SOUTHWESTERN CHICKEN AND RICE BAKE

This is from southernfood.about.com. It's a great dish for using leftover chicken and rice, and it is VERY easy. Don't let the number of ingredients fool you - as a lot of them are spices. I used almond milk and whole wheat flour, but regular milk and all purpose flour can be used (respectively). You can also use less ground red pepper if you don't want it quite so hot.

2 cups cooked rice
1 1/2 cups cooked chicken, diced
1 (15 ounce) can black beans, drained and rinsed
1 (11 -15 ounce) can whole kernel corn, drained
1 (14 1/2 ounce) can diced tomatoes, slightly drained
1 teaspoon dried cilantro
1 teaspoon ground cumin
1/2 teaspoon garlic powder
1/2 teaspoon oregano
1 tablespoon chili powder
1/2 teaspoon ground red pepper (optional. Use more or less, to taste)
4 tablespoons butter
4 tablespoons whole wheat flour
1 cup milk
1/2 cup chicken broth
1/4 teaspoon ground black pepper
1/2 teaspoon salt
1 cup cheddar cheese (optional)

Steps:

  • 1. In large bowl, combine rice, chicken, beans, corn, tomatoes, cilantro, cumin, garlic powder, oregano, chili powder, and red pepper. Stir to blend.
  • 2. In a saucepan, melt butter over medium-low heat. Stir in flour until well blended and bubbly. Gradually stir in milk, chicken broth, salt, and pepper. Cook, stirring constantly, until thickened and bubbly. Stir into the rice and chicken mixture. Add more spices, salt and/ or pepper if desired.
  • 3. Spray a 2 to 2.5 quart casserole dish with nonstick cooking spray. Pour mixture into the dish. Bake at 350 degrees for 25 - 30 minutes, or until bubbly. If desired, sprinkle with the cheese 5-8 minutes before done.
  • 4. If desired, serve with a dollop of sour cream, chopped green onions, and tomatoes.

1 (3 pound) cooked rotisserie chicken, meat removed from bones and chopped
1 ½ cups uncooked white rice
1 (19 ounce) can black beans, rinsed and drained
1 (12 ounce) can whole kernel corn, drained
2 ¾ cups tomato sauce
2 cups chicken broth
1 cup sour cream
1 tablespoon chili powder
1 teaspoon salt
½ teaspoon ground cumin
½ teaspoon ground ancho chile pepper
½ teaspoon ground white pepper
½ cup chicken broth
1 ½ cups grated aged Cheddar cheese

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Spray a 4-quart casserole dish with nonstick spray. Add chicken, uncooked rice, black beans, and corn and stir until combined. Set aside.
  • Mix tomato sauce, 2 cups chicken broth, sour cream, chili powder, salt, cumin, ancho chile pepper, and white pepper together in a large bowl. Pour into the casserole dish and mix well; contents should be fairly soupy. Cover with foil.
  • Bake in the preheated oven for 40 minutes. Remove from the oven, uncover, and stir.
  • Add the remaining 1/2 cup chicken broth if the casserole is too dry or beginning to stick. Cover again and return to the oven until rice is soft, about 40 more minutes.
  • Remove foil, stir contents, and sprinkle with grated Cheddar cheese. Return to the oven until cheese is melted, about 5 minutes.

1 whole slow roasted chicken, roughly chopped
1 1/2 cups instant white rice, uncooked
1 jar (16 ounce) mild picante sauce
1 can (11 ounce) corn and peppers
2 cans (10 ounces each) red enchilada sauce
1 can (15 ounces) black beans, drained and rinsed
1 package (8 ounce) Mexican Style shredded cheese, divided
Sour cream (optional)
Tortilla strips (optional)

Steps:

  • Preheat oven to 400 degrees F. Spray a 13x9 baking dish with cooking spray. Combine all but last two ingredients in a large bowl, reserving 1 cup of shredded cheese. Spread mixture evenly into baking dish and top with remaining cheese. Bake for 20 minutes until heated through and cheese is melted and bubbly. Serve topped with sour cream and tortilla strips, if desired. Refrigerate any leftovers.

2 cups cooked rice
2 boneless skinless chicken breasts, chopped (medium size)
1 cup monterey jack cheese, shredded
1 cup evaporated milk
1 1/2 tablespoons red onions, finely chopped
2 large eggs, lightly beaten
1/4 cup cilantro, finely chopped
1 teaspoon cumin
1/2 teaspoon salt
2 tablespoons jalapenos, seeded and diced

Steps:

  • Preheat oven to 350°F Grease 2 quart or 8x8 casserole dish.
  • Prepare rice as directed to make 2 cups of cooked rice.
  • Saute 2 chicken breasts in a shallow pan using olive oil, salt and pepper until done. Chop chicken breasts into bite size pieces.
  • Combine all ingredients in a large bowl and mix well. Pour mixture into greased (or sprayed) casserole dish.
  • Bake for 40 minutes. Cut into squares and serve.

This is quick and easy. Dinner in under 45 minutes. It came about when I left a bag of frozen chicken thighs out while rearanging my freezer. It wasn't safe to refreeze them so I tried to use them with what I had on hand. It's a bit of all right.

2 tablespoons olive oil
1 cup basmati rice, uncooked
3 tablespoons olive oil
5 chicken thighs, cut into large bite sized pieces
2 yellow onions, chopped
2 pasilla chiles, roasted,seeded,devained,chopped
4 cloves garlic, minced
5 tomatoes, blanched,skinned,and chopped
2 cups chicken stock, homade is best
1 tablespoon new mexico chile powder, freshly ground
1 teaspoon cumin, freshly ground
6 -8 sprigs fresh cilantro, chopped
salt & freshly ground black pepper

Steps:

  • Prep all ingredients.
  • Heat a dutch oven over med-high heat.
  • Add 2 TBS Oil, heat.
  • Add Rice, stir fry'til Rice turns translucent.
  • Remove and set aside.
  • Add 3 TBS oil, heat.
  • Add Chicken, brown, remove, set aside.
  • Add Onions and chiles, saute (stir fry)'til onions are translucent.
  • Add Garlic, saute'til garlic is wilted.
  • Add Chicken, Rice, Tomatoes, Chicken Stock, Chili Powder, and Cummin.
  • Bring to a simmer, cover and simmer for 20 minutes.
  • Adjust seasoning, stir in Cilantro.
  • Serve with something to counterpoint the spicy flavor.
  • Cucumber or Chayote salad works well.

My mom bought me a Campbell's Southwest Chicken SupperBake & DH & I both really liked it...as I looked at everything in it, I thought, I could make this & without all of the processed ingredients...and so I did for dinner tonight! The best part is there is no added fat!

1 (16 ounce) jar salsa
1 (15 1/2 ounce) can black beans, rinsed & drained
1 (15 1/4 ounce) can corn (add the drained corn liquids in with the 2 c hot water)
1 1/3 cups white rice
2 cups hot water
1 (1 1/4 ounce) packet taco seasoning
3 chicken breasts, cut into strips

Steps:

  • 1. Preheat oven to 375*.
  • 2. In the bottom of a 9x13 glass baking dish, combine the rice, water, taco seasoning packet, 1/2 the jar of salsa and 1/3 can each of the beans and corn. Gently stir to combine.
  • 3. Lay the chicken pieces over the rice mixture.
  • 4. In the half-filled salsa jar, sprinkle in a little of the extra corn and beans, then re-lid & shake to combine. Pour over top of the chicken pieces.
  • 5. Cover with foil & bake 35-40 minutes or until most of the liquid has been absorbed.
  • 6. Let stand 5 minutes uncovered before eating.
  • Serve with sour cream if desired. I used the extra corn and beans to make a black bean & corn salsa to serve as a side dish.

3/4 cup lentils
1/2 cup brown rice
3/4 cup chopped onion

Steps:

  • Preheat the oven to 300 degrees.

6 boneless skinless chicken breasts
1 (10 1/2 ounce) can cream of chicken soup
1 (10 1/2 ounce) can Campbell southwest-style pepper jack soup (Campbell's) or 1 (10 1/2 ounce) can a cheddar cheese soup
2 chipotle chiles in adobo, diced fine (optional)
2 cups long grain rice
21 ounces milk
3 slices muenster cheese

Steps:

  • Preheat oven to 350.
  • Mix everything together except the chicken and the muenster cheese.
  • Pour into a greased 9x13" baking dish. Place chicken breasts on top.
  • Bake, covered, for a hour and fifteen minutes.
