VEGETARIAN SPINACH AND MUSHROOM ENCHILADAS



Vegetarian Spinach and Mushroom Enchiladas image

Delicious meatless enchiladas. You can vary the amounts of cheese and cream sauce to make them as light or heavy as you like. I use 3 to 5 varieties of mushrooms. Various oyster varieties, buttons, and baby portobello.

3 tablespoons butter
1 pound mushrooms, cleaned and sliced
1 cup coarsely chopped onion
8 ounces fresh spinach - washed, stemmed, and coarsely chopped
salt and ground black pepper to taste
1 (10 ounce) can Mexican-style diced tomatoes with lime and cilantro (such as Rotel®), half drained
1 (8 ounce) package neufchatel cheese
1 (16 ounce) container sour cream, divided
½ teaspoon ground cumin
20 corn tortillas
1 pound shredded Monterey Jack cheese
1 (8 ounce) jar salsa, or as needed

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Lightly grease a 9x13-inch baking dish.
  • Heat a skillet over high heat. Add butter, mushrooms, and onion and cook until onions are translucent, 7 to 10 minutes. Add spinach and toss until wilted, about 3 minutes more. Season with salt and pepper. Remove from heat and set aside.
  • Heat a small saucepan over medium heat. Add diced tomatoes, neufchatel cheese, 8 ounces sour cream, and cumin. Stir until thoroughly mixed, about 1 minute, and remove from heat.
  • Place tortillas between 2 paper towels and heat in a microwave oven until warm, 30 seconds to 1 minute.
  • Scoop about 2 tablespoons spinach mixture, 1 tablespoon cream mixture, and 1 to 2 tablespoons shredded Monterey Jack cheese into a tortilla. Roll up and place seam-side down in the prepared baking dish. Repeat with remaining tortillas. Spread any remaining cream mixture on top of enchiladas. Sprinkle any remaining Monterey Jack cheese on top. Cover.
  • Bake in the preheated oven until heated through, about 20 minutes.
  • Garnish individual servings with remaining sour cream and salsa.

PORTOBELLO AND POBLANO ENCHILADAS

Portobello mushrooms add hearty flavor to these creamy vegetarian enchiladas. Since poblano chiles vary in spiciness, use a milder chile, such as Anaheim, if you prefer a dish with less kick.

1/4 cup distilled white vinegar
1 tablespoon sugar
5 tablespoons fresh lime juice (from about 2 limes), divided
1 large red onion, thinly sliced, divided
1 canned chipotle chile in adobo
2 1/4 cups heavy cream, divided
1 teaspoon kosher salt, divided
3 tablespoons vegetable oil
3 large portobello mushrooms, stemmed, thinly sliced
1 poblano chile, cut into 1/4" strips
1 garlic clove, finely chopped
12 corn tortillas
6 ounces queso fresco, crumbled (about 1 cup), divided
1/3 cup cilantro, coarsely chopped, divided
3/4 cup grated cheddar

Steps:

  • Preheat oven to 350°F. Combine vinegar, sugar, and 4 Tbsp. lime juice in a small bowl. Stir in half of the onion, cover, and set aside.
  • Purée chipotle chile and 1/4 cup cream in a blender until smooth. Transfer to a medium bowl; stir in 1/4 tsp. salt and remaining 2 cups cream and 1 Tbsp. lime juice.
  • Heat oil in a large heavy skillet over medium-high until hot but not smoking. Add mushrooms, poblano chile, garlic, and remaining onion and cook, stirring occasionally, until mushrooms are tender and onions are translucent, about 10 minutes. Season with remaining 3/4 tsp. salt.
  • Meanwhile, stack tortillas with damp paper towels between each one, then wrap the stack in a clean dish cloth. Microwave for 45 seconds. Keep stack wrapped.
  • Spread 1/2 cup cream sauce on the bottom of a 9x13" baking dish. Transfer remaining sauce to a wide shallow bowl and dip tortillas, one at a time, into sauce to coat. Stack dipped tortillas on a work surface.
  • Sprinkle 1 Tbsp. queso fresco down center of 1 tortilla. Top with 1/4 cup mushroom mixture, arranging down center over cheese. Top with 1 tsp. cilantro. Roll up tortilla and place, seam side down, in prepared baking dish. Repeat with remaining tortillas. Spoon remaining sauce over enchiladas, making sure to cover entirely with sauce. Top with cheddar and remaining 3 Tbsp. queso fresco.
  • Bake enchiladas until cheese is melted and edges of tortillas are toasted, 25-30 minutes. Top with reserved pickled onion and remaining 1 Tbsp. cilantro.
  • Do ahead
  • Sauce can be made 1 day ahead. Cover and chill.

A wonderful alternative to classic enchiladas for the vegetarian! This recipe originated from my fiancee's mother, but I added my own twist!

6 flour tortillas
2 cups baby portabella mushrooms, sliced
1 (31 ounce) can refried beans
1 (19 ounce) can enchilada sauce
1 lb mexican-style shredded cheese
1 1/2 cups salsa
1 cup beans (already cooked)
1 tablespoon margarine
1 teaspoon ground cumin

Steps:

  • Heat skillet on medium-high heat. Add 1 tablespoons margarine when warm. Add 2 cups sliced mushrooms. Stir mushrooms until tender and soft. Pour in a bowl for enchiladas.
  • Pour contents of canned refried beans and 1 cup beans (already cooked) in a bowl, and mix well. Add 1 teaspoons ground cumin to the mixture, and stir.
  • Layer mushrooms, bean mixture, 2 teaspoons salsa, and a handful of shredded cheese in each enchilada.
  • Fold burrito-style. (Fold short ends in, fold over one side, and roll over).
  • Repeat Steps 3 and 4 for all 6 enchiladas.
  • Place in a 9x13 inch baking dish.
  • Pour enchilada sauce over enchiladas evenly.
  • Sprinkle the rest of the shredded cheese over the top of the enchiladas.
  • Bake at 350 degrees Farenheit until cheese is melted.
  • Enjoy!

1/2 yellow onion, chopped
1/2 green bell pepper, chopped
1 medium tomatoes, chopped
1 (15 ounce) can black beans, rinsed, drained, and smashed
1 (15 ounce) can enchilada sauce (we used organic)
2 cups hot salsa (any spice level, we picked Hot)
6 flour tortillas
1 cup cheddar cheese, grated
1 cup fontina, sliced into blocks, 3 pieces each enchilada
2 large portabella mushrooms, diced
fat free sour cream, if desired

Steps:

  • In a medium pot, saute onion and bell pepper in 1 Tbsp canola oil for 2-3 minutes. Add smashed black beans, 2/3 (15oz) can of enchilada sauce, and salsa. Stir, set aside.
  • In a small pan, saute portabello mushrooms 2-3 minutes in 1 Tbsp canola oil. Add to mixture above.
  • Spoon 1/4 cup portabello mixture into tortilla. Add 3 blocks fontina cheese. Roll each enchilada and place seam down in oiled baking dish. Cover with remaining enchilada sauce and chopped tomatoes.
  • Bake at 350 for 15 minutes. Add cheddar cheese, bake an additional 5 minutes.

  • Stir in the spices and transfer to a large bowl. Mix in half the shredded cheese and the cup of sour cream.
  • Rinse out the skillet and add the oil for the sauce. Cook the onions over medium-high heat while stirring until they soften, about 3 - 4 minutes. Sprinkle in the flour and cook while stirring for another minute, being careful not to let it burn.
  • Pour in the broth, tomato sauce, and spices, and let it come to a boil. Reduce to a simmer and cook until the sauce slightly thickens while you roll up the enchiladas.
