When a simple sundae just won't do, try Martha's individual ice cream bombes instead. Covered in a blanket of marshmallow-y torched meringue, these dome-shaped treats are made with a dacquoise base and a winning combination of vanilla ice cream and raspberry sorbet.

1/2 cup slivered almonds
1/2 cup confectioners' sugar
2 large egg whites
Pinch of kosher salt
1/4 cup superfine sugar
1 1/2 cups sorbet, such as raspberry
3 cups vanilla ice cream
6 large egg whites
1 1/2 cups granulated sugar

Steps:

  • Dacquoise: Preheat oven to 200 degrees. Use a pencil to trace six 3 1/2-inch-diameter circles on a piece of parchment. Turn over parchment and place on a rimmed baking sheet. Using a food processor, finely grind almonds. Transfer to a small bowl and whisk in confectioners' sugar. In a stand mixer fitted with the whisk attachment, beat together egg whites and salt until frothy. Continue beating on high speed while gradually adding superfine sugar until stiff peaks form, about 5 minutes. Remove bowl from mixer and gently fold almond mixture into meringue. Transfer to a piping bag fitted with a 1/2-inch plain round tip. Use a small amount of meringue to adhere prepared parchment to each corner of baking sheet. Pipe rounds of meringue using traced circles as a guide, starting at outer edge of each circle and moving toward center. Bake until firm and dry, 1 1/2 to 2 hours. Let cool completely on sheet.
  • Filling: Line six 4-inch bowls with plastic wrap and freeze until chilled, at least 20 minutes. Spread about 6 tablespoons sorbet into each bowl, pressing firmly into bottom to create a smooth surface and prevent air pockets. Freeze until solid, about 1 hour. Spread about 1/2 cup ice cream evenly over sorbet in each bowl, pressing firmly to create a smooth surface and prevent air pockets. Place one dacquoise round, top-side down, on ice cream, pressing gently to adhere. Wrap overhanging plastic over the top and freeze until solid, at least 4 hours and up to overnight.
  • Unwrap plastic on top of bowls (dip exterior of bowls in warm water to loosen, if necessary). Invert bowls onto a rimmed baking sheet, remove plastic wrap, and refreeze until ready to serve.
  • Meringue Topping: Just before serving, combine egg whites and sugar in the heatproof bowl of a stand mixer set over (not in) a pot of simmering water. Whisk until sugar is dissolved and mixture is warm to the touch. Transfer bowl to mixer fitted with the whisk attachment and beat until stiff, glossy peaks form, about 5 minutes. Transfer to a piping bag fitted with a 3/8-inch plain round tip (such as Ateco #804); decoratively pipe meringue over each bombe to cover. Lightly brown meringue all over with a small kitchen torch. Serve immediately.

4 cups or 2 pints good quality vanilla ice cream
2 egg yolks
1/4 cup sugar
1/3 cup raspberry puree
3 tablespoons raspberry-flavored liqueur
1/2 cup heavy cream
Special equipment: loaf pan

Steps:

  • Line a loaf pan with plastic wrap, fill three-quarter full with the ice cream, cover, and freeze until firm.
  • When hard, use a sharp knife and a soup spoon to dig a trench down the center of the ice cream, reserving the ice cream from the trench to make a top later. The trench should leave an inch of vanilla ice cream along with long ends of the pan and go 3/4 of the way down the pan. Refreeze.
  • Choose a large metal or glass bowl that will neatly sit on a pot on the stovetop. Put 1 to 2-inches water in the pot and bring to a simmer.
  • Meanwhile, beat the yolks and sugar together in the bowl (still on the countertop) with electric beaters until very thick and ribbony. Add the puree, and liqueur. Set the bowl over the pot of simmering water, and continue beating until very thick and much increased in volume, about 10 minutes. It should have the consistency of firmly whipped cream. Remove the bowl from the heat, and set it over a large bowl full of ice cubes. Continue beating until cool.
  • Whip the cream to soft peaks and fold it in. Remove the bombe mould from the freezer and pour the raspberry mixture into the well of vanilla ice cream. Cover and return to the freezer for several hours, or until completely set. Soften the reserved "trench" ice cream and spread it over the top to fill the pan to the brim. Freeze again.
  • To serve, uncover the loaf mold. Wrap a towel dampened in hot water around the base and hold it upside down. Shake out. Slice with a knife, dipped first in hot water. Refreeze in slice form until ready to serve. Raspberry coulis is the right accompaniment.

This impressive ice-cream dessert makes the most of summer fruit. This recipe calls for lining the entire mold with raspberries, which is best done when berries are in season, but this step can be skipped and berries used only on the inside.

2 large egg whites
1/2 cup sugar
Pinch cream of tartar
11 cups raspberries (about 9 pints)
1 pint plus 1 cup raspberry sorbet
2 pints vanilla ice cream
2 tablespoons sliced almonds (optional)

Steps:

  • Preheat oven to 200 degrees. Line a baking sheet with parchment; set aside. In the bowl of an electric mixer, combine egg whites, sugar, and cream of tartar. Set over a pan of simmering water; whisk constantly until sugar is dissolved and mixture is warm to the touch. Remove from heat; mix, using whisk attachment, on medium high, until stiff peaks form, about 10 minutes.
  • Transfer meringue to parchment-lined baking sheet; spread into a 5-inch-diameter disk that is 1/2 inch thick. Transfer to oven; let dry but not brown; this will take about 4 hours. Remove from oven; let cool. Remove from parchment, break into 2- to 4-inch shards, and set aside.
  • Meanwhile, line a 9-inch-diameter, 4- inch-deep metal bowl with raspberries. With open sides of berries facing wall of bowl, place raspberries neatly in bottom and up sides of bowl. Work up sides of the bowl as far as you can; if berries start to fall, add them later. Transfer the bowl to the freezer, and let berries completely freeze to the bowl, about 2 hours.
  • Beat 1 cup raspberry sorbet in the bowl of an electric mixer fitted with the paddle attachment until soft but still holding its shape, 1 to 2 minutes. Remove the mold from the freezer, and gently layer sorbet in bottom of bowl, smoothing it toward the edges with an offset spatula. Return mold to freezer until sorbet has hardened. Remove mold from freezer; cover the sorbet with a single layer of raspberries, about 1 1/2 cups. Return to freezer until berries are solid, about 20 minutes. Soften 1 pint vanilla ice cream as above. Remove mold from freezer; spread a layer of vanilla ice cream over frozen berries, making sure ice cream is spread all the way to the sides of the berry-lined bowl. Return mold to freezer, and let vanilla ice cream become firm, about 15 minutes.
  • Soften 1 pint raspberry sorbet as above; set aside. Remove mold from freezer; layer the meringue on top of the vanilla ice cream in a single layer; it is fine if some pieces overlap. On top of the meringue, spread the remaining cup of raspberry sorbet, making sure it touches berrylined edges of the bowl. Return mold to freezer. Continue process with one more single layer of raspberries, about 2 cups. Add remaining softened vanilla ice cream in an even layer. Add berries as needed to bowls lining so they completely encase the ice cream to top of bowl. Cover with plastic wrap; let bombe completely freeze overnight. Scatter sliced almonds, if using, over vanilla ice cream to keep from slipping when turned out. To unmold, dip bowl into very hot water for 7 seconds. Using some force, invert onto a cutting board. Transfer to serving platter. Working quickly, using a sharp knife, slice bombe into wedges; serve.

MILLIONAIRE'S ICE CREAM BOMBE

This spectacular Christmas showstopper is covered in crunchy Maltesers and makes for an enticing alternative pudding to end your festive feast

250g digestive biscuits
50g butter, melted
200g dulce de leche or Carnation caramel
200g chocolate ice cream (not soft-serve)
300g caramel or vanilla ice cream (not soft-serve)
4 x 121g bags Maltesers
150ml double cream
200g bar dark chocolate, finely chopped
holly, to decorate (optional)
icing sugar, to serve (optional)

Steps:

  • Line a 1.2-litre pudding bowl with a double layer of cling film, leaving plenty overhanging, and make a space for the bowl in the freezer. Put the biscuits in a food processor and blitz until they resemble fine crumbs. Add the butter and 2 tbsp caramel, and blend until well mixed. Save about 3 tbsp for the top and tip the rest into the lined pudding bowl. Use the back of a spoon to press evenly over the base and up the sides of the bowl. Freeze for 30 mins.
  • Remove the chocolate ice cream from the freezer and allow it to soften at room temperature for 10 mins. Remove the pudding bowl from the freezer too (the biscuits should be firm by now.) Spoon the ice cream into the biscuit- lined bowl, packing it into the base. Spoon over the remaining caramel, spreading it to the biscuit walls. Return to the freezer for 30 mins.
  • Remove the caramel ice cream and allow it to soften for 10 mins. Meanwhile, tip 75g Maltesers into a bowl and lighty crush with the end of a rolling pin, leaving some chunky bits. Add the ice cream to the bowl and stir through the Malteser pieces - work quickly so the ice cream doesn't melt too much. Remove the pudding bowl from the freezer and tip in the Malteser ice cream, spreading it to completely fill the bowl, then level the top. Scatter with the remaining biscuit crumbs. Return to the freezer for at least 4 hrs (or for up to 2 weeks).
  • Put the cream in a pan and heat until steaming hot but not boiling. Put the chocolate in a large bowl and pour over the cream. Leave to stand for 1-2 mins, then stir to make a smooth ganache. Set aside to cool until the sauce thickens to a spreadable consistency (you can speed this up by putting it in the fridge, but remember to stir it every 5-10 mins or it will set around the edges).
  • Remove the pudding bowl from the freezer. Turn it onto a plate and remove the bowl and cling film. Spread half the chocolate ganache all over the pudding and, as quickly as you can, stick the remaining Maltesers all over the surface - this is easiest if you start around the bottom and work your way up in layers. The chocolate ganache will start to set, so use a little more from the bowl to make the Maltesers stick. Once covered, return to the freezer for at least a further 4 hrs (or for up to 3 days), removing it 10 mins before serving. Top with a dusting of icing sugar and a sprig of holly, if you like.

This quick and easy dessert is the bomb dot com. Store-bought brownie mix meets vanilla ice cream and raspberry drizzle to form delectable frozen bites. Fill them with anything your heart desires, but we think vanilla and raspberry make a sweet power couple.

9 oz fudge brownie mix, baked according to package instructions in a 9 x 13-inch pan
¾ cup vanilla ice cream
3 large raspberries
10.5 oz chocolate frosting, melted
1 teaspoon cornstarch
3 tablespoons water, divided
1 cup raspberries
¼ cup sugar
1 tablespoon lemon juice

Steps:

  • Make the brownie bombs: Cut 3 8-inch (20 cm) squares of plastic wrap. Place the plastic wrap in the cups of a 6-cup jumbo muffin tin, alternating between rows so you have enough space to work.
  • With a 3½-inch (8.75 cm) cookie cutter, cut 6 circles out of the pan of brownies.
  • Place a brownie circle in each prepared muffin cups. Using an ice cream scoop, scoop ¼ cup (35 g) of vanilla ice cream in the center of each brownie circle. Push a raspberry into the center of the ice cream and top with the remaining brownie circles. Wrap the plastic wrap around the brownie bomb. Place the muffin tin in the freezer and allow the brownie bombs to set for at least 4 hours, or up to overnight.
  • Make the raspberry sauce: Add the raspberries, sugar, remaining 2 tablespoons of water, and the lemon juice to a small saucepan over medium-high heat and bring to a boil.
  • In a small bowl, mix together the cornstarch and 1 tablespoon of water until the cornstarch is dissolved.
  • Once the raspberry mixture is boiling, reduce the heat to low and add the cornstarch slurry. Stir until the sauce thickens, 2-3 minutes. Remove the pot from the heat and let the sauce cool.
  • Remove the brownie bombs from the freezer. Unwrap and place, domed side up, on a wire rack set over a baking sheet. Pour the melted chocolate frosting over the bombs, then place in the refrigerator to set, about 20 minutes.
  • Remove the bombs from the refrigerator and drizzle with the raspberry sauce. Serve immediately.

  • Soften the vanilla ice cream. Spread the ice cream inside the 3.5-quart metal bowl. Insert the 1.5-quart metal bowl into the ice cream, gently pressing in so that the rims of the bowls are level to one another. The ice cream will not reach the top of the rim; if needed, insert a small offset spatula between the bowls to smooth and even the edges. Cover with plastic wrap and freeze for about 4 hours or overnight.
  • Remove the plastic wrap and very carefully pour boiling water into the smaller bowl, taking care not to get any water on the ice cream. Let it sit for a couple of seconds, just until the ice cream melts enough to release the bowl. Carefully remove the small bowl.
  • Use a spatula to smooth out the ice cream core, then return to the freezer for about 1 hour, or until it is firm again.
  • Soften the raspberry sorbet. Fill the ice cream mold with the sorbet and use an offset spatula to smooth the top. Tap to remove air bubbles. Cover with plastic wrap and freeze for 4 hours or overnight.
