5 medium tomatoes (ripe, peeled, seeded & cut into wedges)
2 medium cucumbers (unpeeled & thin-sliced)
6 eggs (hard-boiled & sliced)
2 small green peppers (halved, seeded, deribbed & very thinly sliced)
1/2 lb gruyere (cut in sml julienne strips) or 1/2 lb emmenthaler cheese (cut in sml julienne strips)
1/2 cup black olives (pitted & sliced)
2 small onions (thinly sliced & separated into rings)
10 anchovy fillets (oil-packed, rinsed, patted dry & crushed)
3/4 cup olive oil
1/4 cup red wine vinegar
1 1/2 tablespoons lemon juice
1 tablespoon Dijon mustard
1/2 tablespoon oregano (finely minced)
1 small garlic clove (very finely minced)
salt
white pepper

Steps:

  • For Dressing: Combine all ingredients & refrigerate for at least 4 hours.
  • For Salad: Prepare & combine all salad ingredients except the egg slices.
  • Present the salad, drizzle w/dressing to your taste pref, mix to distribute dressing & top w/egg slices to serve.

2 cups tightly packed baby spinach leaves
2 cups shredded purple cabbage
1 cup shredded carrots
1 can (16 oz.) chickpeas (garbanzo beans), rinsed
1/2 cup KRAFT Zesty Lime Vinaigrette Dressing
1/2 cup pecan halves, toasted

Steps:

  • Stack chard leaves; fold lengthwise in half. Cut leaves, then stems crosswise into thin slices. Place in large bowl.
  • Add all remaining ingredients except dressing and nuts; mix lightly.
  • Toss with dressing just before serving; top with nuts.

12 bacon strips, diced
1 bunch red leaf lettuce, torn (about 10 cups)
1 small red onion, julienned
1 block (8 ounces) Swiss cheese, cubed
1/4 cup sliced ripe olives
1/3 cup mayonnaise
1/3 cup sour cream

Steps:

  • In a skillet over medium heat, cook bacon until crisp. Remove to paper towels to drain. In a large bowl, combine lettuce, onion, cheese, olives and bacon. In a small bowl, combine mayonnaise and sour cream. Serve with the salad.

I entered this recipe that I created myself in a local cooking contest in 1980 - it took first prize! The salad complements any main dish and is also good for picnics or potlucks...just take the lettuce along in a plastic bag or container and toss with the cheese and vegetable mixture when you arrive.

1 cup sliced green onions
1 cup sliced celery
1 cup diced green pepper
1 cup sliced pimiento-stuffed olives
1/3 cup vegetable oil
2 tablespoons red wine vinegar
1 tablespoon Dijon mustard
Salt and pepper to taste
6 cups shredded lettuce
2 cups shredded Swiss cheese

Steps:

  • In a small bowl, combine onions, celery, green pepper and olives. In another bowl, whisk together oil, vinegar, mustard, salt and pepper. Pour over vegetables and refrigerate several hours or overnight., Just before serving, place lettuce in a large salad bowl; add the cheese and dressing with vegetables. Toss lightly.
