THE BEST BACON CHEESEBURGER
While we love a grilled burger, this one is our go-to for all seasons. Instead of making a typical patty, we smash the meat in a super-hot cast-iron pan to get crispy, ruffled edges. Once you smash your burgers this way, you'll never go back! We top them with all the fixings, including our perfectly balanced special sauce. It's what we consider an iconic burger.

- Preheat the oven to 400 degrees F.
- Combine the mayonnaise, ketchup, mustard, relish and vinegar in a small bowl; set aside.
- Working in batches if necessary, add the bacon to a large cast-iron skillet over medium heat. Cook, flipping halfway through, until crisp and golden, about 10 minutes. Transfer the bacon to a nonstick baking sheet. Discard the bacon fat (or save for another use) and wipe the skillet clean but do not wash. Heat over medium-high heat until very hot, about 5 minutes.
- Add the buns split-side up to the baking sheet with the bacon and bake until the buns are toasted, about 5 minutes.
- Loosely form the beef into 4 balls. Add one ball of beef to the skillet and press firmly to flatten with a large flat metal spatula for 10 seconds, then gently remove the spatula. Sprinkle the patty generously with salt; repeat with the remaining beef balls, cooking in batches if necessary. Let cook, undisturbed, until well browned on the bottoms, 2 to 3 minutes. Flip the patties, sprinkle with more salt and top each with a slice of Cheddar. Continue cooking until the cheese is melted around the edges and the bottoms are browned, about 2 more minutes.
- Spread the mayonnaise mixture on the bun tops. Serve the patties on the bottom buns topped with the bacon, onion, tomato and lettuce.
BACON CHEESEBURGERS
This takes a little more effort than the average cheeseburger, but is well worth it! Serve on buns with your favorite condiments.

Steps:
- Preheat a grill for high heat.
- Place bacon in a large skillet over medium heat. Fry, stirring occasionally. When the bacon is almost done, add the onion. Cook until the bacon is crisp, and the onion is tender. Remove onion and bacon from the pan with a slotted spoon, and transfer to a food processor. Pulse a couple of times to chop finely. Do not puree. Pour into a large bowl, and mix with steak sauce and ground chuck using your hands. Form into 16 patties.
- Place patties on the grill, and cook for 5 minutes per side, or until well done. Place a slice of cheese on top of each one during the last minute.

- Cook patties on open grill (do not fry). Until fully cooked.
- Cook bacon to a crisp not burnt in a sauce pan. Or microwave.
- Cook Onion rings in pure vegetable oil until done. 2-3 minutes will do.
- Lightly toast bun on top and bottom.
- Apply 1 table spoon of BBQ sauce to the top and bottom of the bun.
- Place cooked bacon in a X pattern on the top of the bun.
- Place the Onion rings on the bottom bun.
- Place a patty on top of the rings.
- Then a slice of cheese.
- Then place the top bun with bacon on top of the cheese patty.
- Repeat steps 8-9 for a double, or if you are really daring -- A TRIPLE!

VEGETARIAN WESTERN BACON CHEESEBURGER
I know, this sound weird. I've been a vegetarian for 5 years and there are some items I missed from my meat eating days. I was having a craving for a Carl's Jr. Western Bacon Cheeseburger one day and decided to vegetarianize it. This is super easy to make and tastes very much like the original. To save time and to make it taste more authentic, use onion rings from a fast food restaurant like Sonic. I prepared the burger while I send my boyfriend down the street to Sonic. Also, slightly burning the Lightlife Smart Bacon is what makes it taste like real bacon.

- If cooking your own onion rings, preheat the oven and start those first.
- Spray a small pan with cooking spray and heat to medium. Cook Smart Bacon until crispy and slightly burned, turning occasionally. Set aside.
- Thaw Griller patty in microwave and transfer to heated pan on medium-low. Cook until slightly crispy, but not burned. While the patty is cooking, lightly toast the buns on a skillet. Have cheese slice ready and immediately after turning the patty, place cheese on top followed by the bacon and BBQ sauce. You may put some drops of water into the pan at this time, the steam will help melt the cheese.
- Pull the bottom bun from skillet and place the onion rings on it. Pull the rest of the burger on top. ENJOY!
- NOTE: Cooking time is based on baking onion rings at home. If you buy them from a fast food place, the cook time is closer to 10 minutes.

- In a non stick frying pan, fry sliced provolone cheese over medium high heat. You can add spices such as oregano, basil, chopped garlic. You can add grated parmesan or romano cheese to soak up some of the excess oil from the provolone. Watch carefully. - In a large bowl, combine the ground beef, garlic powder, parsley, salt, pepper, and paprika.
- Brush the ramekin with barbecue sauce. Lay down the bacon strips, rotating clockwise, spacing evenly on the edges.
- Place half of the beef patty on top of the bacon.
- Press the beef patty evenly into the ramekin, leaving a small divot in the middle.
- Place the cheddar cheese in the divot.
- Preheat the oven to 425°F (220°C).
