1 package (8 ounces) cream cheese, softened
1/4 cup milk
1 teaspoon dill weed
1/2 teaspoon salt
1/2 teaspoon pepper
4 cups cubed cooked chicken
1/2 cup finely chopped celery
4 green onions with tops, thinly sliced
3 tubes (8 ounces each) refrigerated crescent rolls
1/4 cup butter, melted
1/4 cup seasoned bread crumbs

Steps:

  • In a large bowl, beat the cream cheese, milk, dill, salt and pepper until blended. Stir in the chicken, celery and onions. , Unroll crescent roll dough and separate into 12 rectangles, four from each tube; place on a greased baking sheet and press the perforations together. Spoon 1/2 cup of chicken mixture into the center of each rectangle. Bring edges up to the center and pinch to seal. Brush with butter; sprinkle with bread crumbs. , Bake at 350° for 15-20 minutes or until golden brown.

1 (10 ounce) package frozen chopped spinach, thawed, well drained
1 1/4 cups KRAFT Shredded Low-Moisture Part-Skim Mozzarella Cheese, divided
6 tablespoons Kraft® Grated Parmesan Cheese, divided
1 1/2 lbs boneless skinless chicken breast halves, 6 small breasts pounded to 1/4-inch thickness
1 egg
10 Ritz crackers, crushed (about 1/2 cup)
1 1/2 cups spaghetti sauce, heated

Steps:

  • HEAT oven to 375ºF.
  • MIX cream cheese, spinach, 1 cup mozzarella and 3 tablespoons Parmesan until well blended; spread onto chicken breasts. Starting at one short end of each breast, roll up chicken tightly. Secure with wooden toothpicks, if desired.
  • BEAT egg in shallow dish. Mix remaining Parmesan and cracker crumbs in separate shallow dish. Dip chicken in egg, then roll in crumb mixture to evenly coat. Place, seam-sides down, in 13x9-inch baking dish sprayed with cooking spray.
  • BAKE 30 minute or until chicken is done (165ºF). Remove and discard toothpicks, if using. Serve chicken topped with spaghetti sauce and remaining mozzarella.
  • Make Ahead: Assemble chicken bundles and place in baking dish as directed. Refrigerate up to 4 hours. When ready to serve, uncover and bake at 375ºF for 35 minute or until chicken is done.

I love recipes that can easily be adapted, and this one is perfect because there are so many different things you could do with it. Try it and I promise you will love it! For me the best thing about this recipe is LOTS of filling -- so if you feel like there is not enough, go ahead and double the recipe.

4 skinless, boneless chicken breast halves
1 teaspoon butter
1 (4.5 ounce) can sliced mushrooms, drained
1 egg
½ cup cheese-flavored crackers (such as Cheez-It Duoz Sharp Cheddar and Parmesan®), crushed
1 (8 ounce) package cream cheese
1 ¼ cups shredded Cheddar cheese, divided
6 tablespoons grated Parmesan cheese

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Grease a 9x12-inch baking dish.
  • Place a chicken breast between two sheets of heavy plastic (resealable freezer bags work well) on a solid, level surface. Firmly pound the chicken breast with the smooth side of a meat mallet to a thickness of 1/4 inch. Repeat with the other chicken breasts.
  • Melt the butter in a small skillet, and cook the mushrooms until they begin to brown, about 8 minutes. Set aside. Beat egg in a shallow bowl. Place the cracker crumbs in another shallow bowl.
  • In a bowl, mix together the mushrooms, cream cheese, 1 cup of Cheddar cheese, and Parmesan cheese; spread the mixture generously over the chicken. This is a simple -- yet tasty -- recipe that can be tweaked to individual taste, just by changing the flavor of cheese spread used!

1/4 cup butter or 1/4 cup margarine
8 boneless skinless chicken breasts (about 4 oz each)
1/4 teaspoon pepper
2 (8 ounce) cans refrigerated crescent dinner rolls
1 (4 ounce) package garlic & herb spreadable cheese
1 egg, beaten (optional)

Steps:

  • In large skillet, melt butter, Sprinkle chicken breasts with pepper and add to skillet.
  • Cook 8 to 10 minutes or until well browned on all sides. Set aside to cool slightly.
  • Unroll both cans of the dough and separate into 8 rectangles.
  • Press each into 6x4-inch rectangle, firmly pressing perforations to seal
  • Spread cheese evenly in center of each dough rectangle and place chicken over cheese.
  • Bring corners of dough together over chicken and press to seal; place on cookie sheet that has been sprayed with cooking spray.
  • Bake at 375 degrees for 18 to 22 minutes or until deep golden brown. If you would like, brush lightly with egg during last 5 minutes of baking time.
  • Variations: Try different cheese spreads such as swiss, cheddar, etc. to get different flavors. Also, try adding a thin slice of ham and using swiss spread for a different take on Cordon Bleu.

2 cups green onions, sliced
1 teaspoon olive oil
10 ounces frozen spinach, thawed, drained and chopped
1 cup low-fat ricotta cheese
1/3 cup fresh parmesan cheese, grated
1/2 teaspoon garlic powder
1/4 teaspoon oregano, crushed
1/4 teaspoon nutmeg
1/4 teaspoon lemon juice
1 tablespoon butter, melted
8 egg roll wraps
nonstick cooking spray, for pans

Steps:

  • Cook onions in olive oil. In large mixing bowl combine spinach, ricotta cheese, Parmesan cheese, garlic powder, oregano, nutmeg, and lemon juice. Stir in chicken and onions. Season to taste with salt and pepper.
  • Spray eight, 10-oz. custard cups with non-stick spray. Line each dish with an egg roll wrapper. Divide chicken mixture among the 8 dishes. 6 chicken breasts
3 ounces monterey jack pepper cheese, grated
3 ounces cream cheese, softened
6 thin slices bacon
salt & pepper
1/3 cup ranch dressing, room temp
1/4 cup mild picante sauce, room temp

Steps:

  • Place thawed breast in plastic wrap and pound lightly to 1/4 inch thickness, until all are done. Season each with salt & pepper.
  • In small bowl, combine cheeses. Divide into 6 equal portions and roll into balls. Fold one chicken breast portion around cheese ball to form bundle.
  • Cut a slice of bacon in half and lay in the form of a cross. Place chicken bundle in center of cross and bring ends of bacon up to meet on top, like a package, and secure with toothpick. Repeat process with remaining chicken.
  • Place bundles in 9x13-inch dish and cook uncovered at 350* for about 30 minutes. Turn oven to broil and broil bundles 3-5 minutes until bacon is browned. Remove bundles from oven and remove toothpicks.
  • Mix ranch dressing and picante sauce together. Pour mixture in small bowl and place in center of serving plate and place chicken around it. Garnish with tomatoes, jalapeno peppers, or my Tabasco Guacamole.

18 Rhodes Dinner Rolls (thawed but still cold)
2 Tablespoons butter
½ cup onion (diced)
8 ounces fresh mushrooms (sliced)
½ pound sausage
½ teaspoon sage
¼ teaspoon marjoram
⅙ teaspoon all spice
1 egg (separated)
1 pound boneless, skinless chicken breasts (cooked and diced)

Steps:

  • In a large skillet combine butter, onion, mushrooms and sausage. Cook until sausage is lightly browned. Place mixture in a large bowl and add sage, marjoram, allspice, egg yolk, and chicken. Lightly toss together.
  • Combine 2-3 rolls together (depending on how big of bundles you want- we just used 2 rolls per bundle) and flatten into a circle. Repeat with remaining rolls. Divide chicken mixture equally between the circles. Moisten edges of dough with water and fold over mixture to completely enclose. Place folded side down on a sprayed baking sheet. Brush with beaten egg white. Place 3 whole sage leaves on top, if desired, and brush again. Cover with plastic wrap and let rise 15 minutes (I actually skipped this step and they turned out fine). Remove wrap and bake at 350 degrees for 30-35 minutes or until golden brown.
  • We dipped our bundles in marinara sauce and it was delicious!

Steps:

  • Mix together bread crumbs, cheeses, salt and pepper. Dip chicken pieces in melted butter and then in cheese/bread crumb mixture. Roll the breast up or tuck in the sides to form a little bundle.
  • (To freeze: wrap each raw chicken bundle in plastic wrap and then place in freezer bags. Thaw and follow baking directions below.).
  • To Bake: Place in large baking dish. Pour remaining butter on top and sprinkle with remaining Parmesan. Bake, uncovered, at 350 for 1 hour, until chicken is crispy.

8 boneless skinless chicken breast halves (about 6 ounces each)
1 teaspoon salt
1/2 teaspoon pepper
40 large spinach leaves
1 carton (8 ounces) spreadable chive and onion cream cheese
1/2 cup chopped walnuts, toasted
2 sheets frozen puff pastry, thawed
1 large egg
1/2 teaspoon cold water

Steps:

  • Preheat oven to 400°. Cut a lengthwise slit in each chicken breast half to within 1/2 in. of the other side; open meat so it lies flat. Cover with plastic wrap; pound with a meat mallet to 1/8-in. thickness. Remove plastic wrap. Sprinkle with salt and pepper., Place five spinach leaves on each chicken breast half. Spoon a scant 2 tablespoons of cream cheese down the center of each chicken breast half; sprinkle with 1 tablespoon walnuts. Roll up chicken; tuck in ends. , Unfold puff pastry; cut into eight portions. Roll each into a 7-in. square. Place chicken on one half of each square; fold other half of pastry over chicken. Crimp edges with fork. Combine egg and cold water; brush over edges of pastry. , Bake on a greased 15x10x1-in. baking sheet until a thermometer reads 165°, 20-25 minutes.
