I make this very simple stew in the summer, when good tomatoes and green beans are available. It's best made in advance and reheated to allow the flavors to blend. Serve with bread or over rice. From food52.com

2 lbs stewing beef, cut into 2 ", cubes
1 lb fresh tomatoes or 1 (14 ounce) can diced tomatoes with juice
1 lb green beans, cleaned and cut into 2 ", pieces
2 garlic cloves
2 teaspoons ground cumin
2 teaspoons ground coriander
salt and pepper

Steps:

  • Lightly salt and pepper the beef then place it in a covered skillet, add water to just cover the meat.
  • Bring to a boil over medium heat, lower the heat and simmer for about an hour.
  • Remove the beef from the heat, reserve 1 cup of the broth, discard the rest.
  • Roughly chop the tomatoes and the garlic then whirl them in a food processor with the reserved broth until you have fairly smooth sauce.
  • Add the sauce, the beans, the cumin and coriander to the pot with the meat and simmer for about another hour, until the beef is tender. Adjust salt and pepper to taste.

I assembled all the ingredients in the morning and allowed all to simmer for an hour before heading out to a cold football game. Just reheated when we arrived home and it really hit the spot. Great for dunking italian bread or hard rolls in. Stick to your ribs goodness.

2 lbs chuck steaks (bone in)
2 tablespoons flour
3 tablespoons oil
2 large onions (diced)
5 celery ribs (sliced)
1 (28 ounce) package frozen hash brown potatoes
1 (12 ounce) package frozen green beans
1 (16 ounce) package frozen sliced carrots
3 garlic cloves (minced)
1 (28 ounce) can crushed tomatoes, 1/2 of the can of water
1 tablespoon beef base
1 (12 ounce) jar beef gravy
3 bay leaves
1 tablespoon seasoning salt
2 teaspoons celery salt
pepper (optional)

Steps:

  • Slice the steak pieces into one inch cubes. Toss in a ziplock bag with the flour, salt/pepper.
  • Heat oil in large pot or dutch oven over medium heat. Add onions, celery and steak pieces. Cook until steak is browned.
  • Add garlic, tomatoes, water, beef base, bay leaves and all seasonings.
  • Bring to boil. Lower heat and simmer covered for 1 hour.
  • Add gravy and frozen potatoes, carrots and green beans and cook uncovered for 1/2 hour.
  • We serve this over a bowl of noodles.

2 tablespoons flour
1 teaspoon ground cumin
1/2 teaspoon salt
1/4 teaspoon ground dried ancho chile powder
1 1/2 lbs beef stew meat, cut into 2-inch cubes
1 onion, chopped
1 green pepper, seeded and diced
1 (12 ounce) bottle beer
1 (14 1/2 ounce) can diced tomatoes
1 (11 ounce) can mexicorn
2 tablespoons chopped cilantro
1 tablespoon lime juice

Steps:

  • Mix flour, 1/4 t. cumin, 1/4 t. salt and chile powder; toss with beef.
  • Coat large pot with cooking spray. Heat over medium-high heat. Add beef; cook, turning until browned. Remove meat from pot.
  • To same pot, add onion and green pepper. Cook, stirring, 2 minutes. Stir in beer, scraping up bits from pan bottom. Stir in tomatoes with juice and remaining cumin. Return meat to pot. Cover; cook over low heat, stirring occasionally, 1 hour, 30 minutes.
  • Add corn; cook, uncovered, until beef is tender and sauce has thickened, 30-45 minutes. Remove from heat; stir in cilantro, lime juce and remaining 1/4 t. salt. Garnish with cilantro.

1 lb lean stewing beef (1 inch cubes)
1/2 cup seasoned flour, seasoned with your favorite seasonings
3 tablespoons extra virgin olive oil
1 tablespoon dry mustard
1 large Spanish onion, sliced
1 whole bulb of garlic, peeled, separated and coarsely chopped
2 cups port wine (or any good red wine)
12 whole baby carrots, peeled
1 rutabaga, peeled, cut into large cubes
1/2 head celery, cut into 1 inch lengths with leaves
6 -8 large mushrooms, quartered
2 dashes cayenne pepper
1 teaspoon dried thyme
2 dashes Worcestershire sauce
2 tablespoons creamed horseradish
salt
1 1/2-2 cups water
4 -6 medium scrubbed do not peel quartered white potatoes

Steps:

  • Dredge beef in flour, seasoned with your favorite seasonings.
  • Heat large Dutch oven (cast iron is best).
  • Whisk together olive oil and dry mustard, add to heated Dutch oven.
  • Add Spanish onion and caramelize.
  • Add dredged beef, brown on all sides.
  • Add garlic, brown, being careful not to burn.
  • Add wine, deglaze the pot and simmer 10 minutes.
  • Add carrots, rutabaga, celery, mushrooms, cayenne, thyme, Worcestershire sauce, horseradish Salt to taste.
  • Stir and simmer another 10 minutes.
  • Add water and potatoes.
  • Stir and bring back to simmer.
  • Preheat oven to 300°F.
  • Cover tightly and slow simmer until potatoes are fork tender, about 2 hours.

1 (17.5 ounce) package lamb neck
1 tablespoon butter
½ cup chopped onion
4 cloves garlic, chopped
3 cups water
1 ½ cups tomato sauce
1 teaspoon salt
½ teaspoon ground allspice
¼ teaspoon ground black pepper
1 pound green beans
2 potatoes (or to taste), thinly sliced

Steps:

  • Melt butter in a large skillet over medium heat; cook and stir lamb neck bones in hot butter until browned, 7 to 10 minutes. Add onion and garlic; cook and stir until browned, 7 to 10 minutes.
  • Stir water, tomato sauce, salt, allspice, and pepper together in a small bowl; pour into the skillet and bring to a boil. Reduce heat to medium-low, place a cover on the skillet, and cook until the meat pulls away from the neck bones, about 45 minutes.
  • Put green beans and potatoes into the skillet so they are in liquid, replace cover, and continue cooking until the beans are tender and the potatoes are cooked through, about 15 minutes. Remove and discard bones before serving.

1/2 lb fresh green beans
175 g plain yogurt (a little over half a cup)
1/4 cup feta cheese, crumbled (I used Greek herbed)
1/4 cup parmesan cheese, shredded
1/2 teaspoon cracked pepper
2 medium tomatoes, sliced
5 -6 kalamata olives, pits removed & rough chopped, more if you wish

Steps:

  • Steam the green beans for about 5 minutes or until tender crisp. I like to leave them whole but they can be used cut in one inch lengths; set aside.
  • In a small bowl mix together yogurt, feta cheese, parmesan cheese & pepper.
  • Taste and adjust seasoning; do not salt, the cheese & olives are quite salty; set aside.
  • In a small casserole or au gratin dish, layer green beans and tomato slices, starting with green beans, as you go cover each tomato layer with a thin coat of the yogurt mixture. Finish the layers with the yogurt mixture. Scatter the chopped olives over all.
  • The dish can be served cold as a salad at this point or if you prefer a hot side dish bake in 400°F oven for approximately 20 minutes until heated through, either way it is delicious.
