Celebrating one of Germany's most famous "superfoods", Sauerkraut, this wonderful soup is satisfying to both tummy and soul. The combination of tangy sauerkraut, caramelized onions, smoky paprika, savory bacon and earthy caraway is simply irresistible!

4 ounces flavorful smoked bacon or speck (, diced)
2 medium to large yellow onions (, chopped)
2 cloves garlic (, minced)
2 tablespoons tomato paste
1 tablespoon quality smoked Hungarian paprika (preferably Kalosca or Szeged) ((mild, not hot))
1/2 teaspoon dried marjoram ((very traditional herb in German cooking))
1/2 teaspoon caraway seeds (, lightly crushed)
1 teaspoon salt
1/4 teaspoon freshly ground black pepper
1 teaspoon sugar ((optional))
4 cups quality chicken broth (we recommend Aneto 100% All-Natural Chicken Broth)
or Aneto low-sodium chicken broth
18 ounces German Sauerkraut, drained ((about 3 1/2 heaping cups) Do NOT substitute with American sauerkraut **see Note below)
How to Make Sauerkraut ((it's easy! Click link for recipe tutorial))
1/3 cup crème fraîche ((can substitute full-fat sour cream))

Steps:

  • In a soup pot fry the bacon until done. Add the onions and cook until lightly caramelized, 5-7 minutes. Add the garlic and cook another minute. Stir in the tomato paste and spices and cook another minute. Add the chicken broth and sauerkraut and bring to a boil. Reduce the heat to medium and simmer, covered, for 20 minutes. Stir in the crème fraîche or sour cream and heat through (do not boil).
  • Serve hot with a dollop of crème fraîche or sour cream. Crusty bread and a leafy green salad make great accompaniments.

2 smoked ham hocks
2 yellow onions, chopped
2 garlic cloves, chopped
3 quarts water
1 lb sauerkraut, drained and rinsed
1 (15 ounce) can pinto beans, drained (or substitute thick sliced or diced potatoes if you prefer)
1/2 lb bacon, chopped
1 cup sour cream
1 tablespoon olive oil
3 tablespoons all-purpose flour

Steps:

  • Heat olive oil in a large skillet over medium heat. Sauté onion and garlic until tender; set aside.
  • Put ham hocks, onion, garlic and water into a stockpot, season with pepper to taste, cover and bring to a simmer for 1 1/2 hours.
  • Stir the sauerkraut and beans or potatoes into the soup.
  • Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Remove bacon into the stockpot, reserving drippings.
  • Stir flour into the bacon drippings to make a roux. Stir the roux into the soup.
  • Continue to simmer the soup until thick, and potatoes if you are using them are tender.
  • Remove from the heat and stir in the sour cream. Serve.

This easy, creamy German sauerkraut soup is especially delicious in the cold season and the perfect dish after a long winter walk.

1 ½ pounds lean ground beef
2 large onions
1 large jar sauerkraut (net. Weight 23.99oz. / 680g)
6-8 slices bread & butter pickles
6 oz. tomato paste
2 cups white wine or rosé
4 cups beef broth
1 tsp. whole caraway seeds or ½ tsp. ground caraway seeds
Salt & pepper to taste
1 tbsp. sugar
1 cup sour cream

Steps:

  • Brown meat and drain if necessary.
  • In the meantime, cube onions and pickles.
  • Drain and rinse sauerkraut if you use an American brand.
  • Add tomato paste to the ground meat and fry for a couple of minutes.
  • Add carraway seeds, sauerkraut, onions, pickles, and fry again for a couple of minutes.
  • Add wine and broth.
  • Season with sugar, salt, and pepper to taste.
  • Simmer covered for about 45 min.
  • Serve with a dollop of sour cream.

1 pound smoked sausage, such as kielbasa, diced
1 large onion, finely chopped
1 rib celery, finely chopped
1 tablespoon minced garlic
1 cup hard cider
1 (32-ounce) jar sauerkraut, drained and rinsed briefly
8 cups canned low-sodium chicken broth
1 cup peeled and cubed potatoes
3 sprigs fresh thyme
1/2 teaspoon freshly ground black pepper

Steps:

  • Heat a large soup pot over medium-high heat and add the sausage. Cook until the sausage is caramelized and the fat is rendered, 4 to 6 minutes. Add the onions and celery and cook, stirring occasionally, until vegetables are soft and lightly browned, about 4 minutes. Add the garlic and cook, stirring, for 1 minute. Add the cider and cook until almost completely reduced. Add the sauerkraut, broth, potatoes, thyme and pepper and bring to a boil. Reduce the heat to a low simmer and cook, stirring occasionally, until potatoes and sauerkraut are very tender and the broth is flavorful, 45 minutes to 1 hour. Taste and adjust the seasoning, if necessary. Serve immediately, with hot, crusty bread on the side.

3 quarts water
2 cups diced peeled potatoes
2 carrots, chopped
1 teaspoon salt
1/2 teaspoon pepper
4 cups sauerkraut, rinsed and drained
1 pound smoked sausage, cut into 1-inch slices
5 bacon strips, diced
1 large onion, chopped

Steps:

  • In a Dutch oven, cook ribs in water until tender, about 1-1/2 hours. Skim off foam. Remove ribs from broth; strain broth and skim fat. , Return broth to the heat. Add the potatoes, carrots, salt and pepper; simmer until vegetables are tender. Remove meat from bones and add to broth with the sauerkraut and sausage. , Meanwhile, cook bacon until crisp; remove to paper towels to drain. Discard all but 1 tablespoon of the drippings. Cook onion in drippings until tender. Add to soup; cook 20-30 minutes longer. Ladle into bowls. Garnish with bacon.

10 ounces sauerkraut
9 ounces bacon, chopped
1 onion, chopped
1 large garlic clove, crushed
4 1/4 cups cold water
1/2 teaspoon paprika
2 teaspoons chopped fresh dill
5 ounces smoked sausage, sliced (your choice of sausage)
5 ounces sour cream
sea salt & freshly ground black pepper

Steps:

  • Rinse the sauerkraut in cold water and leave to drain.
  • Place sauerkraut, onion, garlic and cold water in a large saucepan with seasoning.
  • Bring to the boil, then simmer for 15 minutes.
  • Meanwhile, fry the chopped bacon in a deep frying pan until the fat starts to run.
  • Stir in the paprika and mix into the sauerkraut mixture.
  • Return to a gentle simmer for another 15 minutes then add the dill and sausage of your choice.
  • Stir in the cream, check the seasoning and reheat until just on the point of boiling.
  • Serve with rye bread.
