WATERMELON GINGER LIMEADE

- Remove rind and any loose seeds from watermelon. Place the flesh in a juice extractor, and process, extracting 3 cups watermelon juice.
- Transfer juice to a large pitcher. Add the remaining ingredients, and stir to combine. Fill pitcher with ice. Garnish with watermelon and lime wedges. Serve.

- Place 2 1/2 cups watermelon and 3/4 cup cold water in blender. Puree until smooth. Pour agua fresca into large pitcher. Repeat 3 more times with remaining watermelon and cold water. Add lime juice, 1/4 cup sugar, and ginger juice to pitcher and stir to blend. Add more sugar by tablespoonfuls, if desired. Refrigerate until well chilled, at least 3 hours. DO AHEAD Can be made 8 hours ahead. Keep chilled. Stir before serving.
- Fill glasses with ice cubes; pour agua fresca over. Garnish each glass with lime wedge and serve.

- Strain the liquid through a fine mesh strainer to remove any seeds.
- Place 1/2 cup of the watermelon water into a saucepan and add the sugar, lime zest and ginger coins. Bring the mixture to a simmer to dissolve the sugar and infuse the liquid with the ginger and lime flavor. Set aside to cool.
- Add the grated ginger to the remaining watermelon water. Once the syrup is cool, remove the ginger coins and mix into the watermelon water. Pour the mixture into a 9 by 13-inch glass baking dish. Place the dish into the freezer to chill.
