2 pounds ripe Bosc pears (4 pears)
2 pounds firm Macoun apples (6 apples)
1 teaspoon grated orange zest
1 teaspoon grated lemon zest
2 tablespoons freshly squeezed orange juice
2 tablespoons freshly squeezed lemon juice
1/2 cup granulated sugar
1/4 cup all-purpose flour
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1 1/2 cups all-purpose flour
3/4 cup granulated sugar
3/4 cup light brown sugar, lightly packed
1/2 teaspoon kosher salt
1 cup old-fashioned oatmeal
1/2 pound (2 sticks) cold unsalted butter, diced

Steps:

  • Preheat the oven to 350 degrees F.
  • Peel, core, and cut the pears and apples into large chunks. Place the fruit in a large bowl and add the zests, juices, sugar, flour, cinnamon, and nutmeg. Pour into a 9 by 12 by 2-inch oval baking dish.
  • For the topping: Combine the flour, sugars, salt, oatmeal, and butter in the bowl of an electric mixer fitted with the paddle attachment. Mix on low speed for 1 minute, until the mixture is in large crumbles. Sprinkle evenly over the fruit, covering the fruit completely.
  • Place the baking dish on a sheet pan and bake for 50 minutes to 1 hour, until the top is brown and the fruit is bubbly. Serve warm.

1 cup brown sugar
3 eggs, beaten
1 cup oil
2 teaspoons vanilla
3 cups flour
1 teaspoon salt
1 teaspoon baking soda
2 teaspoons cinnamon
4 cups raw diced apples or 4 cups pears
1/2 cup brown sugar
1/4 cup milk
1/4 lb butter

Steps:

  • Cake:.
  • Mix all cake ingredients by hand in order given.
  • Pour in a greased 9 x 13 inch pan or springform pan.
  • Bake at 350 degrees for 45 minutes and remove.
  • Topping:.
  • In saucepan mix all ingredients and bring to a slow boil for 3 minutes.
  • Pour over cake and return to oven for 4 minutes.

1 cup white wine
1/4 cup teriyaki sauce
1 large yam, chopped into 1 to 1 1/2-inch cubes
2 zucchini, cut into 1-inch chunks
2 firm pears (too ripe and this recipe doesn't work as well) chopped into 1 to 1 1/2-inch cubes

Steps:

  • Mix the wine and teriyaki sauce in a 1 gallon resealable plastic bag. Add the yams, zucchini and pears. Refrigerate for at least 2 hours to marinate, (longer is better).
  • Fire up the grill to medium-high.
  • Put the yams, zucchini and pears on flat metal skewers. Grill for 30 to 40 minutes, basting with the marinade as they are cooking. Turn the skewers often until they are crispy on the outside and tender on the inside. After they reach this stage I put them in a warm oven to stay hot. (If you have a giant grill, turn a burner down to low and just lay the kabobs there to stay hot, but not to cook any further.) Transfer the skewers to a serving plate and serve.

6 cups watermelon, chopped into bite sized cubes
4 pears, ripe, peeled and chopped into bite sized pieces
2 cups of blueberries
1/4 cup orange juice (or lemon juice) Fresh squeezed is best.

Steps:

  • Cut watermelon into slices. Remove rind and cube each slice.
  • Peel and cube pears. Remove core.
  • Soak pears in orange juice to slow down the oxidation process.
  • Wash blueberries.
  • Set watermelon slices onto serving tray in the presenting order you wish.
  • Once all fruit is ready, grab a long toothpick (we love the fancy ones) and skewer blueberries and pears.
  • Now skewer end of toothpick into each standing watermelon. Not only does this help with presentation, but it ensures they aren't crooked.
  • Serve immediately or cover with plastic wrap and refrigerate until ready to eat.

1 large Pink Lady apple - peeled, cored and diced
1 large Bartlett pear - peeled, cored and diced
¼ cup brown sugar
1 tablespoon vanilla extract
2 teaspoons cornstarch
1 teaspoon ground cinnamon
½ teaspoon ground nutmeg
¼ teaspoon ground cloves
1 pinch salt
1 egg
1 tablespoon water
1 recipe pastry for a 9-inch double crust pie
2 tablespoons coarse granulated sugar, or as needed
½ cup dark chocolate chips

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Line a baking sheet with parchment paper.
  • Stir apple, pear, brown sugar, vanilla extract, cornstarch, cinnamon, nutmeg, cloves, and salt together in a bowl. Whisk egg and water together in a small bowl.
  • Roll pastry out on a lightly floured surface; cut into circles with a 3- to 4-inch round cookie cutter. Spoon a small amount of apple mixture onto center of each pastry circle; fold circles in half and press firmly to seal edges. Crimp with a fork, if desired. Place pies on prepared baking sheet.
  • Cut 3 small slits in top of each hand pie with a sharp knife. Brush surface of pies with egg mixture; sprinkle with decorating sugar.
  • Bake in the preheated oven until lightly golden, about 25 minutes; allow pies to cool to room temperature, about 20 minutes.
  • Melt chocolate chips in a microwave-safe glass or ceramic bowl in 15-second intervals, stirring after each melting, 1 to 2 minutes. Drizzle melted chocolate over pies.
