This easy Chipotle Chicken Marinade combines some of my favorite Mexican flavors, chipotles in adobo sauce and fresh lime! Add some staple spices and you have a delightful flavor combined and ready to really take a simple piece of chicken to fiesta-worthy heights!

2 Tbsp adobo sauce ((with chopped chipotle peppers))
2 Tbsp olive oil ((extra virgin))
1 Tbsp lime juice
1/2 tsp cumin
1/2 tsp onion powder
1/2 tsp garlic powder
1/4 tsp each, salt & pepper

Steps:

  • Combine adobo sauce, olive oil, lime juice, cumin, onion powder, garlic powder, salt, and pepper in a small mixing bowl. Stir together.
  • Pour marinade in a Ziplock bag.
  • Add the chicken and press out any air in the bag and seal.
  • Massage the marinade into the chicken through the bag.
  • Refrigerate for at least 4 hours before use. A 24-hour marinade will yield the best results for marinade flavor.

Achiote Citrus Marinade, recipe follows
1 (3-pound) roasting chicken, rinsed and patted dry
1 onion, peeled
1 head garlic
1 orange

Steps:

  • Rub the marinade all over the chicken, inside and out. Place in a bowl, cover and refrigerate at least 1 hour or as long as overnight.
  • Preheat oven to 400 degrees.
  • Lift the chicken from the marinade and place on a work surface. Cut the onion, head of garlic and orange in half and stuff inside the chicken's cavity. Tie the legs together and place on a rack in a roasting pan, breast side down.
  • Roast 20 minutes, then reduce the heat to 350 degrees and roast 20 minutes longer. Turn the chicken, breast side up, and bake 40 to 50 minutes longer, basting occasionally with the pan juices, until a drumstick feels loose when jiggled and the skin is golden brown. Remove from the oven and let sit 10 minutes before serving. Serve warm with rice and beans.

1/4 cup olive oil
Salt and freshly ground pepper
16 6-inch flour tortillas
3 large, ripe Haas avocado, peeled and coarsely chopped
1/4 cup finely chopped onion
3 tomatillos, husked, washed and coarsely chopped
1 jalapeno, finely chopped
3 tablespoons fresh lime juice
3 tablespoons finely chopped cilantro
Salt and freshly ground pepper
1 cup fresh orange juice
1 cup fresh lime juice
1/2 cup fresh lemon juice
1/4 cup ancho chile powder
2 tablespoons paprika
4 cloves garlic, coarsely chopped
1 cup olive oil
8 chicken breasts, bone in, skin on
Salt and freshly ground pepper

Steps:

  • For the grilled tortillas: Brush each tortilla on both sides with olive oil and season with salt and pepper to taste. Grill for 1 minute on each side. Yield: 8 servings For the Avocado and Grilled Tomatillo salsa: Combine all ingredients in a medium bowl and season with salt and pepper. Yield: 2 cups
  • For the marinade and the chicken breasts: Whisk together all ingredients except olive oil in a large bowl until combined. Slowly whisk in the olive oil until emulsified. Reserve 1 cup of the marinade and set aside. Transfer remaining marinade to a large shallow baking dish, add chicken breast and turn to coat completely. Cover and refrigerate for 1 hour in the refrigerator, turning once.
  • Preheat grill. Remove chicken from marinade and season on both sides with salt and pepper to taste. Grill the breasts, skin-side down, for 4 minutes or until golden brown. Turn the breasts over and baste with some of the reserved marinade and cook for 4 minutes. Baste, turn and baste again, cover the grill and cook the breasts for 4 more minutes. Repeat the process once more for a total grilling time of 16 minutes, or until the chicken is well-browned and cook through. Remove the chicken to a platter, cover and let sit 10 minutes. Serve with Grilled Tortillas and Avocado-Tomatillo Salsa on the side.

½ cup water
½ red onion, cut into small chunks
4 cloves garlic
2 teaspoons sea salt

2 ½ pounds skinless, boneless chicken thighs

Steps:

  • Place chipotle chile pepper and ancho chile pepper in a bowl; pour in water. Cover bowl and let sit until peppers are softened, at least 10 to 12 hours. Drain water and remove seeds from peppers.
  • Blend chile peppers, red onion, garlic, sea salt, cumin, oregano, and black pepper in a blender until a coarse paste forms; add olive oil and blend until marinade is smooth.
  • Pound chicken thighs flat with a meat mallet and trim excess skin. Place chicken in a resealable plastic bag and add marinade. Turn chicken several times to coat. Seal bag and marinate at least 8 hours.
  • Preheat an outdoor grill with top and bottom plates for medium-high heat. Remove chicken from bag and discard marinade.
  • Cook chicken on the preheated grill until no longer pink in the center and the juices run clear, 5 to 10 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C). Cut into strips.

3 chipotle peppers in adobo sauce
2 garlic cloves
¼ teaspoon cayenne pepper
¼ teaspoon paprika
⅛ teaspoon ground black pepper

2 tablespoons lime juice
2 tablespoons Worcestershire sauce
2 tablespoons honey
¼ cup balsamic vinegar
¼ cup olive oil
kosher salt to taste
4 skinless chicken drumsticks

Steps:

  • Place the chipotle peppers, garlic, cayenne pepper, paprika, black pepper, cumin, lime juice, Worcestershire sauce, honey, vinegar, and olive oil into a blender. Puree until no pieces of garlic remain. Pour 1/4 of the marinade into a small dish and set aside. Rub a pinch of kosher salt into each chicken drumstick and place into a resealable plastic bag. Pour in the marinade, shake, and seal. Marinade at least 2 hours in the refrigerator.
  • Preheat an outdoor grill for medium-high heat and lightly oil the grate. Remove the chicken from the marinade and shake off excess. Discard the remaining marinade.
  • Cook the chicken legs on the preheated grill until no longer pink at the bone and the juices run clear, about 8 minutes per side. This is a favorite of mine. I absolutely love this. The best part is you can adjust the spice .. just a little more or a little less chipoltes. Besides, use this with seafood, chicken or pork, it works well with anything. I love my simple avocado dipping sauce on the side which just tops this off. Take my dip and shrimp and add to a tortilla or taco shell with some slaw, tomatoes and you have a whole different dinner. Or top over a bed of romaine with olives, tomatoes, onions and thin out my dip with some milk to make a creamy dressing.

  • Marinade -- add everything in a large baggie and mix well by shaking. Add your chicken, shrimp, pork, fish, whatever you want. Remember, seafood takes less time. Scallops maybe 30 minutes, shrimp 1-2 hours, fish depending on the thickness 1-3 hours, chicken 4-8 hours, bone in, even over night, pork chops thin 4 hours, thick cut 6, tenderloin 8-12.
  • Grilling -- Just prepare your dish for grilling. Outside grill or inside grill pan or even oven. Cook as you would normally do according to your recipe.
  • Dipping Sauce -- Just puree everything in a small food processor until well blended. Chill and serve with your grilled dish.
  • This is also a great dip for quesadillas, tacos, etc or use as a salad dressing.

This makes a thick, delicious paste that coats the chicken with tons of flavor. I like to make more than one batch at a time, apportioned into quart-sized ziplocs containing enough marinade for two chicken breasts. I freeze my chicken in the same bag with the marinade; the night before I intend to grill, I put the whole bag in the fridge and let it defrost / marinade overnight and all through the next day. I like to serve some fresh, homemade pico de gallo on top. Note: When I open a new can of chipotles, I always freeze them individually with the adobo sauce split evenly among each "batch." Therefore, I'm not positive about the amount of adobo sauce I add, but the 1 tablespoon listed below is a decent approximation!

3 2 3/4- to 3-pound chickens, halved, backbone removed

Steps:

  • Whisk oil, orange and lime juices, ground and canned chilies and garlic in 15x10x2-inch baking dish to blend. Mix in onion. Add chicken halves and turn to coat. Cover and refrigerate at least 4 hours or overnight, turning occasionally.
  • Prepare barbecue (medium heat). Remove chicken halves from marinade. Sprinkle with salt and pepper. Grill until chicken is cooked through, turning occasionally, about 40 minutes.
