Steps:
- Whisk together the vinegar, peanut butter, ginger, chipotle pepper puree, soy sauce, honey, sesame oil, and canola oil in a medium bowl. Season with salt and pepper, to taste. Combine cabbage, lettuce, carrots, snow peas, cilantro, and green onion in a large bowl. Add the dressing and toss to combine.
- Transfer to a serving platter and top with the shredded chicken, chopped peanuts, and mint. Drizzle with chili oil, if desired. Garnish with grilled lime halves.

Steps:
- Cook bacon in a dry medium skillet over medium heat, turning slices occasionally, until brown and crisp, 5-8 minutes. Transfer to paper towels; let cool.
- Cook ginger in a small saucepan of boiling water 1 minute. Drain ginger and rinse under cold water; set aside.
- Whisk soy sauce, tahini, miso, fish sauce, sesame oil, sugar, and 2 Tbsp. lemon juice in a small bowl until smooth.
- Whisk egg yolk and remaining 2 Tbsp. lemon juice in a medium bowl to combine. Very gradually stream in 1/2 cup vegetable oil (almost drop by drop), whisking constantly until mayonnaise is emulsified and thick. Still whisking constantly, gradually add soy sauce mixture, then remaining 1/4 cup oil. Thin dressing with a tablespoon or two of water if needed; you want it to be the consistency of heavy cream. Season with salt and pepper.
- Toss chicken and 1/2 cup dressing in a large bowl to coat. Add lettuce and another 1/2 cup dressing and toss again; season with salt and pepper. Crumble bacon over.
- Transfer salad to a serving bowl or platter and drizzle another tablespoon or so of dressing over salad (you may have some left over). Top with scallions, sesame seeds, and reserved ginger.
- Do Ahead
- Dressing can be made 1 day ahead. Cover and chill.

- Cook pasta al dente. Drain and rinse with cold water. Toss with olive oil.
- While the pasta is cooking, season and cook the chicken.Slice the chicken breasts horizontally into thin halves. Mix chili powder, paprika, garlic powder, lemon juice and salt. Rub the chicken with the spice mix. Keep it aside for 10 minutes.
- Heat oil in a non-stick pan and sear the chicken breasts on medium-high heat. Cook covered for 3 to 4 minutes on one side, flip and cook the other side for 3 minutes. (note 2)
- Remove from heat and let it cool. Chop into bite-sized pieces.
- Blend all the listed ingredients for the dressing and blend until smooth.
- Mix the vegetables, chicken and pasta in a large salad bowl. Drizzle half of the yogurt dressing and toss everything together.
- Add the remaining dressing and toss again. Garnish with green onions. Serve immediately or refrigerate and serve chilled. (note 3)

- Cook pasta: Bring a large pot of water to the boil. Add salt, then cook pasta per packet directions. Drain well, let cool.
- Dressing: Mix Dressing ingredients in a bowl. Set aside 10 minutes+.
- Cook bacon: Place bacon in a cold non-stick skillet (Note X). Turn stove on to medium high, then cook bacon until golden. Drain on paper towels.

- 1. Combine ingredients in blender. Mix well (don't over blend - it will get really thick because of the sesame seeds). Pour over salad (but, I usually keep it to the side so that everyone can put as much or as little on their salad as they want.) Refrigerate unused dressing.
- 2. Salad Suggestions: • Lettuce - I like to use romaine but you can use anything you want. To make it more 'oriental' you may want to add a bag of pre-packaged cabbage mix or bean sprouts. • Carrots - julienne - I use prepackaged sliced carrots to save time. Cut the carrots into julienne slices and soak it in iced water to help perk them up and add a bit more crunch to them. If you don't like carrots, consider red, orange and/or yellow bell peppers. • Cooked chicken/fish/turkey - I use a fork to flake store-bought (like Costco/Sam's Club/Safeway Rotisserie or Hawaiian Huli Huli Chicken. I also use leftover turkey after Thanksgiving. Or if you don't like poultry, we also love pan fried salt and peppered fish filets - cooled and cubed. • Char Siu (Chinese sweet pork) - sliced in strips (optional) • Crunchy Won ton chip strips • Cashews or Peanuts - Place the quantity that you want to use in a Ziplock bag, seal it and gently use a meat tenderizing hammer (or a regular hammer) to break it into smaller pieces. This saves time chopping. • Chinese parsley, Green onion - chopped - I usually put this to the side and let everyone add their own if they want it. You may also want to consider adding something sweet like: • Fresh fruit - Very thin slices of apple/pear, cubes of papaya/mango • Dried fruit - Raisins (1 tiny box per serving), cranberries and/or blueberries
