Steps:
- Preheat the oven to 350 degrees F (175 degrees C).
- Place the peaches into the bottom of a buttered 9 inch square baking dish. Cut each slice of bread into 4 strips, and place over the peaches. In a medium bowl, whisk together the sugar, flour, egg and margarine; pour over the bread.
- Bake for 35 to 45 minutes in the preheated oven, or until golden brown.

PEACH COBBLER BREAD
I developed this recipe to take advantage of our wonderful Georgia peaches. My husband, Andy, says it tastes just like peach cobbler.

- In a bowl, cream butter and sugar. Add the eggs, one at a time, beating well after each addition. Beat in water and extracts. Stir in peaches. Combine flour, baking soda, salt and baking powder; gradually add to the creamed mixture. Stir in pecans. , Pour into a greased 9x5-in. loaf pan. Combine topping ingredients; sprinkle over batter. Bake at 350° for 50-55 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack.

THE BEST PEACH COBBLER
In our classic southern-style peach cobbler, we layer the fruit on top of the batter before baking. In the oven, the sweet batter rises through the peaches, creating a light and airy cake-like topping. We left the peaches unpeeled, which adds a nice color and makes the recipe even easier. Serve it with vanilla ice cream for the perfect summer dessert.

- For the filling: Put the peaches, sugar, cinnamon, salt and lemon juice in a medium saucepan. Place over medium heat and cook, stirring occasionally, until the sugar is dissolved and the peach juices begin to boil. Lower to a simmer and continue to cook for 5 minutes. Remove from the heat.
- For the batter: Put the butter in a 2-quart baking dish and place it in the oven while it preheats. Preheat the oven to 350 degrees F.
- Whisk together the flour, sugar, baking powder and salt in a medium bowl. Stir the vanilla into the milk in a liquid measuring cup. Slowly pour the wet ingredients into the dry ingredients while whisking until well combined.
- Remove the baking dish from the oven and pour the batter in an even layer over the melted butter. Spoon the peaches along with their juices evenly over the top of the batter. Bake until the cobbler is golden brown on top and the peach juices are bubbling, 35 to 45 minutes.
- Let cool to room temperature before serving.
WHITE BREAD PEACH COBBLER
I got this recipe in Arkansas in the early 1990s. My mother-in-law had a cook book that her church made up and this one was in it. I looked all over Just a Pinch for this recipe because I did not want to repeat. The woman who put it in the cook book was named Martha Jo Pierce.

- 1. Preheat oven to 350°.
- 2. Assemble all your ingredients.
- 3. In an eight inch square baking dish, put a layer of sliced and cut fruit.
- 4. Cut bread slices into finger size strips and put on top of peaches. Lay them in rolls.
- 5. Add sugar, egg and flour to melted butter. Mix well.
- 6. Pour over bread topping.
- 7. Bake for about 40 minutes or until lightly browned.
- 8. Good all by itself or serve with ice cream or whipping cream.
PEACH COBBLER MADE WITH LEFTOVER BREAD
Steps:
- Use a baking dish (rectangular preferred) about 9 by 12. Place the peaches facing up side by side on the bottom of pan.
- Combine the egg, sugar, butter, and flour in a pot and cook until all is well combined (remember not to scorch it). Hint: don't overcook it.
- While that is cooking cut the bread into cubes (remember to cut the crust off) and distribute evenly over the peaches making sure to cover all the peaches even if you have to use more bread or less bread. Pour mixture over the bread making sure all cubes have been covered (it can be spread with a spatula).
- Bake in the oven at 350 degrees F until brown which should take about 30 min checking occasionally. Let stand just enough to cool to an edible preference.

- Place the fruit in a buttered 8 X 8 inch baking dish.
- Cut each slice of bread into five stripe. Place the strips onto the fruit.
- In a separate bowl, mix the sugar, flour, egg, and melted butter. Pour this mixture evenly over the bread and fruit.
- Bake at 350 degrees for 30 to 35 minutes or until golden brown.
EASY WHITE PEACH COBBLER
Steps:
- Preheat oven to 350 degrees.
- Place butter in a two quart casserole dish and place in the oven just until melted. (I do this while I am preheating.)
- With a fork stir in sugar, flour, and vanilla until well combined.
- Stirring constantly, gradually add milk. Stir with a fork or whisk to break up any lumps until well combined. You will probably not be able to get rid of every flour lump, but that is ok.
- Stir in peaches.
- Bake for 45-50 minutes or until golden brown and crust is set.
