VEGAN MATCHA ALMOND THUMBPRINT COOKIES
Gloss the tops of these egg- and dairy-free almond cookies with an earthy-sweet green tea frosting.

- Preheat the oven to 325°F. Lightly grease a cookie sheet and set aside. In a small bowl, stir together the egg replacer and water and set aside. Using an electric mixer, beat the almond paste, agave nectar, and Earth Balance until creamy. Add the extracts and the egg replacer mixture and continue beating. Stir in the flour and salt to create a soft dough.
- Using a teaspoon, create small balls of cookie dough and drop them on the prepared cookie sheet, leaving plenty of room between cookies. Push your thumb down into each cookie to create an imprint. Bake for 15 minutes, until the edges begin to harden. Transfer the cookies to a wire rack and allow them to cool.
- For the frosting, mix the matcha powder with the creamer in a small bowl to create a paste. In a medium bowl, beat the Earth Balance briefly and scrape the bowl. Add the powdered sugar and matcha paste, and beat again until smooth. Once the cookies have cooled, use a teaspoon to scoop some matcha frosting into each thumbprint.
MATCHA THUMBPRINT COOKIES WITH CHOCOLATE AND WALNUTS

- For the cookies: Preheat the oven to 350 degrees F. Spread the walnuts on a rimmed baking sheet in a single layer and bake until lightly toasted, about 6 minutes. Transfer to a bowl to cool.
- Increase the oven temperature to 375 degrees F. Line a large baking sheet with parchment paper.
- Whisk together the flour, cornstarch, matcha and salt in a bowl.
- Beat the butter, brown sugar and granulated sugar in a large bowl with an electric mixer until light and fluffy. Beat in the vanilla and egg yolk. Add the flour mixture in 3 batches, beating after each until just incorporated. Use a rubber spatula to scrape down the sides and bottom of the bowl and make sure the dough is evenly mixed.
- Roll the dough into about thirty-two 1-inch balls, making them as smooth and even as you can, and place on the prepared baking sheet. Use the back of a round teaspoon measuring spoon to flatten the cookies and make an indentation in the center of each ball (rearrange the cookies as necessary so that they fit; they don't spread out too much, so about 1/2 inch of space between them is sufficient). If making the indentation causes a large crack, repair the crack with your fingers or re-roll the cookie and try again. Refrigerate the cookies until firm, about 15 minutes.
- Bake the cookies until the undersides are light golden brown and the tops puffed and set, about 11 minutes. Remove the cookies and use the teaspoon measuring spoon to re-make the indentations that have puffed up during baking. Bake the cookies for 1 minute more, then cool on the baking sheet.
- For the chocolate filling: Put the chocolate chips in a medium microwave-safe bowl. Put the cream, butter and corn syrup in a small microwave-safe bowl and microwave until steaming hot. Pour the hot cream mixture over the chocolate chips and let stand 5 minutes, then stir the mixture with a rubber spatula until smooth. If the chocolate chips do not completely melt, microwave in 15-second intervals, stirring after each interval, until melted and smooth.
- Spoon about 1 teaspoon of chocolate into the well of each cookie, then lightly press a toasted walnut half into each. Let stand until the chocolate sets.

- Preheat oven to 350.
- Combine flour, ground almonds, baking powder, and salt in a mixing bowl.
- In a separate bowl, mix oil, juice, syrup, and extract together.
- Add wet ingredients to dry and mix well.
- Use a tablespoon to scoop dough and form into balls.
- Flatten into circles and place on a parchment-lined baking sheet.
- Indent each cookie with your thumb and fill with 1/2 teaspoon of the raspberry preserves.

- Before starting, keep in mind that these are slightly softer than regular cookies. They are vegan, gluten-free cookies made with almond flour, so they have a strong almond flavor.
- In a medium-size mixing bowl, add all the dry ingredients: almond flour, Matcha powder, baking powder, and salt if used.
- Combine the ingredients with a spatula first, then stir in the wet ingredients: melted coconut oil and maple syrup until it forms a sticky green dough. - Adjust the oven rack to the middle position, pre-heat the oven to 355ºF (180ºC) and line two large baking sheets with baking/greaseproof paper.
- In a large bowl, mix together the oil, sugar, non-dairy milk and Nature's Charm Matcha Sauce, until combined. At this point, you can also add the green food colouring (optional).
- Add the flour, almond flour, baking powder and salt, and mix well until you get a smooth, soft cookie dough that shouldn't be sticky to the touch.
- Spoon out about 1 tablespoon worth of the cookie dough and roll it into a ball. Roll it in sprinkles (optional), then transfer it to the lined baking sheet. Repeat with the rest of the cookie dough to make a total of 24 cookies, you should be able to fit about 12 cookie dough balls per baking sheet.
