1 (18 ounce) box German chocolate cake mix
1 1/4 cups water (or as called for by cake directions)
1/3 cup oil (or as called for by cake directions)
3 large eggs (or as called for by cake directions)
1 (8 ounce) package cream cheese (softened)
1/2 cup butter, melted (or margarine)
1 lb confectioners' sugar (3 1/2 to 4 cups)

Steps:

  • Preheat oven to 350°. Grease and flour a 13 x 9 inch pan.
  • Spread coconut evenly on bottom of pan. Sprinkle with pecans.
  • Prepare cake mix according to directions on box. Pour over coconut and pecans.
  • Combine cream cheese and melted butter in a medium mixing bowl. Beat at low speed with electric mixer until creamy. Add sugar; beat until blended and smooth.
  • Drop by spoonfuls evenly over cake batter. Bake 45 to 50 minutes or until a toothpick inserted halfway to bottom of cake comes out clean.
  • Cool completely in pan. To serve, cut into individual pieces; turn upside down onto plate.

4 (1 ounce) squares German sweet chocolate
½ cup water
2 cups all-purpose flour
1 teaspoon baking soda
¼ teaspoon salt
1 cup butter, softened
2 cups white sugar
4 egg yolks
1 teaspoon vanilla extract
1 cup buttermilk
4 egg whites
12 fluid ounces evaporated milk
1 ½ cups white sugar
¾ cup butter
4 egg yolks
1 ½ teaspoons vanilla extract
1 (8 ounce) package flaked coconut

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Line bottom of 9x13 pan with parchment paper.
  • Microwave chocolate and water on high for 1 1/2 to 2 minutes. Stir halfway through. Stir until all is melted and smooth.
  • In a medium bowl, mix together flour, soda and salt. Set aside.
  • In a large bowl, cream 1 cup butter and 2 cups sugar until light and fluffy. Add 4 egg yolks one at a time, beating well after each addition. Stir in chocolate and 1 teaspoon vanilla. Add flour mixture alternately with buttermilk. Beat after each addition until smooth.
  • In a separate bowl, beat egg whites on high until soft peaks form. Gently fold into batter. Pour into 9x13 inch pan.
  • Bake at 350 degrees F (175 degrees C) for 30 minutes, or until toothpick inserted into center of cake comes out clean. Cool completely, then frost with coconut-pecan frosting.
  • Combine milk, 1 1/2 cup sugar, 3/4 cup butter, 4 egg yolks and 1 1/2 teaspoons vanilla in large saucepan. Cook and stir on medium heat for about 12 minutes, or until thick and golden brown. Remove from heat. Stir in coconut and pecans. Cool to room temperature, and spreading consistency.

1 cup sweetened flaked coconut
1 cup pecans, finely chopped
3 1/2 cups powdered sugar
1 cup margarine, melted
8 ounces cream cheese, softened
1 (18 ounce) box German chocolate cake mix (with pudding)
1 1/4 cups water
1/3 cup oil
3 eggs

Steps:

  • Preheat oven to 375°F Grease and flour 13x9 inch pan. Sprinkle coconut and pecans evenly over the bottom of the pan and set aside.
  • In a large mixing bowl, mix cake mix, water, oil and eggs as directed on the box. Carefully pour batter over coconut and pecans in prepared pan.
  • Mix melted margarine, cream cheese and powdered sugar in large bowl on low speed for 30 seconds, or until well mixed. Increase mixer speed to medium and beat 30 seconds more, or until smooth.
  • Spoon cream cheese over batter, leaving a 1 inch border of batter around the sides of the pan, and smooth with spatula.
  • Bake for 43-48 minutes, or until the cream cheese mixture has turned golden brown and the cake springs back when touched lightly.
  • Remove from oven and set cool for 20 minutes. Run a sharp knife around the edge of the cake and invert it onto serving platter. Let rest for 20 minutes more, then slice and serve.

This is my grandmother's recipe for a traditional German 'Ottilienkuchen' - a cake made with almond flour and chocolate sprinkles. She used to bake it in a loaf pan and it was a favorite in our house.

1 cup unsalted butter, at room temperature
2 tablespoons unsalted butter, at room temperature
¾ cup white sugar
2 teaspoons vanilla sugar
4 large eggs, at room temperature
1 tablespoon rum
1 pinch salt
1 ¾ cups all-purpose flour
¼ cup cornstarch
1 teaspoon baking powder
¾ cup blanched almond flour
⅓ cup chocolate sprinkles, or as desired

Steps:

  • Preheat the oven to 355 degrees F (180 degrees C). Grease a loaf pan.
  • Combine butter, sugar, and vanilla sugar in a bowl and beat with an electric mixer until creamy. Add eggs, 1 at a time, beating well after each addition. Mix in rum.
  • Combine flour, cornstarch, baking powder, and salt in a separate bowl and sift. Add flour mixture to the batter, 1 tablespoon at a time. Mix in almonds and chocolate sprinkles. Pour batter into the prepared baking pan.
  • Bake in the preheated oven until a toothpick comes out clean, about 1 hour. Turn off oven and leave cake in the warm oven for 10 more minutes.
  • Remove from oven and carefully unmold onto a wire rack. Cool completely.
  • Bake till a tester comes out clean, about 60 minutes. Turn off the oven and leave cake in the oven for a further 10 minutes. Gently unmold onto a wire rack and let cool.

1 (18 1/4-ounce) package German Chocolate Cake Mix
(3 eggs and 1/2 cup vegetable oil, for the cake)
1 (12-ounce) can evaporated milk
1 1/2 cups sugar
3 eggs
4 tablespoons (1/2 stick) unsalted butter
1 bag sweetened coconut flakes
1 cup chopped walnuts

Steps:

  • Bake the cake according to package instructions using the eggs and vegetable oil for the cake.
  • While the cake is baking, make the caramel sauce. In a saucepan, whisk together the evaporated milk, sugar and eggs. Add the butter and put the pan over medium heat. Cook, stirring constantly, until the mixture thickens and just starts to bubble, about 10 to 12 minutes. Remove from the heat and cool completely. This can be made a day ahead and refrigerated once cooled. Bring to room temperature when you are ready to use it.
  • To assemble the trifle in a large trifle bowl: Cut the cake into 1 1/2-inch cubes. Make a layer in the bottom of the dish with 1/3 of the cubes. Drizzle with some of the caramel sauce, enough to moisten the cake but not cover it completely. Sprinkle with 1/3 of the coconut and 1/3 of the nuts. Repeat twice more adding a little extra drizzle of caramel over the final coconut and nuts. (Any extra caramel sauce can be used as a topping for ice cream or pound cake.) Serve immediately or refrigerate until you are ready to serve.
  • Cook's Note: the trifle can also be assembled in individual wine glasses or large tumblers.

6 ounces Baker's German's chocolate, chopped
2 1/4 cups all-purpose flour
1 1/2 teaspoons baking powder

1 cup buttermilk
1 cup semi-sweet chocolate chips
1 (12 ounce) can evaporated milk

5 large egg yolks

1 (7 ounce) package sweetened flaked coconut
1 1/2 cups coarsely chopped pecans

Steps:

  • Make Cake: Preheat oven to 350°F.
  • Butter a 13 x 9-inch glass baking dish.
  • Bring water to a simmer in small saucepan.
  • Reduce heat to low.
  • Add chopped chocolate; whisk until smooth.
  • Cool.
  • Sift flour, baking powder and salt into medium bowl.
  • Using elelctric mixer, beat sugar and butter in large bowl until blended.
  • Beat in yolks one at a time.
  • Beat in cooled chocolate mixture and vanilla.
  • Beat in dry ingredients alternately with buttermilk.
  • Using clean, dry beaters, beat whites in another bowl until stiff but not dry.
  • Fold into batter in 2 additions.
  • Pour batter into prepared dish.
  • Sprinkle with chocolate chips.
  • Bake until tester inserted into center comes out clean, about 55-60 minutes.
  • Cool cake in pan on rack.
  • Make Frosting: Combine first 5 ingredients in heavy saucepan.
  • Whisk over medium-high heat until mixture simmers, thickens and leaves path on back of spoon when finger is drawn across, about 18 minutes.
  • Mix in coconut and pecans.
  • Spread warm frosting over cake.
  • Immediately sprinkle 1/4 cup chocolate chips over.
  • Let stand until frosting sets, about 2 hours.
  • Cut cake into squares and serve.

I recently made this for a co-worker's birthday and it is out of this world. The cake layers are nice and chocolatey..not too dense. The German chocolate filling is amazing and the frosting is super easy to work with as long as you cool everything completely. I toasted the nuts along with the coconut for a little extra nutty oomph.

1/2 cup unsweetened dutch cocoa, plus

3/4 teaspoon baking powder
3/4 teaspoon baking soda
3/4 teaspoon salt
3/4 cup whole milk
6 tablespoons unsalted butter, melted
1 large egg
1 large egg yolk
3/4 teaspoon vanilla
1/8 teaspoon almond extract
3/4 cup boiling-hot water
7 ounces sweetened flaked coconut
4 ounces coarsely chopped pecans (1 cup)
14 ounces sweetened condensed milk
1 tablespoon vanilla
1 1/4 cups unsalted butter
10 ounces good quality semisweet chocolate, finely chopped
3 tablespoons light corn syrup

Steps:

  • Make cake layers:
  • Preheat oven to 350°F and oil 3 9 inch cake pans. Line bottoms of pans with rounds of parchment or wax paper. Sift together sugar, flour, cocoa powder, baking powder, baking soda, and salt into a large bowl. Whisk together whole milk, butter, whole egg, yolk, vanilla, and almond extract in another large bowl until just combined. Beat egg mixture into flour mixture with an electric mixer on low speed, then beat on high speed 1 minute. Reduce speed to low and beat in water until just combined (batter will be thin). Divide batter among cake pans (about 1 1/2 cups per pan) and bake in upper and lower thirds of oven, switching position of pans and rotating them 180 degrees halfway through baking, until a tester comes out clean, 20 to 25 minutes total.
  • Cool layers in pans on racks 15 minutes. Run a thin knife around edges of pans and invert layers onto racks. Carefully remove parchment or wax paper and cool layers completely.
  • Make filling:
  • Reduce oven temperature to 325°F
  • Spread coconut in a large shallow baking pan and pecans in another. Bake pecans in upper third of oven and coconut in lower third, stirring occasionally, until golden, 12 to 18 minutes. Remove pans from oven.
  • Increase oven temperature to 425°F
  • Pour condensed milk into a 9-inch deep-dish pie plate and cover tightly with foil. Bake milk in a water bath in middle of oven 45 minutes. Refill baking pan with water to reach halfway up pie plate and bake milk until thick and brown, about 45 minutes more. Remove pie plate from water bath.
  • Stir in coconut, pecans, and vanilla and keep warm, covered with foil.
  • Make glaze while milk is baking:
  • Melt butter in a 3-quart saucepan. Remove pan from heat and add chocolate and corn syrup, whisking until chocolate is melted. Transfer 1 cup glaze to a bowl, reserving remaining glaze at room temperature in pan. Chill glaze in bowl, stirring occasionally, until thickened and spreadable, about 1 hour.
  • Assemble cake:
  • Put 1 cake layer on a rack set over a baking pan (to catch excess glaze). Drop half of coconut filling by spoonfuls evenly over layer and gently spread with a wet spatula. Top with another cake layer and spread with remaining filling in same manner. Top with remaining cake layer and spread chilled glaze evenly over top and side of cake. Heat reserved glaze in pan over low heat, stirring, until glossy and pourable, about 1 minute. Pour glaze evenly over top of cake, making sure it coats sides. Shake rack gently to smooth glaze.
  • Chill cake until firm, about 1 hour. Transfer cake to a plate.
  • Cooks' notes:
  • • Cake keeps, covered and chilled, 3 days. Bring to room temperature before serving.
  • • For easier handling when assembling cake, place bottom layer on a cardboard round or the removable bottom of a tart or cake pan.
