It's easy to make your own mulled cider. As well as fruit and spices, we've added extra apple brandy to our version of this delicious winter warmer

Number Of Ingredients 8

1½ l dry cider
7 tbsp Calvados
400ml apple juice
75g dark brown sugar
zest 1 orange, pared into strips
4 whole cloves
2 cinnamon sticks, broken in half
1 tbsp allspice berries

Steps:

  • Pour the cider, Calvados, apple juice and sugar into a large saucepan, and gently heat to mull.
  • Add the orange zest and spices, bring to a simmer, then turn down and keep on a low heat for 20-30 mins. Ladle into glass mugs to serve.

12 ounces apple cider
6 black peppercorns
2 pieces star anise
1 cinnamon stick
1/4 cup sugar
1/2 teaspoon allspice
1/2 teaspoon ground cinnamon, plus more for serving
1 lime wedge plus 4 lime wheels, for garnish
4 ounces mezcal
2 ounces lime juice
2 ounces orange liqueur, such as Grand Marnier
2 large egg whites

Steps:

  • Chill 4 large rocks glasses.
  • Bring the cider, peppercorns, star anise and cinnamon stick to a simmer in a saucepan. Cook for 5 minutes, then allow to steep for 30 minutes. Strain and allow to cool.
  • Combine the sugar, allspice and ground cinnamon on a small plate. Use the lime wedge to moisten the rim of the glasses, then dip in the spiced sugar mixture.
  • Working in 2 batches, in a shaker, combine half of the mezcal, lime juice, orange liqueur and egg white and 1 1/2 ounces of the chilled cider. Shake vigorously. Add ice and shake again. Strain into the rimmed glasses. Garnish each with a lime wheel and a dusting of ground cinnamon. Repeat with the second batch.

1 gallon apple cider
2 oranges (each cut into 4 wedges)
12 whole cloves
1 cardamom pod
4 cinnamon sticks (6 inch, cassia is ok)
1/8 teaspoon ground nutmeg (or a few blades of mace)
1 teaspoon allspice
1/4 cup brown sugar

Steps:

  • Pour the cider into a crock pot, up to about 2 inches from the top.
  • Drop in cardamom, nutmeg, allspice, brown sugar, and cinnamon.
  • Chop the oranges each into 4 wedges longitudinally.
  • Stick 3 cloves into the skin side of each orange wedge.
  • Put the cleaved and cloven oranges into the crock pot.
  • If there's room, add more cider to within an inch of the top.
  • Stir with a ladle.
  • Cover the crock pot with a folded towel and crank it up to "high.".
  • Allow to boil for at least an hour, then remove the towel and set to "low.".
  • (Optional) Serve with a shot of spiced rum in each mug.

2 quarts grape juice, red
2 cups orange juice
3 lemons, sliced
3 oranges, sliced
2 pieces candied ginger
1 cinnamon stick
4 whole cloves
2 cardamom pods
1 cup brandy

Steps:

  • Mix the cider, juices, lemons, and oranges in a large saucepan or Dutch oven.
  • Tie ginger and spices in a cheesecloth bag; add to saucepan.
  • Heat to boiling; reduce heat.
  • Simmer, uncovered, 15 minute
  • Remove spice bag.
  • Stir in brandy.
  • Serve warm in chafing dish or heat-proof punch bowl.
  • Serves 36 (1/2 cup each).

1 large lemon, cut in half
1 medium orange, cut in half
16 whole cloves
4 cups apple juice
3/4 cup honey
4 cinnamon sticks (2-inch each)
1/2 teaspoon ground ginger

Steps:

  • Cut two slices (1/4-inch thick) from each lemon and orange half.
  • Insert whole cloves into slices and set aside.
  • Squeeze juice from remainder of fruit halves into a medium saucepan.
  • Stir in apple juice and honey.
  • Mix well.
  • Add cinnamon sticks, ginger and clove/fruit slices.
  • Bring to a boil.
  • Reduce heat and simmer for about one hour over very low heat.
  • Strain if desired.
