POACHED FILLETS IN CARAWAY SAUCE

Poached Fillets in Caraway Sauce image

Caraway seeds have too long been relegated to the tops of rye bread; their bitter, nutty flavor is distinctive and easy to like. Here they dominate a simple Romanian sauce used for fish. To crush the seeds, put them in a plastic bag and press on it with the bottom of a pot-really lean into it, rock back and forth a bit, and you'll get it. If you can lay your hands on crusty rye or pumpernickel bread, this is the place for it. Salad or any simple vegetable dish, along with rice if you don't have or want bread, would also be good.

Yield makes 4 servings

Number Of Ingredients 9

2 tablespoons corn, grapeseed, or other neutral oil
1 medium onion, diced
2 tablespoons caraway seeds, crushed
2 tablespoons snipped fresh chives, plus more for garnish
1/2 cup fish stock, preferably homemade (page 161), or water
1/4 cup fresh lemon juice
1/4 cup dry white wine or more stock or water
Salt and black pepper to taste
1 1/2 to 2 pounds fillets of sea bass, red snapper, grouper, or other firm fish, skinned

Steps:

  • Heat the oil in a large deep skillet with a lid over medium heat, then add the onion, half the caraway seeds, and the chives. Cook until the onion softens, about 5 minutes, then add the stock and the other liquids; raise the heat to high and reduce by about half; this will take just a few minutes. Season with salt and pepper.
  • Sprinkle the fillets with salt and pepper and the remaining caraway seeds. Lay the fillets in the liquid, cover, turn the heat to medium, and poach until the fillets are white and opaque throughout, about 5 minutes (the fish is done when it offers little resistance to a thin-bladed knife). Garnish with chives and serve immediately.

SHALLOW-POACHED FISH FILLETS

Shallow-Poached Fish Fillets image

This recipe can be found in "Martha Stewart's Cooking School" and is a wonderful quick and easy dinner choice.

Number Of Ingredients 11

4 ounces kumquats, halved
1 tablespoon unsalted butter
1 medium shallot, minced
1/2 cup dry white wine
1/2 cup fresh tangerine juice (from 2 to 3 tangerines)
4 medium fish fillets such as turbot, sole, or flounder (each about 4 ounces and 1/4-inch thick), or substitute 8 small fillets
Coarse salt
2 tablespoons chiffonade of mint, plus whole leaves
6 tablespoons (3/4 stick) unsalted butter, well chilled and cut into small cubes
6 kumquats, thinly sliced
Freshly ground pepper

Steps:

  • Prepare poaching liquid: Gently squeeze kumquats over a measuring cup to release juice. Melt butter in a large skillet over medium heat. When it is foamy, sweat the shallot until it is softened but not taking on any color, about 2 minutes. Add wine, tangerine juice, and kumquats (and juice) and bring to a simmer.
  • Poach fish: Fold thin ends ("tails") of fish fillets under a little so the fillets have a more uniform thickness. Season with salt, then gently slide the fillets into the simmering liquid. The fish will not be completely covered with liquid but should be in a single layer. Cover with a parchment-paper round and reduce heat so the liquid is barely moving (just under a simmer). Poach until fish is opaque throughout and flaky to the touch. (Check after 1 minute, but it may take up to 5 minutes.) Use a slotted fish spatula (or other long spatula) to transfer fish to a platter. Cover with parchment paper and set in a warm spot until ready to serve.
  • Make buerre blanc: Pour the cooking liquid through a fine sieve to strain out the solids, pressing on the fruit to extract as much liquid as possible. Return liquid to skillet and boil over moderate heat until reduced to about 3 tablespoons, 2 to 3 minutes. Turn off heat and gradually add the butter, whisking in a few cubes at a time. If butter isn't melting, return pan to moderate heat and swirl to hasten melting. Whisk until each addition is incorporated before adding more. When all of the butter has been added, stir in the sliced kumquats. You should have about 1/2 cup sauce. Season with salt and pepper.
  • Serve: Drizzle buerre blanc over fish, and garnish with mint.

POACHED COD WITH LEMON-BUTTER SAUCE

Poached Cod With Lemon-Butter Sauce image

From Pierre Franey, a very simple presentation of cod that really brings out the best in the fish. Delicious with a rich, spicy vegetable dish. If you want to concentrate the lemon flavor, grate a little lemon peel over the finished cod. You can also add chopped capers to the sauce.

Time 30m

Yield 4 serving(s)

Number Of Ingredients 13

1 1/2 lbs cod fish fillets
1 cup milk
1 1/2 cups water
1 bay leaf
4 sprigs fresh parsley
2 tablespoons fresh parsley, chopped
4 whole peppercorns
2 whole cloves
4 tablespoons unsalted butter
1/2 teaspoon garlic, minced
3 tablespoons shallots, minced
1/2 lemon, juice of
salt & freshly ground black pepper

Steps:

  • Cut cod fillets into four serving size pieces and place in large pan in one layer.
  • Add the milk and the water to the pan so that the fish is barely covered--if necessary add more water.
  • Add the bay leaf, the parsley sprigs, peppercorns and cloves.
  • Bring to a simmer and cover and cook gently for three to four minutes until fish just flakes--cooking time will depend upon the thickness of the fish--do not overcook.
  • While the fish is poaching, start the sauce by melting one tablespoon of the butter in a saucepan and briefly cooking the garlic and the shallots in the butter.
  • Remove 1/4 cup of the poaching liquid and add it to the sauce, stirring all the while.
  • Bring the sauce to a boil, add the lemon juice and swirl in the remaining butter, one tablespoon at a time.
  • Remove from the heat and add the minced parsley.
  • Taste the sauce and adjust seasoning.
  • Drain the fish and serve it hot with the lemon-butter sauce poured over it.

  • Put all the ingredients, except the fish, in a large skillet with high sides and add at least 2 inches of water. Heat the water over medium heat until it reaches 140 degrees Fahrenheit, or until it is steaming, the water is moving around but not bubbling at all. You should be able to dip your finger into the water very briefly without burning it. (Be careful if you do this, though. I don’t want you to hurt yourself!) Reduce the heat to medium-low.
  • Once the water is at 140 degrees, slide the fish into the pot. If there is not enough water to cover the fish, add a little more. The trick here is that you want the water to remain at a fairly constant 140 degrees so that the fish doesn’t overcook.
  • The fish is ready once it reaches an internal temperature of 140 degrees. Without a thermometer, you can test for doneness by seeing if the flesh flakes easily from the fish. A salmon fillet will take approximately 10 minutes to poach. The poaching time will vary depending on the thickness of the fish. Remember though, that as long as the water does not rise above 140 degrees you will not overcook your fish.
  • Carefully remove the fish from the poaching liquid using a slotted spatula and serve it immediately.
