VEGETARIAN BEAN AND RICE BURRITO

Vegetarian Bean and Rice Burrito image

Like vegetarian burritos or bean burritos? Make a simple vegan bean and rice burrito with just a few simple Mexican-inspired ingredients.

Provided by Jolinda Hackett

Categories     Entree     Lunch     Dinner

Time 24m

Yield 4

Number Of Ingredients 12

2 cups cooked rice
2 tablespoons fresh cilantro (chopped)
2 limes (juiced)
1/2 onion (diced)
3 to 4 cloves garlic (minced)
2 tablespoons vegetable oil (or olive oil)
1 (15-ounce) can black beans (or pinto beans; drained)
1 tablespoon chili powder
1/2 teaspoon cumin
1 tablespoon hot sauce (or to taste)
Optional: pinch salt (to taste)
2 (10-inch) large tortillas

Steps:

  • Gather the ingredients.
  • In a large microwave-safe bowl, toss together cooked rice and fresh chopped cilantro, and drizzle with the lime juice. Heat in the microwave or on the stove just until hot, and give it a quick stir.
  • In a separate large skillet, sauté the onion in vegetable oil or olive oil for 5 minutes, or until the onion is soft. Add the garlic and cook another minute.
  • Reduce the heat to medium-low, add the black beans or pinto beans, and season with the chili powder, cumin, and hot sauce, stirring to combine. You can add a bit of salt if you'd like, but you shouldn't need too much with all the other seasonings. Allow the beans to cook until heated through, about 5 minutes.
  • Spoon the cilantro-lime rice and the black bean mixture onto lightly warmed flour tortillas, and add any additional toppings you want.
  • Wrap the burritos : Fold the short ends in, then fold one long side over the filling and gently push to ensure the fold is tight before rolling up the remainder of the burrito.
  • Cut in half, and serve immediately.

BLACK BEAN VEGGIE WRAPS

Black Bean Veggie Wraps image

Low-fat, healthy and very yummy! I think I found this recipe on a black bean can label, but it's all in my head now...I use half of everything one week, and the other half the next week :)

Provided by Jehnna

Categories     Black Beans

Time 30m

Yield 4 serving(s)

Number Of Ingredients 10

olive oil or nonstick cooking spray
1/2 red pepper, chopped
1/2 medium onion, chopped
1/2 large zucchini, chopped
1 garlic clove (pressed or minced)
1 teaspoon italian seasoning mix
0.5 (15 ounce) can black beans, rinsed & drained
0.5 (15 ounce) can corn, drained
shredded mozzarella cheese (I use part skim)
tortilla (small or large, I use whole wheat)

Steps:

  • Preheat oven to 375.
  • Heat fry pan on med.
  • Heat with oil or spray.
  • Add red pepper, onion, zucchini and garlic; cook about five minutes.
  • Add Italian spice and mix; cook another minute.
  • Meanwhile, mash black beans in a bowl with a potato masher (I'm sure there are other things you could use, if you don't have a masher!); add corn & cooked veggies.
  • Spoon the mixture into the tortillas, wrap up, and bake on a cookie sheet for about 10-12 minutes; the tortillas will brown slightly.
  • Serve with low fat sour cream!
  • So healthy, so yummy.
  • Word of warning--let them cool down a bit!
  • These are also easy to take to work and reheat.
  • Enjoy.

  • Place the quinoa in a bowl with enough water to cover it by about one inch. Rub the quinoa vigorously between your palms in the water. After a few seconds, the water will become cloudy from the saponin, a bitter protective coating on the seeds, being rubbed off. Empty the bowl of water, straining out the quinoa, and repeat two more times. I use a fine mesh strainer for this. When the quinoa is strained the final time, rinse it under running water.
  • Combine the rinsed quinoa, broth, paprika, chili powder, garlic powder, and onion powder in a small saucepan over medium heat. Bring to a simmer, cover, and reduce the heat to maintain a steady low simmer. Cook for 20 minutes. The quinoa is done when the seeds look like curly-q's.
  • Pile the quinoa into a large bowl and stir in the corn, black beans, tomatoes and lime juice. Add salt to taste.
  • Spread the hummus on each tortilla, thinly cover with spinach leaves, and spoon about 1/3 cup of the quinoa mix on top, in a heaped row. The quinoa mixture should be slightly off center. Fold the bottom of the tortilla up over the quinoa. Next fold the shorter side over the quinoa, and roll up tightly. Use a toothpick to hold it closed.
