SLOW COOKER FRENCH ONION SOUP
This is a ridiculously easy soup, especially since it cooks in a slow cooker! When it's been simmering all day, you come home to an amazing aroma and a fabulous meal for a cold winter day.

- Heat butter in a large, heavy pot over medium-high heat; cook and stir onions until they become translucent, about 10 minutes. Sprinkle onions with sugar; reduce heat to medium. Cook, stirring constantly, until onions are soft and browned, at least 30 minutes. Stir in garlic and cook until fragrant, about 1 minute.
- Stir sherry into onion mixture and scrape bottom of pot to dissolve small bits of browned food from the pot. Transfer onions into a slow cooker and pour in beef broth. Season to taste with sea salt; stir in thyme and bay leaf. Cover cooker, set on High, and cook 4 to 6 hours. If desired, set on Low and cook 8 to 10 hours.
- About 10 minutes before serving, set oven rack about 8 inches from the heat source and preheat the oven's broiler. Arrange bread slices on a baking sheet.
- Broil bread slices until toasted, 1 to 2 minutes per side.
- Combine Gruyere, Emmental, Parmesan, and mozzarella cheeses in a bowl, tossing lightly. Fill oven-safe soup crocks 3/4 full of onion soup and float a bread slice in each bowl. Top with about 2 tablespoons of cheese mixture per serving.
- Place filled bowls onto a baking sheet and broil until cheese topping is lightly browned and bubbling, about 2 minutes.

- Heat your olive oil in a large frying pan over medium-low heat, add in your chopped onions and 3 Tbsp of chicken broth. Let onions cook for 45 minutes stirring often.
- When onions are close to being finished you can sear your chicken in a separate frying pan, season breasts with a little salt & pepper, use a little cooking spray and cook 5 minutes on each side over medium heat, set aside.
- Preheat oven to 350F
- When onions are cooked add in thyme and garlic. Add in flour and mix well. Stir in 1/2 cup of your chicken broth and cook for 5 minutes.
- Stir in remaining chicken broth, vinegar and mustard, bring to a boil, the sauce should thicken at this point.
- Place your chicken in a sprayed casserole dish, top with your onion mixture and bake for 20 minutes.
- Remove and add your shredded gouda cheese (can substitute for another cheese if you wish)
- Turn oven to broil and broil for 5 minutes until cheese is melted.
- Serve immediately, makes 4 servings. Can be frozen.

- Combine broth and potatoes. Cover and cook about 20 minutes, until potatoes are cooked through.
- As potatoes are cooking, saute onions then add to cooking potatoes.

- Heat the oil in a large dutch oven over medium heat. Add onions and salt; cook, first tossing with tongs, and when they begin to wilt, stirring occasionally with a spoon, until pale golden brown and very soft, about 35 minutes.
- Stir in the flour and cook, stirring occasionally, until the flour is lightly browned, about 2 minutes.
- Transfer the onions to a 5 or 6 quart slow cooker. Add thyme sprigs and pepper. Pour the broth over the onions. Cover and cook until the flavors are blended 4-5 hours on high or 8-10 hours on low. Discard thyme sprigs when done.

CROCKPOT POTATO SOUP FOR WEIGHT WATCHERS
I have not tried this yet, just got it from a friend who has been making it weekly and says it's easy and very filling, with 3 1/2 WW points per 1 cup serving. I can't guarantee that it's "Weight Watchers". It looks like a basic soup that other vegetables could be added to (such as broccoli or cauliflower) to add nutrients without adding a lot of calories. Note: after seeing the calorie and fat count on this, it doesn't look like a weight watchers' item! However, I'm keeping it on here for a filling, easy soup that I'd like to try.

- Peel and slice the onions into thin slices.
- In a medium skillet add the butter, sliced onions and brown sugar and saute the onions until they become translucent and caramelized.
- Add the cooked onions, Worcestershire sauce, beef broth, garlic, bay leaf and thyme to a 4 quart or larger slow cooker.
- Cover and cook for 4 to 5 hours on LOW.
- Add soup to ovenproof bowls and top with a slice or two of French bread.
- Add both Swiss cheese and Parmesan cheese to top of bread.
- Set the ovenproof bowls on a cookie sheet and place under the broiler for 1 to 2 minutes until the cheese is melted and bubbly.
