2 cups boiling water
1/2 cup milk
2 tablespoons butter or margarine
1 cup julienne (matchstick-size) strips carrots or shredded carrots
1/2 teaspoon dried dill weed
1 package (11 to 12 oz) frozen breaded fish fillets

Steps:

  • Heat oven to 425°F. In ungreased 8-inch square (2-quart) glass baking dish, mix Potatoes, Sauce Mix, boiling water, milk, butter, carrots and dill weed. Arrange fish fillets on top.
  • Bake uncovered about 35 minutes or until potatoes are tender.

This is delicious and well worth the effort! Make sure the seafood is very fresh. Best if served in individual baking dishes, but can be made in one larger dish if they are not available.

2 tablespoons olive oil
1 pound fresh shrimp, peeled and deveined
1 pound bay or sea scallops, rinsed and drained
3 tablespoons butter
2 tablespoons all-purpose flour
2 cups hot chicken broth
3 tablespoons chopped shallots
1 (4 ounce) can button mushrooms, drained
½ cup white wine
1 pound cooked crab meat
2 cups shredded provolone cheese
½ cup grated Parmesan cheese
2 tablespoons chopped fresh parsley

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Lightly butter 8 small baking dishes.
  • In a large skillet, heat olive oil over medium high heat. Saute shrimp and scallops until firm, about 5 minutes.
  • In a medium saucepan, melt butter over medium heat. Stir in flour until smooth. Gradually add chicken broth and raise heat to high. Stir until thickened. Mix in shallots, mushrooms and wine. Cook for 5 to 10 minutes.
  • Arrange shrimp, scallops and crab in the bottom of prepared dishes. Pour sauce over seafood and cover with cheese.
  • Bake in preheated oven until golden, about 12 t o15 minutes. Sprinkle with parsley and serve.

Number Of Ingredients 9

1 pound new potatoes, peeled, washed, and cut into wedges
An oven-to-table baking dish that can accommodate both the fish and the potatoes in one layer
4 tablespoons extra virgin olive oil
4 or 5 fresh rosemary sprigs
4 whole garlic cloves, peeled
Fine sea salt
Black pepper ground fresh from the mill
A 2-pound fillet from a firm-fleshed fish, such as grouper, striped bass, red snapper, or mahi mahi
2 tablespoons fine, dry, unflavored bread crumbs

Steps:

  • 1. Turn on the oven to 400°F.
  • 2. Place the potato wedges in the baking dish, pour 2 tablespoons of the olive oil over them, add 2 sprigs of rosemary, all the garlic cloves, and salt, and pepper. Toss thoroughly. Put the dish in the preheated oven.
  • 3. After 15 minutes, remove the dish to turn the potatoes over, then put it back in the oven. Cook until the potatoes feel tender when tested with a fork, another 10 minutes or so.
  • 4. Remove the dish from the oven. Push the potatoes to the sides, making room in the center for the fish fillet to lie flat.
  • 5. Wash the fish fillet, pat it dry with paper towels, and lay it flat in the dish, skin side down. Strip the leaves from the remaining rosemary sprigs, scatter them over the fish, add salt and pepper, and sprinkle the bread crumbs and the remaining 2 tablespoons olive oil over the fillet. Return the dish to the oven and bake for 14 minutes. Let the dish settle out of the oven for 3 to 4 minutes before bringing it to the table.

olive oil (for sprinkling)
1 cup shelled fresh peas, blanched for 1 minute
1 cup asparagus spear, 2 inch cuts,blanched for 2 minutes
1/2 cup roughly chopped swiss chard, blanched for 2 minutes
1/2 cup thinly sliced leek, white part only,blanched for 2 minutes
1/2 cup shelled fresh fava beans, blanched for 2 minutes and peeled
1 tablespoon chopped of fresh mint
1 tablespoon chopped fresh basil
2 cups heavy cream
1 lemon, juice of
salt & freshly ground black pepper, to taste
1/4 cup dry white breadcrumb, toasted until golden
1 teaspoon chopped garlic
1 tablespoon chopped shallot
2 tablespoons olive oil
4 (6 ounce) boneless salmon fillets (skin intact)
extra olive oil (for the fish)
chopped parsley (for garnish)

Steps:

  • Set the oven at 375 degrees.
  • Have on hand a 10-inch shallow baking dish.
  • Potatoes: Toss the potatoes with enough olive oil to coat them and spread them in a single layer on a rimmed baking sheet.
  • Bake for 35 minutes or until golden brown and crispy.
  • Drain on paper towels and keep warm; leave the oven on.
  • Vegetables: In a bowl combine the peas, asparagus, swiss chard, leeks, fava beans, mint, basil, cream, half the lemon juice, salt and pepper to taste.
  • Toss well and transfer to the baking dish.
  • Combine the bread crumbs, garlic, shallots, 2 tablespoons of oil and salt and pepper.
  • Sprinkle the crumbs onto the vegetables.
  • Transfer the dish to the hot oven.
  • Bake for 10 minutes or until the cream is bubbling at the edges.
  • Sprinkle the fish with salt and pepper.
  • Heat a large frying pan over medium-high heat.
  • Add several tablespoons oil and heat until hot.
  • Sear the salmon boned side down until golden brown.
  • Turn and cook the other side until golden and the fish is cooked through.
  • Arrange the fish on the vegetables.
  • Squeeze the remaining lemon juice over it.
  • Garnish with crispy potatoes.
  • Scatter the parsley over the rim of the dinner plates and serve at once.

1/4 cup butter
1 small red onion, chopped
1/4 cup flour
1/2 tsp. garlic powder
1/2 tsp. paprika
2-1/2 cups milk
1-3/4 cups KRAFT Shredded Four Cheese, divided
2 Tbsp. GREY POUPON Dijon Mustard
1/3 cup KRAFT Shredded Parmesan Cheese
6 slices OSCAR MAYER Bacon, cooked, crumbled

Steps:

  • Cook potatoes in boiling water 20 min. or just until tender; drain. Return to pan; cover with cold water. Let stand until cooled.
  • Melt butter in medium saucepan on medium heat. Add onions; cook and stir 2 min. Blend in flour, garlic powder and paprika; cook 1 min. Gradually stir in milk; cook 5 min. or until thickened, stirring constantly. Add 1-1/4 cups shredded cheese; cook and stir 1 min. or until melted. Stir in mustard.
  • Heat oven to 375°F. Peel potatoes; cut into 1/4-inch-thick slices. Layer alternately with cheese sauce in 2-qt. casserole sprayed with cooking spray, ending with sauce.
  • Bake 25 to 30 min. or until heated through. Top with remaining cheeses and bacon; bake 5 min. or until shredded cheese is melted.
