4 cloves garlic
4 slices bacon, roughly chopped
1 onion, roughly chopped
2 slices white sandwich bread, torn into pieces
1/2 cup grated parmesan cheese (about 1 ounce)
1 large egg
1 1/4 pounds extra-lean ground turkey
1/2 head green cabbage, cored and sliced 1/2 inch thick
1 14.5-ounce can no-salt-added diced tomatoes
2 cups low-sodium chicken broth
2 tablespoons Worcestershire sauce
2 tablespoons chopped fresh parsley

Steps:

  • Pulse the garlic, three-quarters of the bacon and half of the onion in a food processor until finely chopped. Add the bread, cheese and egg; pulse to make a smooth paste. Transfer to a large bowl; add the turkey and mix with your hands. Form into four 1-inch-thick oval patties.
  • Cook the remaining bacon in a large nonstick skillet over medium heat until browned, 4 minutes. Increase the heat to high and add the patties. Cover and cook until golden brown, 4 minutes; flip and cook, uncovered, 3 to 4 more minutes. Transfer the patties to a plate.
  • Add the cabbage and the remaining onion to the skillet; cook, stirring occasionally, until the cabbage wilts, 4 minutes. Reduce the heat to medium high and add the tomatoes, chicken broth and Worcestershire sauce. Cover and bring to a boil, then uncover and cook until slightly reduced, 4 minutes. Return the patties to the skillet and simmer until cooked through, 10 minutes. Top with the parsley.

1/4 cup peanut oil
1 medium red onion, sliced
1 cup brown sugar
2 Granny Smith apples, sliced
1/2 cup red wine vinegar
4 pounds red cabbage, cut into julienne
2 cups red wine
2 cups orange juice
1 cinnamon stick
3 teaspoons ginger powder
Salt and pepper, to taste
A few gold leaves, for decoration (optional - available at specialty stores)

Steps:

  • Preheat oven to 350 degrees F.
  • Heat a heavy casserole. Add peanut oil. Saute the red onion until translucent. Sprinkle in brown sugar and cook for a few minutes until it starts to caramelize. Add sliced apples and deglaze with the red wine vinegar. Bring to a boil. Add red wine and orange juice, cinnamon stick, ginger powder and salt and pepper. Simmer for 5 minutes.
  • Add red cabbage and continue to cook for about 10 minutes on top of the stove. Cover cabbage with foil and cook in 350 degree oven for about 45 minutes. Remove. Taste, and adjust seasoning, if necessary.

  • Toast 1 teaspoon fennel seeds in a skillet with 1 tablespoon olive oil for 1 minute. Add 1 head thinly sliced red cabbage in batches, season with salt and pepper and stir until wilted. Add a pinch of sugar and a splash each of red wine vinegar and chicken broth. Partially cover and simmer over medium-low heat, stirring occasionally, until the cabbage is soft, about 30 minutes. Toss with 2 tablespoons butter and a handful of chopped parsley.

2 tablespoons unsalted butter, plus 1/2 stick
2 teaspoons whole cumin seeds
2 teaspoons whole caraway seeds
2 teaspoons whole coriander seeds
2 small heads savoy cabbage, cored, leaves thinly sliced
1 tablespoon kosher salt, plus more for seasoning
1 poblano pepper, washed and cut into thin rounds, including seeds
2 tablespoons red wine vinegar
4 oranges, juiced
3 tablespoons finely chopped cilantro leaves

Steps:

  • In a large saute pan, melt 2 tablespoons butter over medium heat. Add the cumin, caraway and coriander seeds and toast them slightly for 30 seconds. Do not let them brown.
  • Immediately add half of the cabbage and season with the salt. Toss and stir to wilt and to combine with the spices. Add the remaining cabbage and if necessary, reseason with salt and allow it to continue wilting. Stir in the poblano, toss and cook over medium heat, stirring from time to time, about 10 to 15 minutes. Taste for seasoning.
  • Stir in the vinegar and orange juice and toss to blend. Taste for seasoning.
  • Lower the heat and add the cilantro. Stir to combine and remove the pan from the heat. Arrange it on a serving platter and serve.

1 small onion, sliced
2 bay leaves
Salt and freshly ground black pepper
1 large head cabbage, cored and thinly sliced or shredded
1 bottle beer

Steps:

  • In a large pot, add the oil and cook the bacon until browned and crispy. Add the onion and the bay leaves and season with salt and pepper. Add the cabbage, stirring to mix. Add the beer, season and cover. Braise until the cabbage has wilted, stirring occasionally, about 30 minutes.
  • Remove the bay leaves and serve immediately.

¾ cup finely diced sweet potato
⅓ cup minced shallots
½ cup finely diced red bell pepper
½ cup finely diced zucchini
¾ cup corn, fresh or frozen
¾ cup peas, fresh or frozen
1 clove garlic, minced
¾ teaspoon salt
½ teaspoon ground pepper
2 large eggs
½ cup low-fat milk
¾ cup whole-wheat panko breadcrumbs
¼ cup minced fresh parsley
2 tablespoons Worcestershire sauce
1 teaspoon chopped fresh thyme or 1/2 teaspoon dried
Pinch of cayenne pepper
2 pounds 85%-lean ground turkey
¼ cup ketchup

Steps:

  • Preheat oven to 350 degrees F. Coat a rimmed baking sheet with cooking spray.
  • Heat oil in a large skillet over medium-high heat. Add sweet potato and shallots and cook, stirring occasionally, for 3 minutes. Add bell pepper and zucchini; cook, stirring, until the vegetables are starting to soften, 2 to 3 minutes. Add corn, peas and garlic; cook, stirring, for 2 minutes more. Stir in salt and pepper. Turn the mixture onto a plate and cool for 10 minutes.
  • Whisk eggs in a large bowl; whisk in milk, breadcrumbs, parsley, Worcestershire, thyme and cayenne. Stir in the cooled vegetables. Add turkey and gently but thoroughly mix with your hands or a spoon to combine. Shape the mixture into two loaves (about 6 by 3 inches each) on the prepared baking sheet. Brush the top of each loaf with half the ketchup.
  • Bake until an instant-read thermometer inserted into the center registers at least 160 degrees F, about 40 minutes. Let stand for 15 minutes before slicing.

I'll agree that Rachael Ray can be a nagging voice on the TV for even a 30-minute meal. But, the gal sure can cook. I took her Meatloaf Muffin recipe and doctored it up for a healthier alternative. This quickly became a staple in my health-conscious household. You make the meatloaf in a muffin tin so portion control is easy as pie.

1 lb ground turkey (not turkey breast)
1 small onion, cut into chunks, about 1/2 cup
1 celery rib, cut into a few large pieces
1/2 green bell pepper, about 1/4 cup
1 large egg, beaten with a splash of milk
3/4 cup breadcrumbs, plain
1/2 tablespoon McCormick's Montreal Brand steak seasoning
1/2 cup barbecue sauce
1/2 cup salsa
1 tablespoon Worcestershire sauce
olive oil

Steps:

  • Preheat oven to 450 degrees and brush a 12-muffin tin with olive oil.
  • Put the ground turkey in a large bowl.
  • Put onion, celery and green pepper in the food processor. Pulse until finely chopped and add to the bowl of meat.
  • Add egg, breadcrumbs and steak seasoning to the bowl.
  • Mix together the BBQ sauce, salsa and Worcestershire in a separate small bowl. Pour half the sauce mixture into the bowl with the meat.
  • Mix the meatloaf together with your hands.
  • Using an ice cream scoop, fill the muffin tin and top each loaf with the remaining sauce.
  • Bake for 20 minutes.
