SHANGHAI-STYLE BRAISED PORK

1 pork blade bone with rind, about 2kg/4½lb, from a good butcher
1 small orange
2 whole star anise
2 cinnamon sticks
1 tbsp cumin seeds
3 dried red chillies
8 bok choi or Chinese leaves and plain boiled rice, to serve
600ml /1 pint Shaoxing rice wine or dry sherry
1.2 litres/2 pints homemade chicken stock or good quality store bought
300ml /½ pint dark soy sauce
50ml light soy sauce
175g Chinese rock sugar or granulated sugar
8 slices fresh root ginger
6 garlic cloves , crushed
6 whole spring onions
1 tbsp salt
1 tsp freshly ground black peppercorn

Steps:

  • Bring a large pan of water to the boil, add the pork. Return to the boil, skim, reduce the heat and simmer gently, partially covered, for 30 minutes. Drain thoroughly.
  • Using a potato peeler, remove 8 strips of zest from the orange. Put the star anise, cinnamon sticks, cumin seeds, dried chillies and orange zest in a piece of muslin and tie together tightly.
  • Make the braising liquid by combining all the ingredients in a very large pot and bringing the liquid to a simmer. Add the bag of spices and the blanched pork, and bring back to a simmer, partially covered, skimming all the while.
  • Cover the pot tightly and continue to simmer gently for 3 hours, until the pork fat and rind are very soft and tender. You can do this up to a day ahead, let the pork cool in the liquid, chill overnight, then reheat gently in the liquid before serving.
  • Cut the bok choi in halves or quarters depending on their size, or the Chinese leaves into 5cm/2in pieces. When the pork is done, remove it from the liquid. Remove the skin and cut the meat into small pieces. Add the bok choi to the pot and cook over high heat until it is very tender about 3 minutes. Remove the bok choi from the cooking liquid and place on a warm dish. Arrange the pork on top.
  • Skim off all the fat from the braising liquid and boil it to reduce it by about half. Pour some over the meat to moisten it and serve the rest separately. (You will probably have a lot leftover.) Serve with rice.

Shanghai pork chops are fried until crispy and served with a tangy, spicy dipping sauce, and this recipe was re-created from Judy's childhood street food memories.

1 pound pork tenderloin
4 eggs (divided)
½ teaspoon white pepper
2 tablespoons light soy sauce
1 tablespoon Shaoxing wine
1½ tablespoons oyster sauce
1 teaspoon cornstarch
Vegetable oil for deep frying
½ cup all-purpose flour
1½ cups panko breadcrumbs
1½ tablespoons light soy sauce
1 tablespoon Chinese black vinegar
½ teaspoon sugar
1 teaspoon Worcestershire sauce
3 tablespoons water
Chili oil, to taste

Steps:

  • Rinse the pork tenderloin and pat it dry with a kitchen towel or paper towel. Slice the pork about 2 inches thick on a 30-degree angle. Then pound the meat to about ½-inch thick using a rolling pin or the back of your knife. Be careful not to pound it too thin.
  • Marinate the pork chops with 2 beaten eggs, ½ teaspoon white pepper powder, 2 tablespoons light soy sauce, 1 tablespoon Shaoxing wine, 1½ tablespoons oyster sauce, and 1 teaspoon cornstarch. Mix everything well, and marinate for 30 minutes. (Move it to the refrigerator if you're making this in the summer months.)
  • Now prepare the dipping sauce. Add 1½ tablespoons light soy sauce, 1 tablespoon black vinegar, ½ teaspoon sugar, 1 teaspoon Worcestershire sauce, 3 tablespoons water, and chili oil to taste. Stir and set aside.
  • Add the vegetable oil to a deep pan for frying, at a depth of about 1 inch. Preheat it using low heat. While that's happening, quickly beat 2 eggs in a large bowl. In another bowl, add ½ cup all-purpose flour, and add 1½ cups panko to another large plate.
  • Take the pork chop, lightly coat it with flour, then quickly dip it in the beaten egg. Next, dredge it in the panko to coat. Do your best to press the panko flakes into the pork chop to achieve a thick coating. Repeat until all of the pork is coated.
  • Now turn the heat to medium high, and make sure the oil comes up to 350 degrees F. Fry the pork chops in batches for about 1½ minutes on each side. They're done once the crust turns golden brown. Don't over-fry the pork chops. Most people overcook their pork. They should be juicy! In between batches, transfer the pork to a wire rack or plate lined with paper towels.
  • To serve, cut the pork chop in large strips, and enjoy it with the dipping sauce you prepared.

This is a recipe I received from my husband when we got married. It had been given to him from his seminary days when he shared a house with a married couple. This was a recipe he actually prepared himself way back before I knew him. He has since happily given up all cooking responsibilities to me! I've tweaked the sauce just a bit - it has a nice, spicy flavor.

1/2 cup flour
1 egg
1/2 teaspoon salt
4 tablespoons water
4 center-cut pork chops, 1/2 inch thick
1/4 cup soy sauce
3 tablespoons brown sugar
3 tablespoons ketchup
2 tablespoons sherry wine
1 tablespoon rice vinegar (or cider vinegar)
4 tablespoons water
2 tablespoons flour
crushed red pepper flakes, to taste (optional)
oil, for frying

Steps:

  • Mix the water, egg, flour and salt into a batter.
  • Dip chops into batter and coat completely. Remove from batter and set aside.
  • Mix all sauce ingredients.
  • Pour oil into skillet. (I used about 4 T; the original recipe says "enough to cover chops" - I just didn't want to use that much).
  • Put chops in hot oil, reduce flame and brown about 4 minutes, then turn over and brown on other side. Take chops out and drain.
  • Over low flame, heat sauce in a large skillet, stirring about 2 minutes till thickened.
  • Add chops and simmer about 5 minutes (till chops are cooked through.
  • Good served with rice or noodles.

Walter Kei of Hong Kong taught me this simple peppery Shanghainese-style stir-fry. Many traditional cooks prefer the "head and tail" of the bean sprout to be removed. This is very labor-intensive, but in Hong Kong, produce vendors sell trimmed sprouts, called "silver sprouts," for a slightly higher price.

8 ounces lean pork butt
2 teaspoons grated garlic
4 teaspoons Shao Hsing rice wine or dry sherry
1 1/2 teaspoons cornstarch
1/2 teaspoon soy sauce
1/2 teaspoon sesame oil
1/2 teaspoon sugar
1 teaspoon salt
1/2 teaspoon ground white pepper
2 tablespoons golden olive oil
1 pound mung bean sprouts

Steps:

  • Slice the pork into 1/4-inch-thick slices, then stack the slices and cut into 2-inch-long matchsticks. Put the matchsticks in a shallow bowl and add the garlic, 2 teaspoons of the rice wine, the cornstarch, soy sauce, sesame oil, sugar, 1/2 teaspoon of the salt, and 1/4 teaspoon of the pepper. Stir to combine.
  • Heat 14-inch flat-bottomed wok over high heat until a bead of water vaporizes within 1 to 2 seconds of contact. Swirl in the olive oil and add the pork, spread it around it in the wok. Cook undisturbed 20 seconds, letting the pork begin to brown. Then, using a metal spatula, stir-fry the pork until it is no longer pink, about 1 minute. Add the bean sprouts, then remaining 2 teaspoons rice wine, 1/2 teaspoon of salt, and 1/4 teaspoon pepper and stir-fry 1 to 2 minutes or until the pork and bean sprouts are just cooked through.

Red-braised pork, in which chunks of pork belly are simmered with soy sauce, rice wine and sugar, is beloved across China, and there are many regional variations. In Jiangnan, and especially Shanghai, they like theirs dark, sleek and seductively sweet. The pork is only cooked for about an hour in total, so the meat and fat retain a little spring in their step. A secondary ingredient is often added, such as bamboo shoot, deep-fried tofu, cuttlefish, salted fish or, as in this recipe, hard-boiled eggs. The dish is a perfect accompaniment to plain white rice; I do recommend that you serve it also with something light and refreshing, such as stir-fried greens. At the Dragon Well Manor restaurant in Hangzhou, they call this dish Motherly Love Pork because of an old local story. Once upon a time, they say, there was a woman whose son had traveled to Beijing to sit the imperial civil service examinations. Eagerly awaiting his return, she cooked up his favorite dish, a slow-simmered stew pork and eggs. But the road was long and the traveling uncertain, so her son didn't arrive when expected, and she took the pot off the stove and went to bed. The next day, she warmed up the stew and waited again for him, but he didn't arrive. By the time her son actually reached home on the third day, the stew had been heated up three times, and the meat was inconceivably tender and unctuous, the sauce dark and profound.

6 eggs, small if possible
3/4 oz (20g) fresh ginger, skin on
1 spring onion or scallion, white part only
1 3/4 lb (750g) pork belly, skin on
1 tbsp cooking oil
1 star anise
A small piece of cassia bark or cinnamon stick
3 tbsp Shaoxing wine
3 cups (700ml) stock or hot water
2 tbsp light soy sauce
1 1/2 tbsp plus 1 tsp dark soy sauce
3 tbsp superfine sugar or 1 1/2 oz (40g) rock sugar

Steps:

  • Hard-boil the eggs in a pan of boiling water, then cool and shell them. In each egg, make 6 - 8 shallow slashes lengthways to allow the flavors of the stew to enter. Smack the ginger and spring onion gently with the flat side of a Chinese cleaver or a rolling pin to loosen their fibers.
  • Put the pork in a pan, cover with cold water, bring to the boil over a high flame and boil for 5 minutes. Drain and rinse it under the cold tap. When cool enough to handle, cut the meat through the skin into 1 - 1 1/2-in (2-3cm) cubes (if your piece of belly is thick, you may want to cut each piece in half so they end up more cube-like).
  • Heat the oil in a seasoned wok over a high flame. Add the ginger, spring onion, star anise and cassia and stir-fry briefly until they smell wonderful. Add the pork and fry for another 1 - 2 minutes until the meat is faintly golden and some of the oil is running out of the fat. Splash the Shaoxing wine around the edges of the pan. Add the hard-boiled eggs and stock or hot water, along with the light soy sauce, 2 tablespoons dark soy sauce and the sugar. Bring to the boil, then cover and simmer for 45 minutes, stirring occasionally.
  • Pour into a pot or a bowl, allow to cool, then chill overnight. In the morning, remove the layer of pale fat that has settled on the surface. Tip the meat and jellied liquid back into a wok, reheat gently, then boil over a high flame to reduce the sauce, stirring constantly. Remove and discard the ginger, spring onion and whole spices. After 10 - 15 minutes, when the liquid has reduced by about half, stir in the remaining dark soy sauce.
  • Shortly before you wish to serve, bring to the boil over a high flame and reduce the sauce to about an inch of dark, sleek gravy. Turn out into a serving dish. Then go and welcome your son back from his imperial civil service examinations!
  • If you have any leftovers - unlikely, in my experience - you can reheat them with a little water and some dried bamboo shoot, winter melon, tofu knots, deep-fried tofu puffs or radishes. In fact, you might wish, like some of my Chinese friends, to red-braise odd scraps of fatty pork just to cook vegetables, because it makes them so delicious.
  • Shanghai red-braised pork
  • Omit the eggs and increase the amount of pork to 1kg. Use only 1 1/2 tbsp light soy sauce, 1 1/2 tbsp plus 1 tsp dark soy sauce, 2 1/2 tbsp sugar and 2 cups (500ml) hot water.

Steps:

  • Heat oil in a wok or skillet; fry chops until golden brown; cook about 5 minutes each side.
  • Drain on paper towel.
  • Place on a platter and garnish with cilantro.
