GRILLED ZUCCHINI ROLLS WITH HERBS AND CHEESE
Steps:
- Discard the outermost slices of zucchini and brush the rest of the slices with the oil on both sides. Season with salt and pepper. Place on a preheated grill or grill pan for about 4 minutes on each side, or until tender.
- In a small bowl combine the goat cheese, parsley leaves and lemon juice, mashing with a fork.
- Put 1/2 teaspoon of the cheese mixture about 1/2-inch from the end of a zucchini slice. Top with a few spinach leaves and 1 small, or half of a large basil leaf. Roll up and place seam side down on a platter. Repeat with the rest of the zucchini slices.
ELLIE'S HERBED GRILLED ZUCCHINI SLICES
I made Ellie's seasoning blend and starting putting it into whatever I was making. This is one of the dishes. This is full of flavor. I made it with zucchini but this would also be great made with mushrooms, peppers, onions slices....

KITTENCAL'S GRILLED ZUCCHINI
This is an easy yet tasty recipe for zucchini, I make it often especially when I have my summer's crop ready, I find that a good quality Italian dressing will really make the difference, you can slice the zucchini in slices lengthwise also if desired, pick a large thick zucchini for this --- servings is only estimated.

Steps:
- Slice the zucchini into 1/2 to 3/4-inch slices (or as desired).
- In a large bowl whisk together the salad dressing with olive oil and minced garlic.
- Place the zucchini slices in the bowl and toss to coat.
- Place on a plate, then sprinkle with freshly ground black pepper.
- Allow to sit at room temperature for 10 minutes.
- Place onto a hot grill.
- Grill for about 4-5 minutes or until nice grill marks appear and the slices are slightly limp.
- Remove to a plate then sprinkle lightly with kosher or table salt.

- Peel and cut up zucchini and onion into bite size pieces.
- Pour olive oil into frying pan and heat on medium to high.
- After pan is heated, add the zucchini, onion, sesame seeds, soy sauce, butter, salt, and pepper.

DILLED ZUCCHINI SLICES
This is from a collection of Sheryl Arnolds recipes. Sheryl was not just a good cook, she had her own catering business and owned The Lunch Bucket, a popular Restaraunt here in the Sacramento Area back in the day. I use my mandolin to slice the zucchini, which makes short work of slicing them. The cooking time includes curing time.

Steps:
- Wash zucchini and cut into thin lengthwise slices.
- Cover with 1 inch water and 1/4 cup salt.
- Let stand for 2 hours.
- Drain thoroughly.
- Place celery seeds, and mustard seeds in a spice bag.
- Add spice bag to the water, vinegar, sugar and remaining 1/4 cup salt.
- Bring mixture to a boil.
- Pour hot brine over zucchini slices and allow to stand for 2 hours.
- Bring all ingredients to boiling point and cook for 5 minutes.
- Place zucchini slices and brine into 4 clean and hot pint jars, leaving 1/4 inch head space. To each jar add 1 head dill, 1/4 tsp cayenne, and 1 clove garlic. Seal.
- Process for 10 minutes in a boiling water bath.
CORN DOG BATTER
I came up with this batter by combining the best parts of several recipes to perfect a corn dog batter. It's great for zucchini slices, too! I live alone and the beauty of this batter is you don't have to use it all at once... leftover batter will last another day or two in the fridge. Please don't fry at more than 350° because the corn meal will burn before the veggies/corn dog pieces are cooked. .

- Combine all ingredients (except the 1/2 cup of flour used for dredging) in a mixing bowl and whisk until smooth. Let set for about five minutes. Add another Tbsp or two of milk if you need to thin it a little
- These make the cutest little corn "puppies" or corn "McNuggets" Cut as many frankfurters into four equal segments as you will need for however many people you are cooking for. Stick a toothpick into each of them, dip in batter, and fry. Leave the toothpick in -- it's cute. Or, if making full length dogs, pour batter in a tall glass and dip your weiner in it.
- Drain on paper towels or newsprint and serve with mustard or ketchup or whatever condiments you want.
- *TIPS --.
- Remember -- this batter can be saved for a day or two so no need to use it all at once. If reusing batter from fridge take it out long enough for it to be room temperature. You might need to add a TBSP or two of water to loosen it back up to the right consistency.

We have an overabundance of zucchini in the garden and I'm sick of baking bread! This is a quick and easy recipe for a snack, side dish, or to just use up the zucchini!

- Slice the zucchini into thin slices.
- Put the flour on one plate and the breadcrumbs on another plate.
- Mix the milk and egg together in a bowl.
- Coat zucchini slices with flour on both sides.
- Dip into the egg/milk mixture and coat on both sides.
- Thickly coat the slices with breadcrumbs on both sides.
- Heat the oil in a large skillet.
- Fry the slices in the oil, flip them over and fry on both sides until golden brown.
- Enjoy!
