3 cups sugar (I use 2 cups sugar when subbing applesauce for most of the oil as mentioned below.)
1 cup vegetable oil (I use 1/4 cup oil and 3/4 cup unsweetened applesauce)
4 eggs, lightly beaten
1 (16 ounce) can solid-pack pumpkin
3 1/2 cups all-purpose flour
2 teaspoons baking soda
1 teaspoon baking powder
1 teaspoon salt
1 teaspoon cinnamon, ground
1 teaspoon nutmeg, ground
1/2 teaspoon clove, ground
1/2 teaspoon allspice, ground
1/2 cup water

Steps:

  • In a large bowl, combine sugar, oil and eggs.
  • Add pumpkin and mix well.
  • Combine dry ingredients; add to the pumpkin mixture alternately with water.
  • Pour into two greased 9-in. x 5-in. x 3-in. loaf pans.
  • Bake at 350 F for 60-70 minutes or until bread tests done. Cool in pans 10 minutes before removing to a wire rack; cool completely.

Pie:
1 (15-ounce) can pure pumpkin
3/4 cup pure maple syrup
3/4 cup whipping cream
3 large eggs
2 tablespoons (1/4 stick) unsalted butter, melted
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/4 teaspoon ground cloves
1/4 teaspoon salt
1 Flaky Pie Crust
Whipped cream:
1 cup chilled whipping cream
3 tablespoons powdered sugar
1 teaspoon ground cinnamon
1 teaspoon vanilla extract

Steps:

  • For pie:
  • Position rack in bottom third of oven and preheat oven to 350°F. Whisk pumpkin, maple syrup, whipping cream, eggs, butter, cinnamon, nutmeg, cloves and salt in large bowl to blend well.
  • Pour pumpkin mixture into prepared pie crust. Bake until filling is just set in center and crust is golden, about 1 hour. Transfer pie to rack and cool completely. Cover pie and refrigerate until cold. (Can be prepared 1 day ahead. Keep refrigerated.)
  • For whipped cream:
  • Using electric mixer, beat 1 cup chilled whipping cream, 3 tablespoons powdered sugar, 1 teaspoon ground cinnamon and 1 teaspoon vanilla extract in large bowl until soft peaks form.
  • Serve pie cold or at room temperature with whipped cream.

Its less expensive than purchasing the little tins of name-brand spice mix, and you can stir up as little as or as much as you like at one time.
