Widely used throughout Southeast Asia, turmeric adds distinct color, aroma, and flavor to both sweet and savory dishes. We've combined it with pumpkin pie spice (rich with cinnamon, ginger and cloves) to make a quick seasoning for skinless chicken thighs. Served on top of crispy naan and drizzled with a tangy yogurt sauce, you've got a complete meal in just 20 minutes!

1/4 cup red wine vinegar
1 tablespoon honey
Kosher salt and freshly ground black pepper
2 red jalapenos, thinly sliced
1 pound boneless, skinless chicken thighs, thinly sliced
2 teaspoons pumpkin pie spice
1 1/2 teaspoons ground turmeric
4 tablespoons olive oil
5 ounces baby spinach
2 cloves garlic, grated
1/3 cup plain whole milk yogurt
Juice of 1/2 lemon
4 pieces naan
1/4 cup fresh cilantro leaves

Steps:

  • Preheat the broiler. Combine the vinegar, honey and 1/2 teaspoon salt in a medium bowl. Add the jalapenos and stir gently to cover. Set aside.
  • Toss the chicken with the pumpkin pie spice, 1 teaspoon of the turmeric, 1 tablespoon of the olive oil, 1 teaspoon salt and a few grinds of black pepper in a large bowl. Heat 2 tablespoons olive in a large nonstick skillet over medium-high heat. Add the chicken and cook, tossing occasionally, until the chicken is no longer pink in the middle and is crispy in some spots, 10 to 12 minutes. Transfer the chicken to a plate and add the spinach and 1 clove garlic. Cook, stirring occasionally, until the spinach is just wilted and still a vibrant green, 1 to 2 minutes.
  • Meanwhile, whisk the yogurt with the lemon juice, the remaining 1/2 teaspoon turmeric, remaining garlic clove, 1/4 teaspoon salt and a few grinds of black pepper in a medium bowl until smooth.
  • Place the naan on a baking sheet and brush the pieces with the remaining 1 tablespoon olive oil. Broil until crispy and charred in places, 2 to 3 minutes.
  • Top each piece of naan with some spinach, then with chicken, pickled jalapenos and cilantro leaves. Drizzle with the yogurt sauce. Serve warm.

Our method is close to the traditional way, except we finish ours in the oven rather than on the stovetop. This ensures even heating, which acts as an insurance policy against burning. Save the leftover onion oil - it's very fragrant and flavorful and can be used in other sauces.

1 cup whole milk yogurt
Kosher salt
2 teaspoons Kashmiri chili powder (see Cook's Note)
1/2 teaspoon ground turmeric
2 1/2 pounds bone-in skinless chicken thighs
1 1/2 cups vegetable oil
2 large red onions, thinly sliced
2 cups basmati rice
8 whole cloves
7 green cardamom pods
3 bay leaves
1/4 teaspoon whole black peppercorns
2 large pinches saffron
1/4 cup whole milk
1/2 cinnamon stick
1 teaspoon cumin seeds
1 tablespoon finely grated ginger
5 cloves garlic, finely grated
2 medium tomatoes, chopped into 1/2-inch pieces
1/2 cup cilantro leaves
1/2 cup mint leaves

Steps:

  • Whisk together the yogurt, 3 tablespoons salt, chili powder and turmeric in a large bowl. Add the chicken and turn to coat. Let sit at room temperature until ready to use, up to 1 hour. (Alternatively, the chicken can be marinated for up to 2 days covered with plastic wrap in the refrigerator.)
  • Meanwhile, heat the oil in a large heavy-bottomed saucepan over high heat until a deep-fry thermometer reaches 350 degrees F. Fry half of the onions, stirring frequently for even cooking, until deep golden brown, 10 to 12 minutes. Transfer them to a paper-towel lined baking sheet to drain. Season with salt and let cool. Let the oil come back up to temperature and repeat with the remaining onions. Reserve the oil.
  • Wash, rinse and drain the rice in a bowl full of cold water until the water is almost clear, about 5 times. Bring the rice, 1/4 cup salt, 4 of the cloves, 3 of the cardamom pods, 1 of the bay leaves, the peppercorns and 3 quarts of water to a boil in a large pot over high heat. Cook for exactly 5 minutes. (The rice will not be completely cooked; it will continue to cook in the oven. Do not cook longer or the rice will get mushy.) Drain and transfer the rice and spices to a medium bowl.
  • Position a rack in the lower third of the oven and preheat to 300 degrees F.
  • Stir together the saffron and milk in a small bowl until combined.
  • Heat 3 tablespoons of the reserved onion oil in a large Dutch oven over medium heat. Add the cinnamon stick, cumin seeds and the remaining 4 cloves, 4 cardamom pods and 2 bay leaves. Cook, stirring frequently, until the spices are very fragrant and beginning to brown, about 1 minute. Add the ginger and garlic and cook, stirring frequently, until very fragrant and beginning to stick to the bottom of the pan, about 1 minute. Add the tomatoes and 1 teaspoon salt and cook, stirring occasionally and scraping the garlic and ginger from the bottom of the pan, until the tomatoes start to break down and most of the liquid has evaporated, 5 to 7 minutes. Stir in 1/2 cup water, bring to a boil and scrape up any bits from the bottom of the pan.
  • Remove the chicken from the marinade and layer on top of the tomatoes. Then sprinkle half the fried onions on top of the chicken. Top with the rice and spices and then drizzle the saffron milk over the rice. Cover the pan and bake until the liquid evaporates, the rice is tender and the chicken is cooked through, 30 to 40 minutes.
  • Let sit covered for 10 minutes, then transfer the biryani to a large serving platter. Top with the remaining fried onions, cilantro and mint leaves.

Steps:

  • In a small bowl or measuring cup, stir together 1/4 cup water with the honey, pepper and 1/2 teaspoon salt; set honey mixture aside.
  • In a medium bowl, stir together the flour, turmeric and 1 teaspoon salt. Add the chicken and toss until coated.
  • In a medium (10-inch) nonstick skillet, heat the oil over medium-high. Add the chicken and cook until the turmeric is fragrant and the chicken is golden brown on both sides, 2 to 3 minutes per side. Add the asparagus, season with salt, stir to combine and cook until crisp-tender, 1 to 2 minutes.
  • Add the honey mixture and cook, stirring, until the chicken is cooked through and the sauce has thickened, 2 to 3 minutes.
  • Remove from heat and stir in the vinegar, if using. Season to taste with salt and pepper. Serve with lime squeezed over top, if you like.

  • Combine turmeric, cayenne, 2 oz lemon juice, garlic and salt into a marinade, and marinate chicken for 3-4 hours. Make a basting sauce of the soy, sugar, oil and 1 oz of lemon juice.

2 sweet potatoes, cubed

This chicken marinated in a deeply golden curry sauce with ginger and scallions is one of the essential components of arroz gordo, a dish from Macau. The marinade suits thighs with skin and bones, and does wonders for wings. Let them sizzle in the oven so the skin starts to crisp and brown, and you have an excellent accompaniment for drinks. They do not need any condiment, though a yogurt-based raita made with fresh mint would dress them nicely.

1 1-inch piece fresh ginger, sliced thin
3 scallions, cut in 1-inch pieces and smashed
3/4 cup rice wine
1 teaspoon mild curry powder
2 teaspoons ground turmeric
2 teaspoons sherry vinegar
Salt
2 pounds chicken wings, separated at joints with tips discarded; or bone-in chicken thighs
1 1/2 tablespoons cornstarch
Crushed red chile flakes, to taste

Steps:

  • Place ginger, scallions, 1/2 cup rice wine, curry powder, turmeric, vinegar and salt to taste in a bowl. Mix. Place chicken wings in a heavy resealable plastic bag. Add sauce mixture, seal bag and refrigerate 8 hours.
  • Heat oven to 400 degrees. Remove chicken from the bag, reserving as much sauce as possible. Spread chicken on a baking sheet and bake, turning once and basting with marinade, until chicken is cooked and lightly browned, about 30 minutes. Remove from oven and wrap loosely in foil to keep warm.
  • Strain leftover marinade into a small saucepan, add remaining rice wine and simmer about 10 minutes. Mix cornstarch with 2 tablespoons cold water and whisk in. Season to taste with salt and chile flakes. Baste the chicken with thickened sauce and serve, or set sauce aside for basting when the chicken is reheated for the fat rice.

  • Smash, Skin and chop the garlic.
  • Add all the marinade ingredients into a bowl and crush together.
  • Wash the chicken, roll in the marinade.
  • You can leave it upto 24 hours in the fridge if you want a deeper flavour but can also cook straight away.
  • Use a little oil to grease an oven dish.
  • Chop the mushrooms, lay in the oven dish as a base.
  • Place the marinated chicken ontop the mushrooms.
  • Cook in a medium grill for 8minutes each side.
  • Check it's cooked through by pushing a fork into the thickest bit of the chicken and seeing if the juices run clear.

14 large garlic cloves, roughly chopped
2 tablespoons freshly squeezed lemon juice
1 heaping teaspoon kosher salt
2 tablespoons orange blossom water
1 1⁄3 cups canola oil
Marinade
1 tablespoon ground turmeric
2 teaspoons ground dried orange peel
1 teaspoon ground fennel seeds
3⁄4 teaspoon ground cumin
1 1⁄2 teaspoons ground coriander
1 garlic clove, grated with a Microplane
1 (1-inch) piece fresh turmeric, peeled and grated with a Microplane
1 tablespoon freshly squeezed orange juice
1 tablespoon plus 1 teaspoon orange blossom water
3⁄4 cup whole milk Greek yogurt
Chicken
One (3 1⁄2-pound) whole chicken, neck, wing tips, and innards removed
1 tablespoon plus 2 1⁄2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
Special Equipment: Kitchen twine (8 inches long), instant-read thermometer (optional)

Steps:

  • Toum
  • Combine the garlic, lemon juice, salt, and orange blossom water in a blender. Pulse on the lowest setting until just combined. Then in a slow and steady stream, add the oil while continuing to blend on low, gradually increasing the speed to medium-high until the mixture has fully emulsified. The consistency should be similar to mayonnaise with some soft peaks.
  • Store in an airtight container in the refrigerator for up to 1 week. The consistency will thicken slightly after refrigeration.
  • Note: The garlic is what binds the oil with the other liquids to make more of a solidified consistency. If you double this recipe, it will be even easier for your blender to emulsify the ingredients.
  • Marinade
  • In a bowl, combine the ground turmeric, orange peel, fennel, cumin, coriander, garlic, and fresh turmeric. Then add the orange juice, orange blossom water, and yogurt and stir to combine.
  • Chicken
  • Season the cavity of the chicken with salt and pepper. Rub some of the marinade inside the cavity of the chicken.
  • Using kitchen twine, tie the legs together. I like to keep the wings loose and not tied so the breasts and wings get crispy.
  • Evenly season the outside of the chicken with salt and pepper. Place the chicken on a sheet pan and let it sit, uncovered, at room temperature for 30 minutes. Then rub the marinade all over the outside. (It may seem like a lot but use it all.) Transfer the sheet pan, uncovered, to the refrigerator and marinate overnight.
  • When ready to cook, remove the chicken from the refrigerator and let sit at room temperature for 2 hours prior to cooking. (Cooking the chicken cold will take longer and might dry out the meat.)
  • Preheat the oven to 450°F. Place the chicken breast-side up on the rack of a roasting pan. Roast for 40 to 50 minutes (if the skin is browning too quickly, decrease the heat to 375°F), until the meat between the leg and thigh feels tender to the touch or using an instant-read thermometer placed in the thigh, the temperature reaches 160° to 165°F. Remove the chicken from the oven and let rest for 15 minutes to let the juices redistribute. Cut off the kitchen twine, carve, and serve with a side of toum.
