until combined. Pour the filling into the tart shell and spread evenly. Place on a rimmed baking sheet and bake until the crust is deep golden brown and the filling is puffed and beginning to crack, about 40 minutes. Allow to cool to room temperature for 1 hour before refrigerating until fully chilled, about 2 hours.
- Slice into wedges, dust with powdered sugar and serve with a dollop of whipped cream.
CUPCAKE WEDDING DRESS
I make these for bridal showers or engagement parties, but the same techniques can be applied to any shape pull-apart cupcake cake.

- Beat the butter in the bowl of a stand mixer fitted with a paddle attachment on high speed until fluffy, 1 to 2 minutes. With the mixer on low speed, gradually add the confectioners' sugar, alternating with the milk, 1 tablespoon at a time, to adjust the consistency of the buttercream. Add the vanilla and salt and mix on medium-high speed for about 1 minute to lighten the buttercream. Add the buttercream to a pastry bag fitted with a 2D piping tip. Tie off the piping bag with a rubber band.
- Cover a 20-by-30-inch foam board with brown craft paper if desired. To arrange the cupcakes in the shape of a wedding dress, line 7 cupcakes in a row at the bottom of the board. Above that, line another row of cupcakes. Keep stacking the cupcakes to form the shape of a dress; the middle row should have 3 to 4 cupcakes for the waist and the second to last row on the top should have 6 or 7 cupcakes and can be placed to show the scoop of the neckline. For the last row, place 1 or 2 cupcakes over the cupcakes on either end to make the shoulders of the dress.
- Starting from the middle of each cupcake and working clockwise, pipe roses on each cupcake. Lay greenery on top of the "waist" of the dress and down the right side (I like silver dollar
- eucalyptus). Arrange bud roses, or your favorite small flowers, on top of the greenery. Fill in any holes with filler flowers, like baby's breath.
PEAR BREAD
As Bosc pears ripen the texture is as soft as a ripe banana, so I got the idea of making my banana bread recipe with chunks of pear. I added a bit of homemade granola, instead of the toasted coconut I usually put in the banana bread. It is essentially the same recipe, but the result is completely and wonderfully different, with a sweet spice flavor. Note: The trick to this recipe is using the pears when they are very ripe. This means they are at their sweetest and will breakdown when baking.

- Making the bread: Preheat the oven to 350 degrees F. Grease a 9- by 5-inch loaf pan with butter.
- In a large bowl, whisk together the flour, granola, baking powder, sugar, salt, and spices.
- Cream together the butter and brown sugar, until light and fluffy. Add the eggs one at a time, scraping down the bowl after each one. Alternate adding the flour and milk, in 3 additions, mixing just to incorporate after each addition. Fold in the pears and nuts, if using.
- Spread the batter evenly into the prepared pan.
- Bake for about 1 hour 15 minutes, or until a tester comes out clean.
- Remove from pan and cool to room temperature.
- Make the icing: In a small bowl combine all the ingredients until smooth.
- Spread over the top of the cooled bread.
- Enjoy. Makes a great breakfast.

- In a large saucepan, combine the cream, sugar and cornstarch. Cook and stir over medium heat until mixture reaches 160° or is thick enough to coat the back of a metal spoon. , Stir a small amount into egg yolks; return all to the pan, stirring constantly. Bring to a gentle boil; cook and stir for 2 minutes; stir in chocolate until melted. Remove from the heat; gently stir in vanilla., Cool to room temperature, about 15 minutes. Fold in whipped topping. Place 1/4 cup each in four parfait glasses. , Combine blueberries and raspberries; place 1/4 cup in each glass. Repeat layers of chocolate mixture and berries twice. Cover and refrigerate for at least 1 hour. Garnish with strawberries and whipped topping if desired.
