SLOW COOKER FRENCH ONION SOUP

This is a ridiculously easy soup, especially since it cooks in a slow cooker! When it's been simmering all day, you come home to an amazing aroma and a fabulous meal for a cold winter day.

6 tablespoons butter
4 large yellow onions, sliced and separated into rings
1 tablespoon white sugar
2 cloves garlic, minced
½ cup cooking sherry
7 cups reduced-sodium beef broth
1 teaspoon sea salt, or to taste
¼ teaspoon dried thyme
1 bay leaf
8 slices of French bread
½ cup shredded Gruyere cheese
⅓ cup shredded Emmental cheese
¼ cup freshly shredded Parmesan cheese
2 tablespoons shredded mozzarella cheese

Steps:

  • Heat butter in a large, heavy pot over medium-high heat; cook and stir onions until they become translucent, about 10 minutes. Sprinkle onions with sugar; reduce heat to medium. Cook, stirring constantly, until onions are soft and browned, at least 30 minutes. Stir in garlic and cook until fragrant, about 1 minute.
  • Stir sherry into onion mixture and scrape bottom of pot to dissolve small bits of browned food from the pot. Transfer onions into a slow cooker and pour in beef broth. Season to taste with sea salt; stir in thyme and bay leaf. Cover cooker, set on High, and cook 4 to 6 hours. If desired, set on Low and cook 8 to 10 hours.
  • About 10 minutes before serving, set oven rack about 8 inches from the heat source and preheat the oven's broiler. Arrange bread slices on a baking sheet.
  • Broil bread slices until toasted, 1 to 2 minutes per side.
  • Combine Gruyere, Emmental, Parmesan, and mozzarella cheeses in a bowl, tossing lightly. Fill oven-safe soup crocks 3/4 full of onion soup and float a bread slice in each bowl. Top with about 2 tablespoons of cheese mixture per serving.
  • Place filled bowls onto a baking sheet and broil until cheese topping is lightly browned and bubbling, about 2 minutes.

4 cups peeled and chopped onions (I used red onion because it's my favorite)
1 tsp olive oil
1 cup plus 3 Tbsp chicken broth
1 tsp thyme
2 cloves of garlic (diced)
1.5 Tbsp flour
1 Tbsp balsamic vinegar
1 Tbsp dijon mustard
4- 6 oz chicken breast (if following freestyle they can be larger)
2/3 cup light gouda shredded cheese (77 grams)

Steps:

  • Heat your olive oil in a large frying pan over medium-low heat, add in your chopped onions and 3 Tbsp of chicken broth. Let onions cook for 45 minutes stirring often.
  • When onions are close to being finished you can sear your chicken in a separate frying pan, season breasts with a little salt & pepper, use a little cooking spray and cook 5 minutes on each side over medium heat, set aside.
  • Preheat oven to 350F
  • When onions are cooked add in thyme and garlic. Add in flour and mix well. Stir in 1/2 cup of your chicken broth and cook for 5 minutes.
  • Stir in remaining chicken broth, vinegar and mustard, bring to a boil, the sauce should thicken at this point.
  • Place your chicken in a sprayed casserole dish, top with your onion mixture and bake for 20 minutes.
  • Remove and add your shredded gouda cheese (can substitute for another cheese if you wish)
  • Turn oven to broil and broil for 5 minutes until cheese is melted.
  • Serve immediately, makes 4 servings. Can be frozen.

4 (8 ounce) cans fat free chicken broth
50 ounces potatoes, diced (about 3 lbs.)
1/2 onion, diced
4 slices bacon (crisply cooked)
8 ounces Velveeta reduced fat cheese product
1/4 cup fat free sour cream
2 tablespoons flour
3 tablespoons water

Steps:

  • Combine broth and potatoes. Cover and cook about 20 minutes, until potatoes are cooked through.
  • As potatoes are cooking, saute onions then add to cooking potatoes.
  • When the potatoes are soft, stir in cheese and sour cream, and simmer until the cheese is melted.
  • Thicken with the flour and water mix.
  • Serve and enjoy.

1 tablespoon canola oil
6 large sliced onions (about 3 pounds)
1/2 teaspoon salt
1 tablespoon all-purpose flour
3 fresh thyme sprigs
1/2 teaspoon fresh thyme leave
1/4 teaspoon fresh ground pepper
4 cups reduced-sodium beef broth
4 cups reduced-sodium chicken broth
2 ounces goat cheese, at room temperature
6 slices toasted French bread (3/8 inch slices)

Steps:

  • Heat the oil in a large dutch oven over medium heat. Add onions and salt; cook, first tossing with tongs, and when they begin to wilt, stirring occasionally with a spoon, until pale golden brown and very soft, about 35 minutes.
  • Stir in the flour and cook, stirring occasionally, until the flour is lightly browned, about 2 minutes.
  • Transfer the onions to a 5 or 6 quart slow cooker. Add thyme sprigs and pepper. Pour the broth over the onions. Cover and cook until the flavors are blended 4-5 hours on high or 8-10 hours on low. Discard thyme sprigs when done.
  • Combine the cheese and thyme leaves in a bowl. Spread the cheese mixture over the bread slices. Ladle the soup into bowls, top each serving with a bread slice.

I have not tried this yet, just got it from a friend who has been making it weekly and says it's easy and very filling, with 3 1/2 WW points per 1 cup serving. I can't guarantee that it's "Weight Watchers". It looks like a basic soup that other vegetables could be added to (such as broccoli or cauliflower) to add nutrients without adding a lot of calories. Note: after seeing the calorie and fat count on this, it doesn't look like a weight watchers' item! However, I'm keeping it on here for a filling, easy soup that I'd like to try.

26 -30 ounces frozen hash browns (plain)
2 (14 ounce) cans nonfat chicken broth
1 (10 1/2 ounce) can 98% fat-free cream of chicken soup
1/4 cup chopped onion
1/4 teaspoon pepper
1 (8 ounce) package low-fat cream cheese (1/3 less fat)
1 cup nonfat milk

Steps:

  • Add first 5 ingredients to crock pot and cook on high for one hour. Stir and then turn to low, cook for another hour.
  • Add cream cheese and cook another 30 minutes or until cheese can be stirred into mixture. Add milk and cook 10-15 minutes longer.
  • Optional: Garnish with chopped green onion and bacon bits (add 1 point for garnish).
  • Variation: Use frozen Country potatoes or Potatoes O'Brien in place of plain hash browns.

3 large Yellow Onions (peeled and sliced thin)
3 tablespoons Butter
2 tablespoons Brown Sugar
2 tablespoons Worcestershire Sauce
2 tablespoons Garlic (minced)
64.5 ounces Low Sodium Beef Broth (homemade OR 6 cans (10.75 ounces each))
1 whole Bay Leaf
1 sprig Fresh Thyme (or 1 teaspoon dried)
6 slices French Bread (sliced)
1 cup Swiss Cheese (shredded)
1 cup Parmesan Cheese (shredded)

Steps:

  • Peel and slice the onions into thin slices.
  • In a medium skillet add the butter, sliced onions and brown sugar and saute the onions until they become translucent and caramelized.
  • Add the cooked onions, Worcestershire sauce, beef broth, garlic, bay leaf and thyme to a 4 quart or larger slow cooker.
  • Cover and cook for 4 to 5 hours on LOW.
  • Add soup to ovenproof bowls and top with a slice or two of French bread.
  • Add both Swiss cheese and Parmesan cheese to top of bread.
  • Set the ovenproof bowls on a cookie sheet and place under the broiler for 1 to 2 minutes until the cheese is melted and bubbly.
  • Serve and enjoy!

  • Slice the onions and garlic finely. Set the Instant Pot to Sauté, spray the inner with low calorie cooking spray and brown the onions and garlic. Do not stir too frequently, you want the bottom to brown to give the soup extra colour. This will take around 10 minutes.

  • Melt butter in large skillet. Add sliced onions and salt. Cook on medium heat until the onions are well browned, stirring every couple of minutes. This will take approximately 20 minutes. Once the onions are wonderfully brown (and smell so good!), add a bay leaf and fresh thyme sprigs to the skillet (if using dried thyme, reduce by 1/2 the amount used). Add sherry, minced garlic, sugar, beef broth and chicken broth to skillet. Stir well, to combine all ingredients. Let this mixture cook, uncovered for 20 minutes on medium heat, stirring occasionally. This will burn off the alcohol (sherry). When done, remove bay leaf and thyme sprigs from soup. Stir in soy sauce and black pepper.
  • Ladle the hot soup into bowls, and immediately garnish each serving with 1/2 Tablespoon grated Parmesan cheese and fresh thyme (if desired). Serve, and ENJOY! (the leftovers are wonderful, as well!)
