- Whisk the mayonnaise, sour cream, vinegar, olive oil, garlic, oregano, sugar, 1/4 teaspoon salt and a few grinds of pepper in a medium bowl. Stir in the parsley, parmesan and pecorino. Season with more salt and pepper. (The dressing will keep, refrigerated, up to 1 week.)

- 1. Heat a little olive oil in a large, deep skillet. Cook the chicken over medium low to medium heat until mostly white, with just a hint of pink. Transfer chicken to platter and drain oil from pan.
- 2. Mix water and Italian dressing mix in a bowl or measuring cup. Return chicken to the pan and pour the salad dressing mix over it. Cover and simmer for 10 minutes.
- 3. Mix the cream cheese and cream of chicken soup together. Pour the mixture over the chicken and cover again. As it heats all the way through the dressing mix and water will rise. Stir occasionally until everything is blended and the chicken is cooked, about 15-20 minutes on medium.
- 4. About 5 minutes before serving, add the mushrooms and stir, then heat through.
- 5. Serve over rice or noodles.

- In a large saucepan over medium heat, melt the butter.
- Add the flour and cook, stirring constantly for 1-2 minutes.
- Pour in the chicken broth slowly, stirring until smooth and simmering.
- Pour in the half and half slowly, stirring until smooth and simmering.
- Add the Italian seasoning, garlic, onions, celery, and carrots, and simmer for about 5 minutes.
- Add the potatoes, chicken, salt and pepper and simmer another 5-10 minutes until the potatoes are tender.
- Pour into a greased medium size casserole dish.
- Cover the dish with the puff pastry, lightly sealing the edges, and brush the top with a mixture of the egg and teaspoon of water.

I have adapted this recipe for my family's own tastes. It is very creamy and to us, very good. We served this with salad and garlic breadsticks. This can also be served over rice if preferred.

- Preheat Oven to 375 deg.F. Spray 11x15 Baking Dish with Cooking Spray.
- In a bowl, mix soups with half and half. Arrange chicken breast halves in the baking dish. Top each breast with handful of cheese. Pour Soup Mixture over chicken. Sprinkle with mushrooms and chopped green onions.

- Preheat a large, 12″ skillet over medium high heat. Meanwhile dredge the 4 pieces of chicken in the cassava flour.
- When the pan is hot, add the tablespoon of olive oil and 2 of the chicken breasts. Cook to brown each side, 2-3 minutes per side, then remove them from the pan and set them aside. Repeat with the remaining 2 chicken breasts.
- Lower the heat to medium low, then add the ghee or additional olive oil to the pan along with the halved garlic cloves. Cook for 2-3 minutes stirring as the garlic cloves begin to turn light brown.
- Then add the garlic powder, Italian seasoning, chicken stock, and coconut milk to the pan. Bring the mixture to a boil, scraping up the browned bits from the bottom of the pan.
- Reduce the heat to maintain a light simmer, and cook until the garlic cloves are completely softened, 15-20 minutes. The sauce will reduce by about 1/2.
- When the garlic is done, add the chicken breasts back to the pan and simmer until they're done in the center, 6-8 minutes, turning once in the middle of the cooking time.
- Garnish with a sprinkling of fresh parsley and serve.

- Preheat oven to 400 degrees.
- In skillet, heat half the butter over medium heat until bubbly and hot. Salt and pepper chicken than add it to skillet and cook briefly on each side (just until no longer pink).
- Transfer chicken to plate, top each with proscuitto and then mozzerella. Starting from the narrow end, roll chicken to enclose filling. Secure with a toothpick and transfer to a shallow baking dish; set aside.

- Stir in cheese, mushed roasted garlic,and salt and pepper to taste. Cook, stirring constantly till thick and creamy.
- Pour over baked Chicken Cordon Bleu just before serving (and also everything else on your plate!).
