PURéED WHITE BEAN SOUP WITH PISTOU

Puréed White Bean Soup With Pistou image

White beans and pesto or pistou (pesto without the pine nuts) always make a nice marriage. Thin the pistou with a little extra olive oil so that you can drizzle it over the rich-tasting purée.

Provided by Martha Rose Shulman

Categories     one pot, soups and stews, appetizer, main course

Time 2h15m

Yield 6 servings.

Number Of Ingredients 10

1 large onion, chopped
4 garlic cloves, minced
1 pound white beans, soaked for six hours (or overnight) and drained
1 bay leaf
1 sprig of fresh sage
2 1/2 to 3 quarts water, as needed (or 2 1/2 quarts water and up to 2 cups milk as needed)
Salt to taste
Freshly ground pepper
About 1/3 cup pistou
Garlic croutons for garnish (optional)

Steps:

  • Combine the onion, garlic, drained beans, bay leaf, sage and 2 1/2 quarts water in a large, heavy soup pot or Dutch oven and bring to a boil. Add salt to taste, reduce the heat to low, cover and simmer 2 hours, until the beans are very tender and the broth is fragrant. Remove the bay leaf and sage sprig.
  • Using an immersion blender, purée the soup (or you can use a regular blender, working in batches and placing a kitchen towel over the top to avoid splashing) until it is very smooth. Return to the pot, heat through, add freshly ground pepper and adjust salt. Thin out as desired with water or milk.
  • Ladle the soup into bowls. Stir the pistou, and if it is very stiff, thin out with a little olive oil so that you can drizzle it into each bowl and it won't just fall in as a clump. Put about 2 teaspoons on each bowl, add a few garlic croutons if desired, and serve. Diners should stir the pistou into the soup for the best flavor.

PESTO BEAN SOUP

Pesto Bean Soup image

This is one of my favorite vegetarian recipes, especially on those cold winter evenings. I make large batches and freeze it. Homemade pesto is tasty, but you can use store-bought to make the recipe really simple. Serve the soup with garlic toast and a green salad. -Liz Bellville, Jacksonville, North Carolina

SIMPLE WHITE BEAN AND PESTO SOUP

Simple White Bean and Pesto Soup image

With a loaf of crusty bread on hand, this recipe will have dinner on the table in five minutes. When you have so few ingredients, the quality must be impeccable. If you have homemade chicken stock, now is the time to use it. You could use a heaping tablespoon of pre-made pesto, but the pine nuts and Parmesan can be distracting from the subtle flavors of the beans. This simplified pesto couldn't be easier. Adapted from Barbara Kafka's _Soup: A Way of Life_ by Nick Kindlesperger at Serious Eats. http://bit.ly/dtLnzy

WHITE BEAN SOUP WITH HAZELNUT PESTO

White Bean Soup With Hazelnut Pesto image

Make and share this White Bean Soup With Hazelnut Pesto recipe from Food.com.

Provided by hectorthebat

Categories     Beans

Time 14h15m

Yield 6 serving(s)

Number Of Ingredients 20

450 g cannellini beans
2 carrots
2 onions
8 garlic cloves
3 sticks celery
3 tablespoons oil
4 sprigs rosemary
3 bay leaves
1 pinch bicarbonate of soda
1 1/2 liters chicken stock
6 tablespoons oil
1 tablespoon vinegar
150 g hazelnuts
50 g walnuts
150 ml oil
3 garlic cloves
3 sprigs rosemary
50 g parsley
1 teaspoon chili flakes
vinegar

Steps:

  • Soak the beans overnight. The next day, sweat the veg in the light olive oil over a low heat. Add the chopped rosemary and bay leaves.
  • Drain the beans and add to the pot with the bicarbonate of soda. Pour in the stock and top up with water - the liquid should rise four inches over the beans.
  • Bring to the boil, skim the surface, then simmer for around two hours until the beans have wilfully collapsed.
  • Make the pesto. Roughly blitz the hazelnuts and walnuts. Pour half of the olive oil in a pan on a low heat. Add the nuts and garlic.
  • Slow fry for 15 minutes, stirring regularly. Once the nuts have coloured, add the chopped herbs and chilli.
  • Infuse for 10 minutes, then cool.
  • Pulse in a food processor to a coarse paste. Scoop into a bowl and stir in the rest of the olive oil, vinegar, salt and pepper to taste. Once the beans are soft and mush, stir in the extra virgin olive oil and a splash of the vinegar. If you like, you can encourage the beans to break down further with a potato masher. Season extensively.
  • You can either serve the pesto as a blob on top of the soup, or stir it inches.

CHICKEN, WHITE BEAN AND PESTO SOUP

CHICKEN, WHITE BEAN AND PESTO SOUP image

Categories     Soup/Stew     Chicken     Kid-Friendly     Quick & Easy     Dinner     Healthy     Simmer

Yield 6-8

Number Of Ingredients 18

2 cups uncooked chicken breast
4 c vegetable broth
1 small can, white beans, either navy or cannelini
1 large yellow onion, coarsely chopped
4 carrots, coarsely chopped
4 celery sticks, coarsely chopped
2 c kale, chopped
1 small can stewed tomatoes (preferable fire-roasted with green chili)
1 tbls dried basil
¼ c grated pecorina romano or your favorite hard cheese
about 2 cups of water
Pesto
About a dozen fresh basil leaves, stems removed, rinsed and dried
1/3 c hulled pistachios
About ¼ c extra virgin olive oil
2 fresh garlic cloves, peeled and blanched.
The juice of one fresh lemon
*note - if you don't have a food processor, you can use a blender or a mortar and pestle.

Steps:

  • •Heat a couple tbls of olive oil on medium heat in large skillet. •Add chicken breast, cook for about five minutes until slightly browned. It's not necessary that the chicken is fully cooked at this point. Remove chicken from pan and set aside. •To the heated pan, and in the same oil - add the onions, carrots and celery, and a little salt to taste. Cook for about 15-20 minutes until all the veggies become a little tender. •Add the tomatoes, chicken broth, beans and kale - and you can now return the chicken to pan with everything else, and salt and pepper to taste. •Bring all to a slight bowl and then turn the heat down to medium low. •While the soup is simmering, it's time to start adding a little water. It's important to keep your eye on the amount of liquid vs. the veggies and the chicken as the soup cooks. If you like it less soupy, add less water. If you like a little more broth, you'll want to add more water. I added about 2 c of water. •Cover loosely with a lid and let simmer for about another 20 minutes. Pesto •While the soup is simmering, it's time to prepare the simple pesto. •In a small food processor, add the basil, a couple tbls of the olive oil, and the pistachios. •Process quickly so that everything just blends together to make a chunky and sort of thick paste. •Put in a little bowl and have the lemon ready to squeeze into it when you're ready to serve the soup. •Once the soup has simmered and is ready, use a slotted spoon to scoop out enough veggies, beans and chicken for one serving. Place in a single serving bowl. •Now ladle out some of the broth and pour over the contents in the bowl. Put just enough broth so that the veggies and meat are above the broth. •Now you're going to put a spoonful of the pesto on the top and give a quick stir. Remember to add the lemon before you do that. The lemon makes all the difference! •If desired, top with freshly ground black pepper.
