Steps:
- Combine the cornstarch and flour in one bowl, then beat the eggs and 1/2 cup water in a second bowl. In a third bowl, combine the panko and seasoned breadcrumbs. Bread the shrimp by dipping them first in the flour mix, then the egg wash, then the breadcrumbs.
- Heat about 1/2 inch of oil in a nonstick skillet over medium heat to 350 degrees F.
- Fry the shrimp in batches until golden and crispy, approximately 2 minutes per side. Drain on a paper towel-lined plate and season with salt and pepper. Serve with Cocktail Sauce.
- Stir together the ketchup and horseradish in a bowl. Chill until ready to serve.

- Preheat cooking oil to 350 -375 degrees F.
- Peel and clean the shrimp, rinsing under cold running water.**this is when you can butterfly the shrimp if you like. Cut through the shrimp to open it up without completely cutting through the flesh.
- Place the shrimp in the prepared egg wash completely covering. Remove and allow to drain briefly.
- Place the egg-washed shrimp into the bread crumbs. Lightly pat bread crumbs onto the shrimp to completely coat.
- Fry the shrimp until golden brown. Depending upon your frying method this could be 2-4 minutes
- Allow shrimp to drain on a rack or paper towels before serving
- Serve with Cocktail and tartar sauce
- Mix all the ingredients together in a small bowl, and refrigerate until needed.

If you're a fan of fried shrimp, I've got your family covered! Light, crispy, and ... I just can't brag anymore. It's my Nan's recipe and I've never shared it. Please try it, I promise you won't be disappointed. I'd love to hear some comments. Please be easy on me, this is my first post, but I'm sure you'll be happy making these babies! They rock!

- Insert a knife 3/4 of the way below the head of 1 shrimp and cut down the center of the shrimp's back to the tail. Open shrimp with your fingers so it lies flat. Repeat with remaining shrimp.
- Pour flour onto a shallow plate. Whisk eggs and water together in a small bowl to make egg wash.
- Place saltine crackers in a large resealable bag. Crush into fine crumbs using a rolling pin. Pour crumbs onto a plate.
- Coat each shrimp with flour. Dip in egg wash; roll in cracker crumbs on both sides. Transfer to a large plate. Refrigerate shrimp for 2 hours.
- Heat 1 inch vegetable oil in a large skillet over medium-high heat. Cook shrimp until golden brown, 1 1/2 to 2 minutes per side. Drain on a paper-towel lined plate.

- Heat 2 to 3 inches oil to 365ºF in a deep fryer or heavy deep saucepan.
- Combine flour, salt, onion salt, pepper and garlic powder in shallow bowl. Beat eggs and water in separate shallow bowl. Place bread crumbs in another shallow bowl.
- Coat shrimp with flour mixture. Dip in egg mixture. Drain off excess. Coat lightly with crumbs.
- Fry shrimp, a few at a time, 2 to 3 minutes or until golden brown. Turn as needed for even browning. Drain on paper towels. Serve with lemon wedges and cocktail and/or tartar sauce if desired.

- Heat 3 inches of oil to 365 degrees in a Dutch oven.
- Place the shrimp in a medium bowl. Mix the milk and eggs in a glass measure with a fork until blended and pour over the shrimp. Toss the shrimp until coated and drain in a colander.
- Roll the shrimp in the cracker meal and shake off excess.
- Fry the shrimp till golden, turning as necessary, 1 to 2 minutes. Remove with a strainer or Chinese spider (also called a skimmer) and shake off the excess oil. Serve with tartar sauce, if desired.

- Peel, devein and wash shrimp.
- In a medium bowl beat eggs with a fork until well blended.
- Put shrimp in eggs and mix so all shrimp is coated with eggs.
- Put saltine crackers in plastic bag and crush with rolling pin.
- Don't roll them too fine.
- Heat oil in pan.
- Add shrimp to the cracker crumbs, a few at a time and coat well.
- Drop into hot oil and fry until golden brown.
- Remove and drain on paper towels.
- Do not over cook as this toughens the shrimp.
- The amount of crackers and eggs you use depends on the amount of shrimp you want to fry.
- The more shrimp, the more crackers and eggs.
- Preparation time also depends on the amount of shrimp you are frying.
