7-LAYER FLAG DIP
Few things are more Fourth of July ready than party-friendly dips and flag-shaped foods - lucky for you, this recipe is both.

Steps:
- Heat oil in a large saute pan over medium high heat. Add the corn and cook until slightly charred, about 3-5 minutes. Add the jalapeno and garlic and continue to cook for another 2-3 minutes. Season to taste with salt and pepper, remove from heat and set aside to cool.
- In a large bowl, stir to combine the refried beans with the taco seasoning. Place in a 9x13 glass baking dish, spreading into an even layer. Top with white queso, spreading into an even layer. Top queso with shredded lettuce, then olives, corn and then pico de gallo.
- Spread the guacamole in an even layer over the top. Place sour cream in a piping bag fitted with a small piping tip.
- To make the flag topping, draw a box with the sour cream in the top left corner of the dip. Pipe the sour cream into 6 lines to make the white stripes of the flag. Sprinkle the cojita cheese over the stripes. Use a small spoon and carefully make 7 red stripes of the flag with the salsa.
- Fill in the box in the top left corner in with sour cream, spreading with a small offset spatula or knife into an even layer. Top the sour cream with crushed blue corn tortilla chips. Pipe the sour cream in dots on top of the crushed chips. Serve dip with red, white and blue tortilla chips.
- White Queso:.
- In a medium saucepan over medium heat, whisk to combine evaporated milk, whole milk and cornstarch. Bring to a simmer, then slowly whisk in american and cheddar cheeses until melted and smooth. Whisk in the diced jalapenos and season to taste with salt. Set aside to cool.

- In a bowl whisk together garlic paste, mayonnaise, lemon juice, and oil and stir in Parmesan and celery. Salad may be prepared up to this point 1 day ahead and chilled, covered.
- Trim endives and separate leaves. Endive leaves may be prepared up to this point 1 day ahead and chilled, wrapped in dampened paper towels, in a plastic bag.

- To roast walnuts, broil at 350 for 10 minutes until brown and roasted. Let cool! Break into small bits.
- Cut parmesan cheese into small cubes.
- Combine salt and garlic first, curshing garlic very well and mixing with salt.

- In a bowl, combine breadcrumbs, lemon, olive oil, and clams.
- In a frying pan over medium low heat, melt butter, add onion, garlic, and pepper, and saute five minutes. Stir in bacon, and cook an additonal five minutes. Stir into breadcrumb mixture.
- If filling clam shells: spoon about 2T mix into each clam shell, and top with a little bacon. Place filled shells on a cookie sheet or in a pyrex with about 1/4 inch water. Bake about 10 minutes at 350 degrees.
- If filling a casserole dish: spoon mixture into casserole dish, and bake uncovered for 15 minutes at 350 degrees. Serve with crackers. (I use Pepridge Farm Butterfly crackers, but any hard cracker will do).
- Change it up by adding a 1/2 C shredded mozzerella cheese and 2T grated Parmeseano Reggianno or Pecorino Ramano into the mix!

APPLE, ENDIVE AND PARMESAN SALAD WITH WALNUT VINAIGRETTE

- Whisk 2 tablespoons orange juice and mustard in small bowl to blend. Whisk in olive oil and walnut oil. Season dressing to taste with salt and pepper. Toss apple slices and remaining 2 tablespoons orange juice in large bowl.
- Separate endive leaves; set aside 24 leaves. Slice remaining leaves. Add sliced endive, lettuce and walnuts to bowl with apples. Add dressing; toss to coat.
