Easy Slow Cooker Apple Pork Roast image

My husband doesn't like BBQ sauce, but we had a pork roast. I whipped this up in the slow cooker, and it was awesome served with broccoli and rice, and also as pulled pork sandwiches for the 2 kids and hubby for a few days without them getting tired of it! It got better and better until it was gone, so I figured it was worth sharing. You let me know what you think!

6 apples with peel, cored and cut into 8 wedges
1 large red onion, roughly chopped
¼ teaspoon ground cinnamon, or to taste
7 pounds pork shoulder roast
½ teaspoon salt, or to taste
½ teaspoon ground black pepper, or to taste
1 (24 ounce) jar cinnamon-flavored applesauce
¼ teaspoon ground cinnamon, or to taste

Steps:

  • Place the apples and onion into the bottom of a slow cooker, and sprinkle with 1/4 teaspoon cinnamon.
  • Rub the pork roast with salt and pepper, and place it on the layer of apples and onions in the slow cooker. Pour the applesauce over the roast, and dust the top with 1/4 teaspoon cinnamon.
  • Cook on High setting for 8 hours. Serve the roast topped with the sauce, apples, and onions.

apple juice

Steps:

  • Place pork butt in crockpot. Stuff as many onion chunks as you can all around pork butt. Fill to cover with apple juice. Sprinkle with fresh cracked black pepper. Cook all night on high for lunch. Start early in the morning and cook all day for dinner.

1 boston butt
1 large yellow onion (cut into wedges)
2 (6 ounce) jars drained whole mushrooms
2 (10 1/2 ounce) cans Campbell's Golden Mushroom soup
paul prudhomme's blackened steak seasoning

Steps:

  • Spread one can of your soup on the bottom of crockpot.
  • Rinse off your roast and pat dry.
  • Rub Blackened Steak Seasoning into the meat covering all sides and place into the crockpot. (Fat side up).
  • Top with onion, mushrooms and the remaining can of soup.
  • Cook on low heat for 8 to 10 hours.
  • When cook time is complete, drain off the juices and make a gravy on the stove top.
  • Serve over steamed rice. ( I like jasmine rice).
  • Gravy: Put 2 c of juices in a pot and let it come to a boil over med hi heat. In a small cup, add a 1/4 c cold water and 2 Tbs cornstarch until mixed well. Add to boiling pot and stir with whisk until thick. Remove from heat and serve over meat.

So named because there are two of them....and because I couldn't think of a better title right now. Yield is estimate depending on the size of your butts and how you'll be serving them. Prep time does not include 4-hour refrigeration period.

2 pork butt
3/4 cup apple juice
1/2 cup water
1/2 cup sugar
1/4 cup kosher salt, finely ground
2 tablespoons Worcestershire sauce
1/2 cup white sugar
1/2 cup paprika
1/3 cup garlic salt
1/3 cup kosher salt
1/4 cup dark brown sugar
1 tablespoon chili powder
1 teaspoon oregano leaves
1 teaspoon cayenne pepper
1 teaspoon ground cumin
1 teaspoon black pepper

Steps:

  • Remove the fat cap and any large areas or pockets of external fat that can be easily trimmed away. The logic behind this method is that: ** Smoke and rub won't penetrate the external fat; ** It takes more time and fuel to cook a pork butt with all the fat intact; ** Unlike a brisket flat, which is quite lean and benefits from the protection that a layer of fat offers, a pork butt contains a tremendous amount of intramuscular fat, so the roast essentially "self-bastes" from the inside out; ** After many hours of cooking, much of the external fat renders away, and you're not going to eat the fat that's left--you're going to cut it away and discard it; ** Removing the external fat allows for the formation of more dark, flavorful outside meat that people enjoy so much.
  • Moving right along --
  • Mix the injection ingredients together and shoot 'em in those butts.
  • Mix the rub ingredients together and rub and spank it on said butts.
  • Refrigerate for at least 4 hours.
  • Smoke at about 225F until internal temperature reaches 195°F (Approximately 10 hours over mesquite lump with hickory chunks.).
  • Let rest for 15 minutes.
  • Pull, and have fun. Put some meat in a bun with a little of your favorite BBQ sauce. Add a little coleslaw if you wish and enjoy.

5 small garlic cloves, peeled
5 fresh sage leaves
2 1/2 lbs boneless pork butt
2 tablespoons coarse grain mustard
2 tablespoons packed dark brown sugar
1 tablespoon blended whiskey
1 teaspoon Worcestershire sauce

Steps:

  • Halve the garlic cloves and sage leaves. Using a paring knife, cut slits all over the pork butt, inserting a piece of garlic or a folded sage leaf into each slit. (I find it easiest to twist the knife a bit as I insert things into meat).
  • Mix together the remaining ingredients and smear all over the pork butt. Set in a dish, cover tightly with plastic wrap and refrigerate 12 to 24 hours.
  • Unwrap the pork and let it stand about 30 minutes on the counter.
  • Place in a 4 to 5 1/2 qt slow cooker and cook for 9 hours, or until the meat is fork-tender, but not falling apart.
  • Remove from cooker with tongs or wide spatula. Let rest 10 minutes, then carve into slices for serving.
