TURKEY SAUSAGE PATTIES

Turkey Sausage Patties image

Homemade turkey sausage patties are easy to make. You can double the recipe and freeze some sausages for next time. This homemade turkey sausage recipe is a recipe every brunch lover needs.

Provided by The Worktop

Categories     Breakfast     Brunch     Meats

Time 40m

Number Of Ingredients 7

2.2 pounds ground turkey ((I use turkey thigh for the juiciest sausages))
2 tablespoons maple syrup
1 1/2 teaspoons sea salt
1 teaspoon coarse ground black pepper
1/2 teaspoon garlic granules
1 teaspoon dried thyme
1 teaspoon dried sage

Steps:

  • In a large bowl, mix everything together. The best way is to use your hands and really mix it all together (I wear food prep gloves for this step) You can also use your stand mixer with the paddle attachment.
  • There are a few different ways you can do this. I like to use a large cookie scoop / ice cream scoop. I lightly pack the meat into the scoop, release the scoop, then flatten it with my palm. Alternatively, you can just divide the meat into 12 rough balls, and shape each ball into a sausage patty. Lastly, you can also roll out the meat between parchment paper, then cut the sausages with a round cookie cutter / lip of a cup.
  • Make 12 equal sized turkey sausages. I make them about 1/2-inch thick if I am going to cook them straight away, but you can make according to your preference.
  • If you are going to freeze half the batch, make the ones you are going to freeze no thicker than 1/2-inch, if you plan on cooking from frozen. Otherwise, you will need to defrost the sausage patties before cooking.
  • Heat some oil in a non-stick skillet over medium-high heat. Add the patties (you might need to do it in batches) and cook the first side for about 3-4 minutes, or until browned. Flip then cook the other side until browned and the sausage is cooked through. The most reliable way to to check if a turkey sausage patty is cooked through is to use an instant read thermometer. The internal temperature of each sausage patty should be 165°F / 74°C.
  • If you are cooking from frozen, follow the same instructions, but you will need to slightly increase the cooking time. If the sausages are browned but not cooked through, turn the heat down and finish cooking.

1/2 cup coarse fresh bread crumbs
3 tablespoons milk
2 pounds ground dark-meat turkey
1/4 teaspoon grated nutmeg
1/4 teaspoon cinnamon
1/4 teaspoon cayenne
1/8 teaspoon ground cloves
2 large egg yolks

Steps:

  • Preheat oven to 250°F.
  • Cook onion in 1 tablespoon oil in a 12-inch nonstick skillet over medium heat, stirring occasionally, until golden brown, 6 to 8 minutes. Remove from heat.

  • Add onion to crumbs (reserve skillet), then add turkey, nutmeg, cinnamon, cayenne, cloves, yolks, 2 teaspoon salt, and 1 teaspoon black pepper and combine well.

TURKEY SAUSAGE PATTIES WITH APPLE

Turkey Sausage Patties with Apple image

Provided by The Real Food Dietitians

Time 20m

Number Of Ingredients 9

1 lb. 90-93% lean ground turkey (may substitute ground chicken)
½ cup finely minced apples (any variety will work)
½ tsp. garlic powder
½ tsp. Italian seasoning or dried sage
½ tsp. paprika
1/4 tsp. crushed fennel (optional; crush lightly using a mortar and pestle)
½ tsp. salt
¼ tsp. black pepper
1-2 Tbsp. cooking fat of choice (such as olive oil or avocado oil)

Steps:

  • Combine turkey (or chicken), diced apple, spices, salt, and pepper in a mixing bowl. Mix thoroughly with a large spoon or your hands.
  • Using wet hands, form meat mixture into 12 small patties (Thin is good because they will shrink and fatten up in the pan a bit).
  • Heat a large skillet over medium-high heat. When the skillet is hot, add oil/fat (about ½ Tbsp. per batch of patties, depending on the size of your pan and whether or not it's non-stick).
  • Add the patties to the pan, being careful not to overcrowd them or it's difficult to flip them and they won't brown as well. Cook for about 4-5 minutes per side until browned and no longer pink in the center.
  • Remove patties to a plate lined with a paper towel and repeat with remaining oil and turkey mixture.
  • Store in a covered container in the refrigerator for up to 4 days - may be frozen for longer storage.

  • Turkey Sausage Pasta Primavera. Pasta primavera is a bright, fresh, and super colorful dish. It’s jam-packed with veggies and relies on a simple dressing of tomatoes, garlic, onion, and cheese rather than a heavy sauce.
  • Turkey Sausage, Kale and White Bean Soup. Beans are great for adding to soup because they’re relatively mild, buttery, and loaded with fiber. They’ll also bulk out the pot without breaking the bank.
  • Healthy Sausage Balls. These babies are like a cross between a biscuit and a meatball. They’re very meaty and loaded with fantastic flavor, all wrapped up in a fluffy and tender whole wheat dough.
  • Italian Turkey Sausage. This isn’t quite a one-pot wonder, but it’s close. You’ll use the same skillet for cooking the meat and veggies and then again to bake the whole dish at the end.
  • Sweet and Spicy Turkey Sloppy Joes. Sloppy Joes are such an indulgent and nostalgic meal. Unfortunately, they’re also messy and loaded with greasy goodness.
  • One-Pot Mediterranean Turkey Sausage and Rice. Not only is this a one-pot meal, but it can be on the table in just 30 minutes. Though, it would be faster if you used leftover cooked rice.
  • Easy Italian Sausage Tortellini Soup. When you add chicken to soups and stews, it brings a bit of flavor and plenty of protein. But it can get lost in the mix.
  • Sausage Stuffed Acorn Squash. Acorn squash are super cute and the perfect individual portion. Unlike stuffed peppers, these have a mild flavor and offer lots of squash yumminess.
  • Roasted Italian Sausages with Potatoes, Peppers, and Onions. Sausage and peppers in a huge deal in my house, and we eat it a lot. I like to serve the mix in hoagie buns with some extra cheese melted over the top.
  • Turkey, Spinach & Cheese Meatballs. Meatballs are juicy, tender, and extra-tasty, and I find that they’re universally loved. Whether you serve them with pasta or in a sweet glaze, you really can’t go wrong.
