Warm cinnamon apples are the perfect topping for waffles on a cool day.

Cinnamon Apples
5 medium (about 7 cups) Braeburn apples, peeled, thinly sliced
1/2 cup firmly packed brown sugar
3 tablespoons water
2 tablespoons Land O Lakes® Butter
1 1/2 teaspoons ground cinnamon
1/4 teaspoon ground nutmeg
Waffles
2 cups pancake and baking mix
1 cup milk
1 large Land O Lakes® Egg
2 tablespoons vegetable oil
2 1/2 cups aerosol whipped cream
Aerosol whipped cream

Steps:

  • Combine all cinnamon apples ingredients in saucepan. Cook 15-20 minutes over medium heat, stirring occasionally, until apples are tender.
  • Combine baking mix, milk, egg and oil in bowl; mix well. Carefully stir in 2 1/2 cups whipped cream until just mixed. Let mixture rest 5 minutes.
  • Heat waffle iron. Cook waffles according to manufacturer's directions.
  • Top each serving with warm apples and whipped cream.

1 cup flour
1/2 teaspoon salt
1 teaspoon cinnamon
2 teaspoons baking powder
1 tablespoon sugar
2 eggs, separated
1 cup milk
4 tablespoons butter, melted
1 cup apple, peeled, grated

Steps:

  • Sift flour, salt, cinnamon, baking powder, and sugar together.
  • Separate eggs.
  • Beat egg yolks.
  • Add milk and melted butter.
  • Combine wet and dry ingredients.
  • Beat until smooth.
  • Add apples.
  • Beat egg whites until stiff; fold into batter.
  • Bake until done.

A cinnamon-y fruit topping that tastes great over pancakes, waffles, oatmeal, etc. From the Black Dog Inn B&B in Estes Park, Colorado. Mix and match different kinds of apples for a more robust flavor. Also good with a few raisins or dried cranberries thrown in; just make sure to add a little more water or juice to allow them to plump up enough.

2 large apples, peeled, cored, and sliced
1/2 teaspoon cinnamon
1/2 cup sugar
1 cup orange juice
1/4 teaspoon orange zest
brandy (optional)

Steps:

  • Place all ingredients in saucepan.
  • Bring to a boil, reduce heat, and simmer until apples are tender, approx 15-20 minutes. Add more water as needed while simmering.
  • Softened apples can be left chunky or processed in a blender for a smoother sauce.
  • Return to pan and add brandy as desired.
  • When ready to serve on pancakes, re-heat and top with applesauce and whipped cream.

3 medium eating apples, peeled and sliced (3 1/2 cups)
1/4 cup caramel topping
2 cups Original Bisquick™ mix
1 1/3 cups milk
2 tablespoons vegetable oil
1 egg, if desired

Steps:

  • To make Caramel Apple Topping, melt butter in 10-inch skillet over medium heat. Stir in apples. Cook about 3 minutes, stirring frequently, until tender. Pour caramel topping over apples. Heat, stirring frequently, until warm. Keep warm.
  • Heat waffle iron; grease if necessary.
  • Stir remaining ingredients until blended. Pour batter by slightly less than 1 cupfuls onto center of hot waffle iron.
  • Bake about 5 minutes or until steaming stops. Carefully remove waffle. Serve with Caramel Apple Topping.
