8 tablespoons unsalted butter, melted
2 ¼ teaspoons active dry yeast
5 cups all-purpose flour, divided
1 teaspoon baking powder
2 teaspoons kosher salt
¾ cup light brown sugar
12 tablespoons unsalted butter, softened
2 tablespoons ground cinnamon
4 oz cream cheese, softened and cubed
2 tablespoons unsalted butter, melted
4 tablespoons milk
1 teaspoon vanilla extract
1 cup powdered sugar

Steps:

  • Make the dough: In a large bowl, whisk together the warm milk, sugar, and melted butter. The mixture should be just warm, registering between 100-110˚F (37-43˚C). If any warmer, allow to cool slightly.
  • Sprinkle the yeast evenly over the milk mixture, stir, and let sit in a warm place for about 10 minutes until the yeast has bloomed.
  • Add 4 cups (500 g) of flour to the milk mixture and stir with a wooden spoon until just combined.
  • Cover the bowl with a kitchen towel or plastic wrap and let rise in a warm place for 1 hour, until nearly doubled in size.
  • Generously butter 2 9-inch (23 cm) round baking pans and set aside.
  • Make the filling: In a medium bowl, combine the brown sugar, butter, and cinnamon. Mix well, then set aside.
  • Remove the plastic wrap from the dough and add the remaining cup of flour, baking powder, and salt. Stir well, then turn out onto a clean surface. Leave a bit of flour nearby to use as needed, but try not to incorporate too much.
  • Knead the dough for at least 10 minutes, adding more flour as necessary, until the dough just loses its stickiness and does not stick to the surface or your hands. The dough should be very smooth and spring back when poked.
  • Roll the dough out into a large rectangle, about ½-inch (1 cm) thick. Fix the corners with a bench scraper or a spatula to make sure they are sharp and even.
  • Spread the filling evenly over the dough.

Cover with a towel and let rise in a warm place for 35-45 minutes, until expanded by about half of their original volume. If you're saving the cinnamon rolls for later, cover with plastic wrap and freeze for up 3 months.
  • Preheat the oven to 350˚F (180˚C).
  • Bake the cinnamon rolls for 25-30 minutes, until golden brown.
  • While the cinnamon rolls are baking, make the frosting: In a medium bowl, whisk together the cream cheese, melted butter, milk, and vanilla extract until smooth. Gradually add the powdered sugar and whisk until homogenous and runny.
  • When the cinnamon rolls are finished, let cool for about 10 minutes.
  • Drizzle the frosting over the cinnamon rolls, using the back of a spoon to spread if desired.

Steps:

  • Pour yeast evenly over the warm water and let it bloom for 5 minutes.

2 large eggs
1/2 cup granulated sugar
1/3 cup melted butter
4 cups flour, plus more for dusting
4 ounces cream cheese
1/3 cup melted butter
1/2 teaspoon cinnamon
1 cup granulated sugar
gel food coloring (red, orange, yellow, green, blue, purple)
2 cups confectioners' sugar
2 tablespoons butter, softened
1 teaspoon vanilla
1 tablespoon milk
rainbow candy sprinkles (nonpareils or round sprinkles prefered)

Steps:

  • Warm milk in microwave (should be warm like bath water). Dissolve yeast in milk and let rest 5 minutes or until frothy on top.
  • In a separate bowl, whisk together eggs, sugar and melted butter. Mix in yeast and milk mixture until combined.
  • Add flour to the bowl and stir until a ball of dough forms. Turn the dough out onto a lightly floured surface and knead the dough briefly until it is smooth and even. Form the dough into a ball, place in greased bowl, cover loosely and let rise for one hour or until it doubles in volume.
  • While your dough rises, make your filling:.
  • Stir together cream cheese, sugar, melted butter and cinnamon. Divide into 6 bowls and tint each one with a color of the rainbow: red, orange, yellow, green, blue, purple.
  • Preheat the oven to 400 degrees. Punch down the risen dough and transfer it to a lightly floured work surface. Using your hands, flatten, stretch and shape the dough into a rectangle. Use a rolling pin to roll out the dough until it is approximately 16 inches by 24 inches and about 1/4-inch thick.
  • Spread each rainbow filling across dough in separate stripes, length-wise, getting as close to the edges as possible. Then, starting with the long, red side of the rectangle, roll the dough up into a log.
  • Use a sharp knife or serrated bread knife to carefully (and without downward pressure, you don't want flat rolls!) slice the log into 12 equal portions. To help make each portion the same size, first cut the long in half, then quarters, then each quarter into three pieces.
  • Arrange the cinnamon rolls in a greased 9x9 inch casserole or pie plate.
  • Bake for 12-15 minutes or until puffy and golden. Let cool 10 minutes.
  • While cooling, make your glaze:.
  • Mix the confectioners' sugar, butter, and vanilla together. Adding half the milk to start, stir to make a thick glaze. Add a drop more of the milk at a time until you get a nice thick glaze.
  • Drizzle glaze immediately on cooled cinnamon rolls and top with an abundance of rainbow sprinkles. Glaze will harden as it cools.

1 box strawberry cake mix, batter prepared according to package instructions
1 cup vanilla buttercream frosting, divided
2 bags white chocolate chip, divided
1 drop red food coloring
1 tube pink gel icing
1 tablespoon coconut oil
6 oz rainbow sprinkles
24 colored paper straws, trimmed to preferred length

Steps:

  • Bake the strawberry cake in the pan of your choice according to the package instructions, then let cool completely.
  • Line a baking sheet with parchment paper.
  • Crumble the cake into a large bowl, then stir in the vanilla frosting, 2 tablespoons at a time, with your hands or a spoon, until the mixture holds together when pressed. You should need between ½ cup and ¾ cup of frosting, depending on the texture of the cake.
  • Using a small ice cream scoop or spoon, scoop out 1½ tablespoons of the cake mixture and roll into a tight ball. Place on the prepared baking sheet and repeat with the remaining cake mix; you should have 24 cake balls. Transfer to the freezer while you melt the white chocolate.
  • Add ¾ cup white chocolate chips to a medium microwave-safe bowl. Melt in the microwave in 30-second intervals, stirring between, until smooth.
  • Dip about ¼ inch of one end of a straw in the melted white chocolate, then gently insert into the center of a cake ball, about halfway through the ball. Return the ball, straw-side up, to the baking sheet. Repeat with the remaining cake balls, then return to the freezer for at least 45 minutes, or until the balls are thoroughly chilled and firm.
  • Line another small baking sheet with parchment paper.
  • Mix 1-3 drops of red food coloring, 1 drop at a time, into the remaining melted white chocolate until it is the desired shade of pink. Transfer the pink chocolate to a small piping bag with a very small round tip.
  • Pipe the pink chocolate onto the prepared baking sheet in 24 1-inch-wide bow shapes, using a toothpick to smooth out the edges and fill any gaps. Freeze for 10 minutes, until set. Remove from the freezer and squeeze a small dot of pink gel icing onto the center of each bow, then return to the freezer until ready to use.
  • Add the remaining white chocolate chips and the coconut oil to a medium microwave-safe bowl. Melt in the microwave in 30-second intervals, stirring between, until smooth.
  • Working one at a time, remove the cake pops from the freezer. Dip the pop in the melted white chocolate until completely coated, using a spoon as needed to help cover the top. Use the straw to spin the pop over the bowl to remove any excess chocolate, then sprinkle with rainbow sprinkles. Place the pop, straw up, back on the baking sheet in the freezer. Repeat with the remaining pops, then freeze for 10 minutes more, until the chocolate is set.
  • Using the remaining vanilla frosting, place a small dot of frosting on the back of each pink chocolate bow, then press onto the top corner of each cake pop.
  • Refrigerate the pops until ready to serve.
