2 cups homemade pinto beans ((include some cooking liquid or boiling broth too))
3 tablespoons olive oil (or vegetable oil of choice)
⅓ cup of finely chopped white onion
2 to 3 whole dried chiles de arbol (or dried/fresh chile of choice)
large pinch sea salt (adjust to taste (kosher salt may also be used))

Steps:

  • Heat the oil in a large frying pan, once it's hot add the onion and cook until browned and crispy (this gives it a great taste, or you can just sauté until tender.) Next add the dried or fresh chiles and cook just until they brown or begin to blister -- this happens quickly so be ready to proceed.
  • Next add the boiled beans -- be careful because it will splash, allow to fry for about 3 minutes. Next add about ¼ cup of the broth and then begin mashing the beans until you achieve the desired texture. The broth will help with the mashing and you'll need to add a little bit of the broth to help you achieve the texture you desire.
  • Continue to "fry" for about 5-8 minutes or until they have the consistency you want. Remember to adjust the consistency to your needs by cooking longer to thicken or adding more broth/water to thin out. Taste and add salt as desired.

1 tablespoon extra-virgin olive oil
1/2 cup finely chopped yellow or white onion (about 1/2 small onion)
1/4 teaspoon fine sea salt
2 cloves garlic, pressed or minced
1/2 teaspoon chili powder
1/4 teaspoon ground cumin
2 cans (15 ounces each) pinto beans, rinsed and drained, or 3 cups cooked pinto beans
1/2 cup water
2 tablespoons chopped fresh cilantro
1 tablespoon lime juice (about 1/2 medium lime), to taste

Steps:

  • In a medium saucepan over medium heat, warm the olive oil until shimmering. Add the onions and salt. Cook, stirring occasionally, until the onions have softened and are turning translucent, about 5 to 8 minutes.
  • Add the garlic, chili powder and cumin. Cook, stirring constantly, until fragrant, about 30 seconds. Pour in the drained beans and water. Stir, cover and cook for 5 minutes.
  • Reduce the heat to low and remove the lid. Use a potato masher or the back of a fork to mash up about at least half of the beans, until you reach your desired consistency. Continue to cook the beans, uncovered, stirring often, for 3 more minutes.
  • Remove the saucepan from the heat and stir in the cilantro and lime juice. Taste, and add more salt and lime juice if necessary. If the beans seem dry, add a very small splash of water and stir to combine. Cover until you're ready to serve.

1 pound dry pinto beans
3 cups vegetable broth + a little more for thinning
2 tablespoons olive oil
4-5 medium cloves garlic
1 teaspoon onion powder
1 teaspoon cumin
1 teaspoon chili powder
1 teaspoon salt
1/2 fresh lime (optional)

Steps:

  • Rinse beans under water and pick through, discarding any weird broken bean pieces or other debris. Place beans in a 3-quart or larger Crock Pot and fill Crock Pot with water to about 2 - 3 inches above the beans. Cover and let sit overnight, or for at least 8 hours.
  • Discard soaking water by pouring beans into a colander. Rinse beans. Return beans to the Crock Pot.
  • Add vegetable broth, olive oil, garlic, onion powder, cumin, chili powder, and salt.
  • Cook on low for 8 - 10 hours, until beans are cooked through.
  • Turn off Crock Pot and remove lid to allow beans to cool a bit so that they're safer to handle. Using an immersion blender, blend beans to desired consistency (you might like your beans to be 100% smooth, or chunky with a few beans still left whole). A note on liquid level: Crock Pots can vary, so if before blending, the liquid is still above the level of the beans, you may want to skim a little off and reserve the liquid for possibly thinning later on. Mine cook down and end up at the perfect consistency with exactly 3 cups vegetable broth, and I don't need to remove any of the liquid before blending.
  • Turn Crock Pot back on to low and let pureed beans sit and cook for another 30 minutes or so. This will help the beans to thicken up and the flavors to develop.
  • Taste and add additional salt if desired. I actually like to use 2 teaspoons kosher salt up front, but I like mine a bit salty. If beans are too thick, add additional vegetable broth and stir. If beans are too thin, let sit for a little longer and they will thicken up nicely.
  • Squeeze half a lime over the top of the beans before serving, if desired.
  • These keep in the refrigerator in an airtight container for 2 - 3 days, or you can keep them frozen for several months. They will thicken after sitting. Just thin with vegetable broth or water to the desired consistency.

2 tablespoons minced garlic, divided
1 medium tomato, diced
2 tablespoons ground cumin
1 tablespoon chili powder
2 tablespoons olive oil

Steps:

  • Place the beans in a large saucepan, and cover with an inch of water. Place over high heat, and bring to a boil. When the beans have come to a boil, drain, and return them to the same pot. Cover the beans with 2 inches of water, and stir in 1 tablespoon of garlic, the tomato, cumin, and chili powder. Bring to a boil over high heat, then reduce heat to low, and simmer until the beans are very soft, about 3 hours and 45 minutes, adding water as needed.
  • Once the beans have cooked, mash them with the remaining tablespoon of garlic, the oil, and salt to taste; use additional water as needed to achieve desired consistency. Place over low heat for 30 minutes, stirring occasionally. Serve.

1 (1 lb) package dried pinto bean
4 cups water
1/4 cup bacon grease (optional)
3 teaspoons garlic powder

  • Put beans and water into Dutch oven.
  • Soak at least six hours.
  • Pour beans into colander and rinse thoroughly.
  • Add two cups water back into the Dutch oven, along with bacon grease, garlic powder, bouillon and chili powder.

  • Cover and reduce heat, simmering for about four to six hours.
  • Stir occasionally.
  • You'll know when the frijoles are done because they'll be very tender.

2 Tbsp avocado oil ((or sub water but double the amount and add more as needed))
3/4 cup diced white onion
3 cloves garlic, minced
1/4-1 cup vegetable broth ((or store-bought // amount will vary depending on method of cooking beans))
1/2 tsp sea salt, plus more to taste
Lime juice
Hot sauce
Freshly chopped cilantro
Diced red onion

Steps:

  • CANNED: If starting with canned beans, simply open cans and set aside. As the original recipe is written, about 2 15-oz (425-g) cans will yield 3 cups cooked beans.
  • FROM SCRATCH: If cooking pinto beans from scratch, we recommend this recipe, which yields 5 cups cooked beans. We recommend reducing the serving size to six 1/2-cup servings (rather than 10 servings), which would yield 3 cups cooked beans. The spices and diced tomatoes with green chilies are optional.
  • INSTANT POT: If cooking pinto beans in an Instant Pot, we recommend following this recipe but swapping the black beans for pinto beans. Be sure to save any leftover cooking liquid.
  • REFRIED BEANS: To prepare refried beans, heat a large pot or Dutch oven over medium heat. Once hot, add oil (or water) and onion. Sauté, stirring occasionally, until translucent and tender - about 4-5 minutes. Then add minced garlic and cook for 2 minutes more. Turn down heat if browning too quickly.
  • Next add your cooked beans and any of the cooking liquid. Depending on your cooking method, your beans may be looking somewhat dry or they may be submerged in cooking liquid. Because we're going to simmer the beans even more, you want them to be just submerged, so add only as much vegetable broth as needed to just cover the beans.
  • Bring to a low boil over medium heat. Then add your salt. Cover and reduce heat to low. Simmer for 20 minutes to further cook and tenderize the beans. If they begin looking dry or stick to the bottom of the pan at any point, add more vegetable broth to moisten.
  • Your beans should now be tender. Our preferred way of mashing is with an immersion blender. If using an immersion blender, tip the pot to one side so the blade can be submerged and blend until the beans are creamy and smooth. If you don't have an immersion blender, a bean or potato masher will also work. It just takes more work and they won't get quite as creamy.
  • If you're blending or mashing and your beans have become too thick, thin with more vegetable broth as needed.
  • Taste and adjust seasonings as needed, adding more salt to taste. We didn't find the beans needed more than this. However, you could add chili powder or chipotle pepper in adobo for some heat, or some ground cumin for smokiness.
  • Serve as is, or garnish with desired toppings (lime juice, hot sauce, cilantro, red onion, or this vegan Mexican-style queso would be delicious).
  • Store leftovers covered in the refrigerator up to 4-5 days or in the freezer for up to 1 month. To reheat, warm in a pot or saucepan, adding more broth as needed.

  • 1) Rinse and pick through the beans in a colander. Check for stones and blackened beans to be removed. 2) Transfer the rinsed beans to a large pot and cover with clean, filtered water. (To help remove gas, drain the water after 20 minutes at a hard boil and replace with more filtered water. Return to a hard boil.) 3) After 20 minutes at a hard boil, reduce heat to low, cover and allow to simmer for 4 hours. 4) Once 4 hours has passed, remove beans from heat. In a large frying pan heat your Olive Oil on medium-high. Add the onion and cloves. Cook till the everything is a nice golden brown color. 5) For the frying pan, reduce heat to Medium-Low. With a slotted spoon begin transferring the cooked beans over the onion and garlic. 6) Once all the beans are in the frying pan, set aside the bean broth in your pot for later use. Sprinkle Garlic Salt over the frying beans. Fold the beans with a wooden spoon so the oil, salt, garlic and onions are well distributed. 7) Continue frying the beans till the liquid at the bottom of the pan looks milky or about 15-20 minutes. 8) Mash beans with a potato masher or a fork till they are at your preferred consistency. 9) In the center of your mashed beans create a well for the bean broth. Stir up the broth and pour enough of the broth in the well to reach the level of the beans. Gently cut through the mashed beans to create an even and creamy texture. If the beans seem to wet, allow the water to cook off, stirring occasionally. The bottom of the pan has a tendency to over cook the beans. If they still seem to dry, add more bean broth or filtered water. 10) Your all done, serve with grated cheese, tortillas, chips or use as a side for another Mexican dish. Enjoy!

1 large onion (, quartered)
2 Tablespoons lard or oil
3 cloves garlic (, minced)
1-2 teaspoons salt (, or more, to taste)
3/4 teaspoon ground cumin (, or more, to taste)
1/2 teaspoon oregano (, or more, to taste)

Steps:

  • Rinse pinto beans in a colander, removing any unwanted pebbles or pieces that may be in the bag.
  • Add the beans to a large pot, cover with water and soak overnight.
  • Drain soaked beans and return them to the pot. Add fresh water to cover the beans up to two inches above them. Add onion to the pot and a couple dashes of salt.
  • Bring beans to a boil, cover and simmer for one hour, stirring occasionally. Check the beans and if they're not completely cooked after one hour, let them simmer a few minutes longer until they're done.
  • Drain the beans, removing the onion and reserving the bean broth water.
  • In a large skillet (preferably an iron skillet), heat lard or oil over medium heat.
  • Add the garlic and stir. Add the beans, cumin, oregano and 1/4 cup of the bean broth. (You could also chop the reserved onion and add it to the pan).
  • Cook, gently smashing the beans as they cook with a potato masher or fork.
  • Continue stirring and mashing, adding additional bean broth as needed until you get the texture you like and the beans are the consistency of soft mashed potatoes. Taste and season with additional salt, cumin and oregano, as needed. Top with shredded cheese, if desired.
