TEX-MEX BLACK BEANS & SAFFRON RICE

Tex-Mex Black Beans & Saffron Rice image

After tasting this at a neighbor's Super Bowl party one year, I quickly scribbled down the recipe. This is a fairly simple dish to throw together and is a great accompaniment to Tex-Mex style dishes, although this isn't pretending to be any sort of authentic dish from any one particular region. I have made it many times over the years and this is a great dish for a potluck. Mahatma saffron rice comes in shiny yellow foil tubes in the rice section of your grocery store. I usually follow the microwave instructions for preparing the rice. I serve this as a side dish, but I think a Vegetarian who eats dairy would be able to enjoy this as a meal as well.

Categories     Black Beans

Time 40m

Yield 6-8 serving(s)

Number Of Ingredients 6

2 (5 ounce) packages saffron rice mix, plus ingredients to prepare rice according to package directions (such as Mahatma brand)
1 (10 1/2 ounce) can diced tomatoes with mild green chilies (such as Ro-tel mild or spicy)
1 (15 ounce) can black beans, drained and rinsed well
1/4 cup sour cream, to taste
1/4 cup shredded cheddar cheese, to taste
2 tablespoons fresh cilantro leaves, chopped (optional)

Steps:

  • Prepare the saffron rice according to the package directions, using the amount of oil/butter and water as indicated on the package (I usually use olive oil).
  • While the rice is cooking, rinse& drain the black beans in a mesh strainer to remove all the sludgey canning liquid and dump them into a small saucepan.
  • Pour the entire contents of the diced tomatoes w/chili peppers, liquid and all, into the same pan with the beans and stir to combine.
  • Cover the saucepan with lid, turn on the heat to low, and let bean mixture heat while the rice cooks, stirring occasionally- it should be ready when the rice is done.
  • When the rice is fully cooked, pour it into a deep, medium sized casserole dish.
  • Pour bean mixture into the center of the rice, leaving a border of the yellow rice peeking out arounds the sides.
  • Place the sour cream in the center of the bean mixture in a dollop as a garnish (you can use more if you like).
  • Sprinkle shredded Cheddar cheese over the top of the sour cream and over the beans.
  • Sprinkle with cilantro leaves (optional) if you like and serve immediately.
  • NOTE: If you don't have access to canned diced tomatoes with chilis, then you can substitute an equal amount of chunky salsa, if you like.
  • You may wish to provide a bowl of additional sour cream as well as a bowl of more cheese for guests to add extra to each serving, but it isn't necessary.

CREAMY WHITE BEAN AND LEEK POT PIE

Creamy White Bean and Leek Pot Pie image

Provided by Food Network

Categories     main-dish

Time 1h

Yield 8 servings

Number Of Ingredients 21

2 tablespoons unsalted butter (28 grams)
4 to 5 leeks, cleaned and cut into 2-centimeter (1-inch) rounds
Kosher salt
Freshly ground black pepper
3 garlic cloves, thinly sliced
2 teaspoons finely chopped sage
1 1/2 teaspoons finely chopped thyme
Two 540-milliliter/18.25-ounce each cans white kidney beans, drained and rinsed
1/4 cup flour
4 cups low-sodium chicken or vegetable broth (1 liter)
1 1/2 cups frozen peas
3 tablespoons sour cream
Juice of 1/2 to 1 lemon
2 cups flour (170 grams), plus more for dusting
1 tablespoon plus 2 teaspoons baking powder (25 grams)
1 teaspoon kosher salt (4 grams)
1/4 teaspoon garlic powder
1/4 cup cold unsalted butter, cut into pats (56 grams)
1 cup grated white Cheddar cheese (120 grams)
1 1/4 cups buttermilk (300 milliliters)
Melted butter, for brushing

Steps:

  • For the stew: Melt butter in a large skillet over medium. Add the leeks to the pot and season with salt and pepper. Cook, stirring frequently, for 5 to 6 minutes, or until the leeks start to soften and turn golden brown. Stir in the garlic, sage and thyme and cook for 1 minute.
  • Stir in the beans then sprinkle over the flour and mix well to combine. Slowly pour in the broth, turn the heat up to medium-high and bring to a boil. Reduce the heat to low and simmer for 20 minutes, or until thickened and the leeks are very tender. Add the frozen peas, sour cream and lemon juice to taste. Set aside to cool slightly.
  • While the stew cools, make the buttermilk biscuits: Whisk together the flour, baking powder, salt and garlic powder in a large bowl. Add in the butter and cut or snap it into the flour until the pieces of butter are about the size of a pea. Stir in the grated cheese and make a well in the center. Pour in the buttermilk and gently mix until a shaggy dough forms. Turn the dough out onto a lightly floured work surface and bring the dough together. Press it out into a 2-centimeter (1-inch) thick rectangle, then fold it over onto itself. Press and fold the dough two more times, then flatten again to 2 centimeters (1 inch) thick. Trim any wonky edges and cut the dough into 8 rough squares.
  • If serving immediately, preheat the oven to 400 degrees F/200 degrees C. Transfer all or a portion of the stew to a casserole dish and top with all or a portion of the biscuits. Brush the biscuits with the melted butter and bake for 30 to 35 minutes. Allow the pot pie to cool slightly before serving.

  • Preheat oven to 375°. Place a big pinch of saffron threads in a small bowl. Cut 1 lemon in half and squeeze juice of 1 half over saffron. Let sit 15 minutes. Meanwhile, slice remaining lemon half and remaining 1 lemon ¼" thick; remove any seeds. Set lemon slices aside.
  • Using a chef’s knife, trim dark green tops and roots from 1 medium leek; discard. Slice white and green parts into ¾" rounds; place in a colander and rinse well to remove dirt (try to keep intact). Pat dry. Trim dark green tops and roots from 2–3 spring onions; discard. Slice onions in half lengthwise. Thinly slice 1–2 green garlic stalks or trim top quarter from 1 head of garlic to expose cloves.
  • Heat ¼ cup extra-virgin olive oil in a large skillet over medium-high. Arrange leek in a single layer in skillet and cook, undisturbed, until starting to turn deep golden brown underneath, about 3 minutes. Using tongs, transfer leek to a plate, keeping rounds as intact as possible. Arrange spring onions, cut side down, in skillet (if using head of garlic instead of green garlic, add to skillet, cut side down, too). Cook, undisturbed, until dark golden brown, about 2 minutes. Transfer to plate with leek.
  • Reduce heat to medium. Add green garlic and remaining ¾ cup extra-virgin olive oil to skillet and cook, stirring often, 30 seconds. Remove from heat and add saffron and lemon juice, reserved lemon slices, 2 bay leaves, and 1½ tsp. Diamond Crystal or ¾ tsp. Morton kosher salt. Drain one 12–15.5-oz. jar white beans (such as gigante, corona, cannellini, or navy) in a colander and rinse under cold running water. Add beans to skillet and gently stir to coat in flavored oil. Nestle leek and spring onions (and head of garlic, if using), browned side up, into beans.
