"I love this whole-grain bread because it makes a pretty loaf with a great texture," says Carol Forcum of Marion, Illinois. "It's not at all heavy...in spite of the whole-wheat flour and wheat germ."

Number Of Ingredients 9

1/2 cup plain yogurt
1 package (1/4 ounce) active dry yeast
1 cup warm water (110° to 115°)
1 cup whole wheat flour
1/4 cup toasted wheat germ
1 tablespoon sugar
1 tablespoon olive oil
1 teaspoon salt
1-2/3 to 2 cups bread flour

Steps:

  • Let yogurt stand at room temperature for 15 minutes. In a large bowl, dissolve yeast in warm water. Add the whole wheat flour, wheat germ, sugar, oil, salt and yogurt. Beat until smooth. Stir in enough bread flour to form a firm dough., Turn onto a lightly floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a bowl coated with cooking spray, turning once to coat the top. Cover and let rise in a warm place until doubled, about 1 hour., Punch dough down. Turn onto a lightly floured surface; shape into a loaf. Place in a 9x5-in. loaf pan coated with cooking spray. Cover and let rise until doubled, about 40 minutes., Bake at 375° for 35-40 minutes or until golden brown. Remove from pan to a wire rack to cool.

Yogurt Whole Wheat Bread image

I made this bread this morning. I used soy yogurt instead of dairy. I also added a tablespoon of caraway seeds and a tablespoon of Kirkland brand Organic No-Salt Seasoning. The texture of this bread is dense and somewhat spongy. The crust is nice and crispy. This recipe makes 1 two pound loaf of bread.

1 cup plain nonfat yogurt
1/2 cup warm water (110-115'F)
1 1/2 tablespoons vegetable oil
1 tablespoon maple syrup
1 teaspoon salt
1 1/2 cups whole wheat flour
2 1/4 cups bread flour
2 tablespoons wheat germ
2 teaspoons active dry yeast

Steps:

  • Add all the ingredients in the order given above making sure that you do not let the yeast touch any of the wet ingredients.
  • My machine beeps part way through the process and I added the caraway seed and the no-salt seasoning at that time.
  • When the bread is done, using oven mitts, remove the tray from the bread machine and shake the loaf out onto a cooling rack.
  • Cool completely before slicing and slather with some Earth Balance vegan margarine, so yummy.

1 3/4 cups whole wheat flour
1 1/4 teaspoons baking powder
1/2 teaspoon baking soda
2/3 cup sugar
1/3 cup plain fat-free yogurt
4 egg whites
2 tablespoons milk
1 cup mashed ripe banana
1/4 cup chopped nuts

Steps:

  • Stir together flour, baking powder and soda. Set aside.
  • With electric mixer, beat sugar and yogurt. Add eggs, one at a time, and milk, beaintg until smooth after every new addition.
  • Add flour mixture and banana alternately to creamed mixture. Fold in nuts.
  • Turn batter into lightly greased 8x4x2-inch loaf. Bake for 60-65 minutes at 350degrees.

There's no yeast in this bread, so it's good for special diets. You may also use soy milk instead of regular milk if you wish. It's pretty dense, but great when fresh from the oven. Especially with butter and honey on cold mornings!

1 cup rolled oats
1 cup whole wheat flour
2 teaspoons baking powder
½ teaspoon salt
1 ½ tablespoons honey
1 tablespoon vegetable oil
1 cup milk

Steps:

  • Preheat oven to 450 degrees F (230 degrees C).
  • Grind oatmeal in a food processor or blender. In a large bowl, combine oatmeal, flour, baking powder and salt. In a separate bowl, dissolve honey in vegetable oil then stir in the milk. Combine both mixtures and stir until a soft dough is formed. Form the dough into a ball and place on a lightly oiled baking sheet.
  • Bake in preheated oven for about 20 minutes, or until bottom of loaf sounds hollow when tapped.

This is my go-to recipe for my bread machine. I make a couple loaves every week. The recipe came in the booklet along with my machine...I wish I could find that booklet but luckily I wrote the recipe down. Since I'm messy with flour, I like to only measure these ingredients occasionally. I like to measure out all the dry ingredients, except the yeast, and store in a gallon-size baggie in the freezer. I make all at once about 6 baggies, so when I want to make a quick loaf before I go to bed, I just have to add the water, yogurt, my baggie of dry ingredients, the butter, and yeast. It's SO convenient.
