4 cups sliced peeled fresh pears
1/4 cup finely chopped crystallized ginger
1/4 cup lemon juice
4 eggs
3/4 cup confectioners' sugar
1/2 cup butter, melted
1/2 teaspoon almond extract
1-1/4 cups all-purpose flour
1 teaspoon baking powder
1/4 cup sliced almonds

Steps:

  • In a large bowl, combine the pears, ginger and lemon juice; set aside., In another bowl, beat the eggs, confectioners' sugar, butter and extract until blended. Combine flour and baking powder; gradually beat into egg mixture until blended. Stir in pear mixture., Transfer to a greased 9-in. springform pan; sprinkle with almonds. Bake at 350° for 35-40 minutes or until a toothpick inserted in the center comes out clean. Cool on a wire rack for 10 minutes before cutting. Serve warm.

2-1/4 cups all-purpose flour
5 tablespoons sugar, divided
3/4 teaspoon salt
3/4 cup cold butter, cubed
3 egg yolks
4-1/2 teaspoons lemon juice
FILLING:
1/2 cup sugar
4 tablespoons cornstarch, divided
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
3/4 cup water
2 tablespoons plus 1-1/2 teaspoons lemon juice
2 tablespoons butter
1 teaspoon vanilla extract
5 cups chopped peeled ripe pears

Steps:

  • In a large bowl, combine the flour, 3 tablespoons sugar and salt; cut in butter until crumbly. In a small bowl, whisk egg yolks and lemon juice; stir into dry ingredients with a fork. Remove 1 cup to another bowl; stir in the remaining sugar and set aside for the topping. , Press remaining crumb mixture onto the bottom and up the sides of a greased 8-in. square baking dish. Bake at 375° for 10-12 minutes or until edges are lightly browned., Meanwhile, for filling, combine the sugar, 2 tablespoons cornstarch, salt and cinnamon in a small saucepan; slowly stir in water and lemon juice until smooth. Bring to a boil over medium heat; cook and stir for 1 minute or until thickened. Remove from the heat; stir in butter and vanilla., Toss pears with remaining cornstarch; spoon over crust. Top with filling. Sprinkle with reserved topping. Bake for 35-40 minutes or until filling is bubbly and topping is lightly browned. Cool on a wire rack.

3/4 cup fat-free plain yogurt
1/2 cup canola oil
4 large egg whites
1 large egg
3 cups all-purpose flour
1-1/2 teaspoons baking soda
1-1/2 teaspoons ground cinnamon
1 teaspoon salt
1/2 teaspoon ground nutmeg
1/2 teaspoon ground cloves
2 cups chopped peeled fresh pears
1/3 cup chopped pecans
1 teaspoon confectioners' sugar

Steps:

  • Coat a 10-in. fluted tube pan with cooking spray and sprinkle with flour. In a large bowl, beat the sugar, yogurt, oil, egg whites and egg until well blended. Combine the flour, baking soda, cinnamon, salt, nutmeg and cloves; gradually beat into yogurt mixture until blended. Stir in pears and pecans., Transfer to prepared pan. 3 c white sugar
1 c oil
2 eggs
3 c all-purpose flour
1/2 tsp salt
1 tsp cinnamon
2 tsp baking soda
1 c chopped nuts (pecans or walnuts)
1 c coconut
1 tsp vanilla

  • 1. Mix pears and sugar then refrigerate overnight.

2 cups (240 g) all-purpose flour
3 teaspoons (14 g) baking powder
3/4 teaspoon (pinch) kosher salt
1 1/4 cup (200 g) granulated sugar
1 cup whole milk yogurt
1/2 cup (113 g) butter, melted and cooled
2 large eggs
1/2 teaspoon (2 grams) vanilla extract
Confectioner sugar for dusting
freshly whipped heavy cream, if desired

Steps:

  • Line a 9.5 inch round baking pan with parchment paper, or spray with cooking spray.
  • Preheat oven at 350 degrees F.
  • In a large mixing bowl, with an electric mixer, whip the sugar and eggs until you obtain a creamy and fluffy texture.
  • Stir in the yogurt, butter, and vanilla extract. Use a fork or spatula to combine until smooth (not the electric mixer).
  • In a separated bowl mix the dry ingredients: flour, baking powder, and salt.
  • Sift in the dry ingredients to the wet mixture. Stir gently until well combined. Add the pears and mix gently. Place the batter into the prepared pan. Bake 40-45 minutes or until a toothpick comes out clean. If the cake starts to brown too much on top tent with the top with foil during the last 10 minutes of cooking.
  • Cool and dust cake with confectioner sugar. If desired, serve with freshly whipped cream.

3 cups all-purpose flour
1 ½ teaspoons baking soda
1 teaspoon fine sea salt
½ teaspoon ground allspice
½ teaspoon ground cinnamon
½ teaspoon ground cloves
1 cup turbinado sugar
1 cup grapeseed oil
3 large eggs, lightly beaten
3 cups peeled and finely chopped Bartlett pears
1 cup chopped pecans

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9-inch fluted tube pan (such as a Bundt®) with cooking spray; dust lightly with flour.
  • Mix flour, baking soda, sea salt, allspice, cinnamon, and cloves together in a bowl.
  • Beat sugar and grapeseed oil together in a separate bowl until creamy; stir in eggs. Stir flour mixture into sugar mixture; add pears. Blend batter with an electric mixer until thickened, about 3 minutes. Fold pecans into the batter and mix by hand until batter is well blended, about 2 more minutes. Pour batter into prepared pan.

2 firm ripe pears, peeled, thinly sliced
Whipped cream, if desired

Steps:

  • Heat oven to 350°F. In medium bowl, combine powdered sugar and 3/4 cup butter; beat at low speed until crumbly. Add eggs 1 at a time, beating well at medium speed after each addition. Add vanilla; beat well. Add flour, cornmeal and baking powder; mix well.
  • Place 1/4 cup butter in 9-inch round cake pan. Heat in oven for about 4 minutes or until butter is melted. Sprinkle brown sugar evenly over butter. Arrange pear slices over mixture in pan, slightly overlapping. Spoon and carefully spread cake batter over pears.

2 c pears, recommend canned in heavy syrup 1 1/2 cans) chopped and drained, reserve juice
1 tsp salt
3 eggs

Steps:

  • 1. Preheat oven to 325.
  • 2. In a large mixing bowl, combine oil, sugar and eggs. Beat until creamy.
  • 3. In a medium sized mixing bowl, sift together flour, salt,cinnamon and baking soda.
  • 4. Stir dry ingredients into creamed mixture until smooth. Add vanilla. Fold in pears and pecans.
  • 5. Pour mixture into a well greased bundt or tube pan.
  • 6. Bake 1 hour and 15 minutes. A toothpick inserted into the center should come out clean. Drizzle glaze over it. The glaze is the next recipe.
