When we were little my Oma would serve this sauce over either pork or beef.

Number Of Ingredients 8

2 tablespoons butter
3 medium onions, coarsely chopped
1 teaspoon white sugar
½ teaspoon paprika
1 tablespoon white vinegar
1 cup chicken broth
1 slice dark rye bread, torn into pieces
salt and pepper to taste

Steps:

  • Melt the butter in a large skillet over medium heat. Add onions, cook and stir until lightly browned. Sprinkle in the sugar, and continue cooking until onions are deep golden brown, about 10 minutes. Stir in the chicken broth and vinegar and season with paprika. Mix in the bread until dissolved. Bring to a boil, then simmer over low heat for 3 minutes.
  • Transfer the mixture to a blender or food processor, and blend until smooth. Serve with pork or beef.

CARAMELIZED ONION SAUCE

Number Of Ingredients 5

2 tablespoons olive oil
4 cups thinly sliced onions
Salt
Freshly ground black pepper
2 cups chicken stock

Steps:

  • In a saucepan, over medium heat, add the oil. When the oil is hot, add onions. Season with salt and pepper. Saute for about 10 to 12 minutes, or until caramelized. Add the stock and bring to a boil. Reduce the heat to medium low and simmer for 10 minutes. Remove from the heat and using a hand-held blender, puree until smooth. Strain through a sieve and cool completely. Taste, and reseason if necessary.

1 lb beef, cut in 1-inch cubes
salt
2 onions, minced
2 tablespoons butter or 2 tablespoons oil
4 tomatoes, peeled and diced
1 teaspoon curry powder

Steps:

  • In a stewing pan, add enough water to meat to barely cover. Season with salt, bring to a boil, and simmer until tender, about 1 hour. remove meat and drain, reserving stock.
  • Sauté onions in butter or oil until golden brown. Add tomatoes and continue sautéing 5 minutes. Add meat and brown. Stir in curry powder; continue cooking until flavors have blended. Add enough of reserved stock to make stew of desired consistency.

Steps:

  • Blend until smooth and thick.
  • Serve with mint and a maraschino cherry in whiskey-sour glasses.

A recipe from the "Best of Regional African Cooking" book. A spicier version of this Ugandan sauce is served in Kenya and Tanzania.

Number Of Ingredients 8

1 onion, finely diced
2 tomatoes, peeled and finely diced
2 tablespoons oil
1 teaspoon curry powder
1 cup unsalted peanuts, finely ground
3 -4 cups water
1 (10 ounce) package frozen spinach, cooked and drained
salt, to taste

Steps:

  • Mix onions and tomatoes together and toss with curry powder.
  • Heat the oil in a heavy saucepan and sauté the onions and tomatoes until the onions are yellow.
  • Add the peanuts and water, bring to a boil and then lower to a simmer, stirring all the time until the simmering stage is reached.
  • Continue to cook, uncovered, until the nuts are well cooked.
  • Season with salt, then increase the heat and reduce until the sauce reaches the right consistency.
  • Mix in the cooked spinach.

This creamy, smooth and tangy sauce is a hit in our house over chicken or asparagus. The sauce is simple but impressive enough for company too.

6 medium chicken breasts
3 tablespoons butter or 3 tablespoons margarine
2 tablespoons all-purpose flour
1/3 cup chopped green onion
3/4 cup chicken broth
1/4 teaspoon salt
pepper
1 -2 tablespoon Dijon mustard (to taste)
1 cup plain yogurt

Steps:

  • Melt butter over med. high heat.
  • Stir in flour and cook until bubbly.
  • Reduce heat to medium.
  • Stir in remaining ingredients except yogurt. Make sure you stir the green onions into the sauce at this point. The release of these flavors as it warms is what makes the sauce!
  • Continue cooking, stirring occasionally, until sauce thickens (3 to 5 minutes).
  • Stir in yogurt and heat through.
  • Serve over baked or sauteed chicken breast.
