This is a great spicy marinade recipe, a traditional African dish, great for BBQ. Nice with salad and fries, but I like adding it to a pita with salad and garlic Greek yogurt (3/4 cup Greek yogurt and 3 cloves of crushed garlic with finely chopped chives). Don't go on a date though, gives you wicked garlic breath!

¼ cup paprika
2 tablespoons hot chili powder
1 cup fresh lemon juice
3 cloves garlic, minced
1 ½ teaspoons chopped fresh ginger
1 ½ teaspoons salt
4 bone-in chicken breast halves

Steps:

  • In a large bowl, stir together the paprika, chili powder, lemon juice, garlic, ginger and salt. Rub chicken with the mixture, place in a dish, and marinate for 3 hours.
  • Preheat a grill for medium heat.
  • Place chicken onto the grill and discard the marinade. Cook for about 30 minutes, turning occasionally, until the skin is slightly charred and juices run clear.

1 (2 -3 lb) broiler-fryer chickens, quartered
2 large onions, sliced
3 garlic cloves, minced
1 hot green chili pepper, minced
1 tablespoon salt
1/2 teaspoon ground ginger
1 teaspoon black pepper
1 cup fresh lemon juice
1 1/4 cups water or 1 1/4 cups chicken broth
5 tablespoons peanut oil

Steps:

  • In a large baking dish, combine the onion, garlic, chile, salt, ginger, and black pepper. Stir in the lemon juice, 1 c water, and 1 tbsp oil. Coat the chicken pieces in marinade and refrigerate at least 4 hours. Turn pieces every half hour or so.
  • Remove chicken from marinade, and reserve the marinade. Pat the pieces dry. In a skillet, heat the remaining 4 tbsp oil over medium-high heat. Brown the chicken, a few pieces a t a time, turning frequently to brown evenly. Pour off all but 2 tbsp oil from the skillet and remove it from heat.
  • Using the back of a spoon, press the marinade through a fine sieve set over a bowl. Reheat the oil in the skillet over medium heat. Add the solids fron the sieve and stir constantly until the onion is transparent.
  • Return chicken to skillet and add 1/2 c strained marinade and the remaining 1/4 c water. Bring mixture to a boil. Partly cover pand and reduce heat. Simmer 25 minutes, or until chicken is tender.

Juice of 3 lemons
3 large onions, sliced
Salt and freshly ground pepper to taste
1 (or more) hot red Guinea pepper-type chile, cut into small pieces
5 tablespoons peanut oil
One 2 1/2- to 3 1/2-pound chicken, cut into pieces
1/2 cup water

Steps:

  • Prepare a marinade of the lemon juice, onions, salt, pepper, chile, and 4 tablespoons of the peanut oil. Place the chicken pieces in the marinade, be sure they are well coated, and marinate them for at least 2 hours. Preheat the broiler to the highest setting. Remove the chicken pieces and reserve the marinade. Place the chicken pieces on the broiler rack and grill them briefly until they are lightly browned on both sides. Remove the onions from the marinade and sauté them in the remaining oil. Cook them slowly until tender, then add the reserved marinade. When the liquid is thoroughly heated, add the chicken pieces. Add the water and simmer the Yassa over low heat for about 20 minutes or until the chicken is cooked. Serve hot, over white rice. Yassa can also be made with fish substituted for the chicken. In the Casamance region of Senegal, where the dish originated, Monkey Yassa, is considered a delicacy, but you're on your own there.

SESAME-LEMON MARINATED CHICKEN

1 lb chicken thigh, boneless and skinless
1/2 cup fresh lemon juice
2 teaspoons lemon zest
1 tablespoon water
1 1/4 tablespoons dark sesame oil
1 teaspoon rice vinegar
1 teaspoon hot sauce
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
vegetable oil cooking spray
2 tablespoons sesame seeds, toasted
lemon rind, curls garnish

Steps:

  • Wash chicken and pat dry with paper towels. Set aside.
  • In a gallon-size zip-lock plastic bag, combine the lemon juice with the next seven (7) ingredients. Add the chicken; turn the sealed bag to coat and marinate in the refrigerator for eight (8) hours (best overnight); turn occasionally.
  • Remove chicken from the marinade; reserving marinade.
  • Pour the reserved marinade into a small saucepot; bring to a boil. Reduce the cooking flame; simmer for two (2) minutes. Set aside.
  • Coat the grill rack with cooking spray; place chicken on preheated grill over medium heat. Sprinkle toasted sesame seeds over chicken.
  • Grill chicken until it is fork tender and juices run clear, turning occasionally and brushing frequently with marinade.

This is a flavorful and light marinade that makes chicken breasts taste awesome! It can also be used on seafood; I marinate chicken for about half a day, seafood for a couple of hours. This recipe makes enough marinade for about 4 pounds of chicken or fish.

1 tablespoon oil
4 chicken thigh fillets, cubed
250 g boneless chicken breasts, cubed
1 onion, chopped
2 teaspoons curry powder
425 g tomatoes
2 tablespoons peanut butter
1/2 green pepper, sliced
2 teaspoons chicken stock powder

Steps:

  • Heat oil in a heavy pan and fry chicken and onion until golden.
  • Add curry powder and cook for 1 minute, stirring continuously.
  • Add remaining ingredients, bring to the boil, then cover and simmer for 20 minutes, stirring occasionally.

Another good recipe from local news chef, Chef Walter. A nice change from the usual lemon pepper marinade on store shelves. This recipe is enough for 2 pounds of boneless skinless chicken breasts. Prep time is marinade time. Note: feel free to cut back or eliminate the salt in this marinade. Low-sodium soy sauce also works well for this. (Thanks for the tip, Nif!)

1/4 cup soy sauce
1 garlic clove, minced
1/2 teaspoon salt

  • Mix everything together well. Pour into a shallow dish or large zip top bag.
  • Add chicken. If using a dish, cover. Zip the bag if using a bag. Stash in the refrigerator for at least 2 - 3 hours, turning occasionally.
  • Drain off the marinade and grill, or bake at 325 F for about an hour in a greased baking dish.

  • Put the chicken and onions into a large glass bowl. Cut a few slits in the habanero pepper and add it to the bowl. Whisk marinade ingredients in a small bowl and pour on top. Toss to coat. Cover bowl with plastic wrap and marinate in the fridge for at least 3 hours or, preferably, overnight.
  • Preheat the oven to 350ºF. Heat 1 tablespoon oil over medium-high heat in a large heavy pot or Dutch oven. Remove the chicken from the marinade and sprinkle pieces with a few pinches of salt and a few grinds of pepper, to taste. Brown chicken on both sides in batches, three pieces at a time, about 5 minutes per batch. Transfer to a plate and set aside. Spoon out some of the chicken fat from the pot, leaving about one tablespoon.
  • Set the hot pepper aside and scrape the onions and all the marinade into the pot over medium-high heat. Cook, stirring, for about 5 minutes to get the onions hot and cooking. Cover the pot and turn the heat to medium-low. Let the onions cook, stirring occasionally, for about 10 minutes more, until they are soft and starting to caramelize. Regulate the heat so they don’t burn.
  • Use a spatula or wooden spoon to move onions aside, as you lay chicken pieces into the bottom of the pot, and then mound the onions on top of the chicken pieces. Place the hot pepper in the middle of the pot. Pour in chicken broth. Turn the heat to medium high and bring the broth to a simmer. Cover the pot and put it in the oven and cook for 1 hour and 20 minutes.
