Steps:

  • Mix all the ingredients and shape into 30 meatballs approximately 1" across.
  • Spray a nonstick pan lightly with veggie oil.
  • Cook the meatballs for 5-6 minutes or until cooked through and nicely browned on the outside You will likely have to repeat the process for a second batch unless you have one big frypan!

Nigella's turkey meatballs are light and succulent, as well as being lower in fat. Make a batch - half for tea and half to be frozen for future outings.

1 onion, peeled
1 stick celery
2 tbsp garlic oil
1 tsp dried thyme
2 x 400g/14oz tins chopped tomatoes, plus approximately 2 full cans of water
1 tsp sugar
1 tsp sea salt flakes or ½ tsp pouring salt
black pepper, to taste
500g/1lb 2oz turkey mince
1 free-range egg
3 tbsp breadcrumbs
3 tbsp grated parmesan
1 tsp Worcestershire sauce
½ tsp dried thyme

Steps:

  • For the sauce, put the onion and celery into a food processor and blitz to a mush. (Or you can chop as finely as humanly possible by hand.) Reserve 2 tablespoons of the mixture for the meatballs.
  • Warm the garlic oil in a large, heavy-based saucepan or casserole, add the onion and celery mixture, along with the thyme, and cook at a moderate to low heat, stirring every now and again, for about 10 minutes.
  • Add the cans of plum tomatoes, filling up each empty can with water to add to the pan. Season with the sugar, salt and pepper, stir well and let the mixture come to a bubble, then turn the heat down and simmer the sauce gently while you get on with the meatballs.
  • For the meatballs, put all the ingredients for the meatballs, including the reserved chopped onion and celery, and salt according to preference, into a large bowl and gently mix together with your hands. Don't overmix, as that will make the meatballs dense-textured and heavy.
  • When all the meatball ingredients are not too officiously amalgamated, start rolling them into balls. The easiest way is to pinch out an amount about the size of a generously heaped teaspoon and roll it into a ball between the palms of your hands. Put each meatball onto a baking tray lined with baking parchment or greaseproof paper. You should get about 50 little meatballs.
  • Drop the meatballs gently into the simmering sauce; I try to let these fall in concentric circles working round the pan from the outside edge inwards, in the vaguest of fashions.
  • Let the meatballs simmer in the sauce for 30 minutes, or until cooked through. Serve with rice, pasta, couscous or however you so please.

1 tablespoon tomato paste
3/4 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
2 large eggs, at room temperature
2 cloves garlic, minced
1 small onion, finely chopped
1 pound ground dark turkey meat
1 pound spicy Italian turkey sausage links, casings removed
Extra-virgin olive oil, for drizzling
1/4 cup extra-virgin olive oil
3 large cloves garlic, smashed and peeled
1 large onion, finely chopped 1 teaspoon kosher salt, plus more to season
1/2 teaspoon freshly ground black pepper, plus more to season
3/4 cup chopped fresh basil
2 teaspoons finely ground fennel seeds

Steps:

  • Preheat the oven to 400 degrees F.
  • For the meatballs: In a large bowl, combine the breadcrumbs, Parmesan, basil, parsley, milk, ketchup if using, tomato paste, salt, pepper, eggs, garlic and onions. Using a wooden spoon, stir to blend. Add the ground turkey and sausage meat. Using fingers, gently mix all the ingredients until thoroughly combined.
  • Using a 1-ounce cookie scoop or a small ice cream scoop, form the meat mixture into 1 1/2-inch balls (22 to 24 meatballs). Place the meatballs on a heavy nonstick baking sheet, spacing apart. Drizzle with olive oil and bake until cooked through, 15 minutes.
  • For the tomato sauce: Heat the olive oil in a large deep skillet with 2-inch-high sides over medium-high heat. Add the garlic, onions, salt and pepper. Cook for 5 to 6 minutes. Add 1/2 cup of the basil, the fennel, oregano and crushed tomatoes. Bring to a simmer. Cook over medium heat until the sauce thickens slightly, stirring occasionally, 15 to 20 minutes. Stir in the remaining 1/4 cup basil. Adjust the seasoning with more salt and pepper if desired.
  • Add the meatballs to the tomato sauce and simmer until the meatballs are heated through, about 10 minutes. Thin the sauce with chicken stock, 1/4 cup at a time, if needed.
  • Serve with grated Parmesan alongside.

1 minced clove of garlic
1 egg, lightly beaten
1-ounce fresh bread crumbs
2 tablespoons grated Parmesan cheese, plus extra to serve on the side for grating
1 pound ground turkey or chicken
5 tablespoons olive oil
2 cups tomato sauce (recipe above)
1 pound perciatelli pasta
Salt and pepper to taste
Parmesan cheese-to serve on the side for grating

Steps:

  • Bring a large pot of salted water to a boil for the pasta. In a bowl mix together; green onion, garlic, egg, bread crumbs and Parmesan cheese. With a fork stir in ground turkey or chicken and season to taste with salt and pepper. (You can crumble some in a skillet, cook, taste, and then adjust seasoning). Shape mixture into small meatballs. In a large skillet heat olive oil. Add meatballs in a single layer and let them cook for 2 to 3 minutes a side, without disturbing. If they stick, loosen with a slotted spoon. Stir in tomato sauce into the skillet, cover and simmer 10 to 15 minutes (while spaghetti is cooking) to reheat sauce and cook meatballs through. Drain pasta and then return to the pot and toss with remaining 2 tablespoons of olive oil. Dish out a portion of pasta on each plate and spoon some meatballs and sauce in center.

  • Fill a large stockpot with water and bring to a boil for pasta.;
  • Make Sauce:
  • In a 4-quart saucepan heat the oil over medium heat. Saute the onions until translucent, about 3 minutes, then add the garlic and cook for 1 minute more. Add tomato paste, tomatoes, chipotles, oregano, rosemary, and salt. Bring all the ingredients to a low boil, reduce heat and cook for approximately 15 minutes, until liquid has evaporated slightly. Season with salt and pepper, to taste. While sauce is cooking, make meatballs.
  • Preheat the broiler. Spray a baking sheet with cooking spray. Combine the turkey with all other ingredients in a large work bowl. Form into 2 1/2 -inch balls and place on a baking sheet. Broil for 10 minutes, or until browned and almost entirely cooked through.
  • Meanwhile, remove rosemary sprig from sauce and add fresh basil. Add the meatballs to the sauce, cover, and cook additional 10 minutes, or until sauce has slightly thickened and meatballs have absorbed some of the sauce. While the meatballs are cooking, cook the whole-wheat spaghetti according to package directions.
  • Drain the pasta and return it to the pot. Add the sauce and meatballs, toss and heat through over medium heat. Divide evenly among 4 pasta bowls and garnish with parsley and 1 tablespoon grated Parmesan.

1 egg
1/3 cup italian flavored breadcrumbs
1/4 onion white, chopped
1/4 cup tomato ketchup
4 tablespoons flour
3 tablespoons Worcestershire sauce
1 tablespoon water
2/3 cup non-fat powdered milk
2 cups warm water
1 ounce taco sauce
2 tablespoons dehydrated onion
1 teaspoon garlic powder
1 teaspoon crushed red pepper flakes
1 teaspoon poultry seasoning
1/2 teaspoon basil
1/2 teaspoon black pepper
1/2 teaspoon salt (to taste)
1/2 cup water

Steps:

  • Meatballs, part 1:.
  • Place turkey in a glass bowl. Squish to to cover the bottom of the bowl.
  • Crack egg atop turkey. Sprinkle breadcrumbs on top. Add ketchup and chopped onion.
  • Stir meat mixture until combined, but don't over mix (you run the risk of tough meatballs!).
  • Set this aside. This can be made in advance (and the flavors will meld beautifully!). Cover with plastic wrap and refrigerate this mixture for up to two days. Bring it up to room temp while prepping the sauce.
  • Sauce:.
  • Combine water and 2/3 cup nonfat powdered milk. I like to use a ranch dressing shaker to do this, because it makes pouring the milk into the saucepan later *much* easier. Set this aside.
  • In a medium saucepan whisk together Worcestershire sauce, 1 tbsp of water, and the flour. Whisk well to remove lumps. Heat over medium-low until you form a "roux." Try to avoid browning the flour. even though it's hard to judge with the W-sauce being brown.
  • Slowing whisk in about a third of your milk. Whisk well! You want to achieve a smooth sauce, with no lumps.
  • Continue to whisk. Increase heat to medium. As sauce begins to thick, add remaining milk in a slow stream, whisking all the while. (At this point if you have lumps in the sauce just run it through a fine sieve and discard the lumps. No one's the wiser).
  • Allow the sauce to thicken somewhat, then add the remaining ingredients. Simmer for three minutes, then remove the sauce to a bowl and set aside.
  • Meatballs, part 2:.
  • To shape the meatballs scoop about a tablespoon of the mix and roll into a ball shape. Place rolled meatballs on a cutting board or other clean surface. You should get about 30 small meatballs.
  • In the same saucepan you are going to brown the meat balls. First, spray a 2-quart dutch oven pot with nonstick, and set it close-by. Then generously coat your saucepan with nonstick. Working in batches, brown your meatballs. About one minute per side with a hot pan over medium heat seems to work just fine. As your meatballs finish browning, place them in the dutch oven pot.
  • Before adding the sauce to the pot, stir in 1/2 cup of water. Once all of your meatballs are brown (but not thoroughly cooked), cover them with the sauce. Bring the pot to a high simmer, then reduce the heat to low and simmer until cooked through, about 30 minutes.

1/2 cup quick-cooking rolled oats
6 ounces kale, stems removed and leaves roughly chopped (about 4 packed cups)

1 large yellow onion, roughly chopped
1 large egg
1/2 cup grated Parmesan
1/4 cup skim milk
Kosher salt and freshly ground black pepper
1 pound 99 percent fat-free ground turkey
2 tablespoons extra-virgin olive oil
One 28-ounce can no-salt-added crushed tomatoes
2 sprigs oregano
Pinch of crushed red pepper flakes
12 ounces whole-wheat angel hair pasta

Steps:

  • Pulse the oats in a food processor until coarsely ground. Add the kale, 1 teaspoon of the minced garlic and 1/4 cup of the chopped onion, and pulse until finely chopped and the texture is crumbly. Add the egg, 2 tablespoons of the Parmesan, milk, 3/4 teaspoon salt and 1/4 teaspoon pepper, and pulse until just combined. Transfer the mixture to a large mixing bowl, add the turkey and mix with your hands until well combined. Cover with plastic wrap, and refrigerate for 30 minutes.
  • Meanwhile, bring a large pot of water to a boil.
  • Heat the oil in a large, straight-sided skillet or Dutch oven over medium-high heat. Add the remaining onions and 1/4 teaspoon salt, and cook, stirring occasionally, until softened and lightly browned in spots, 6 to 8 minutes. Add the remaining garlic, and cook until softened, stirring constantly, about 30 seconds. Add the tomatoes, 1 1/2 cups water, 2 tablespoons of the remaining Parmesan, oregano, 1 teaspoon salt and the red pepper flakes. Stir to combine, and bring to a simmer. Cover, reduce the heat and simmer for 10 minutes.
  • Meanwhile, remove the turkey and kale mixture from the refrigerator. Shape level tablespoonfuls into round meatballs (about 36), and place on a rimmed baking sheet.
  • Remove the lid from the sauce. Use a metal spatula or 2 spoons to add the meatballs, one at a time, to the simmering sauce in a single layer. Cook, covered, until the meatballs are cooked through, about 15 minutes. Turn off the heat, and let the mixture sit, covered, for 5 minutes. Discard the oregano.
  • Meanwhile, cook the pasta in the boiling water according to package directions. Drain well.
  • To serve, divide the pasta among 6 plates or bowls. Top each serving with 7 meatballs and 1/2 cup tomato sauce. Sprinkle with the remaining Parmesan.

500g carton tomato passata
500ml reduced-salt chicken stock
2 tbsp chopped parsley
broccoli and potatoes or pasta and salad , to serve
400g pack lean turkey breast mince
4 tbsp porridge oat
1 tsp fennel seed , crushed
1 garlic clove , crushed
spray of oil

Steps:

  • Heat the oil in a large non-stick frying pan with a lid, then tip in the onion, carrots, celery, garlic and fennel, and stir well. Cover the pan and cook over a medium heat for 8 mins, stirring every now and then. Pour in the passata and stock, cover and leave to simmer for 20 mins.
  • Meanwhile, tip the mince into a large bowl. Add the oats, fennel seeds and leaves, the garlic and plenty of black pepper, and mix in with your hands. Lightly shape into 25 meatballs about the size of a walnut. Spray or rub a non-stick pan with a little oil and gently cook the meatballs until they take on a little colour. Give the sauce a stir, then add the meatballs and parsley. Cover and cook for 10 mins until they are cooked through and the veg in the sauce is tender. Serve with broccoli and baby potatoes in their skins, or pasta and salad.

25g fresh white breadcrumbs
2 garlic cloves , crushed
2 tbsp olive oil
1 onion , chopped
1 carrot , diced
1 tsp fennel seeds
400g can chopped tomatoes
1 tbsp tomato purée
400g spaghetti , cooked, to serve

Steps:

  • Put the mince in a mixing bowl with the breadcrumbs and half the garlic. Season and mix well to combine. Using your hands, shape the mixture into 12 balls, then chill for 10 mins.
  • Meanwhile, heat 1 tbsp oil in a pan. Add the onion, carrot and remaining garlic. Cook for 5-6 mins until softened. Add the fennel seeds and cook for a few secs. Tip in the tomatoes with half a can of water, then stir in the tomato purée. Season and simmer for 15 mins until thickened. Using an electric hand blender, whizz until roughly smooth.
  • Meanwhile, heat the remaining oil in a non-stick frying pan and fry the meatballs for 8-10 mins until cooked through. Transfer to the sauce and simmer until piping hot. Serve with spaghetti.

This recipe is something I make often for my toddler who has allergies, so quick and easy! It doesn't require eggs like most meatballs. When making it for my son, I use the smaller amounts of sweet chili and green onion. I also use homemade bread crumbs from French bread, because of his allergies.I have even skipped the breadcrumbs completely and it worked. We make it as a snack or serve with rice and veggies for dinner. This recipe can be frozen. It easily doubles if you want to take it to a potluck or serve as an appy at a party. Serve with a side of sweet chili sauce to dip, or ketchup for crazy kids like my DS. ;)

1 1/4 lbs ground turkey or 1 1/4 lbs chicken
2 -3 green onions, diced
1/2 cup breadcrumbs
1/3-1/2 cup sweet chili sauce

Steps:

  • Combine all ingredients together.
  • In a pan lightly oiled (I use Pam), fry over medium heat until completely brown, about 5-10 minutes.
  • Bake in a preheated 350* oven until cooked through, about 15 minutes.
  • You can also cook them completely in the fry pan.
  • This recipe makes about 30 average size meatballs.
  • Adjust amount of Sweet Chili sauce and bread crumbs if it appears too dry or wet, but these amounts work perfectly for us.
  • You can combine all ingredients and refridge overnight then cook as normal, for a spicier flavor.
  • For OAMC - Flash freeze on a cookie sheet until frozen. Place in a ziploc bag once frozen. Heat in Micro for 45-60 seconds, depending on the size of meatball. I'm sure it can be reheated in the oven, but I haven't tried it yet.

Steps:

  • In a large bowl, combine egg, cereal, Worcestershire and lemon peel.
  • Crumble turkey over mixture; mix until well combined.
  • Shape into 20 meatballs.
  • In a large skillet coated with nonstick spray, brown meatballs.
  • Add broth; bring to a boil.
  • Reduce heat, cover and simmer 5-8 minutes or until turkey is no longer pink.
  • Remove meatballs and keep warm.
  • Combine the cornstarch, yogurt and lemon juice until smooth.
  • Gradually stir into juices in pan.
  • Bring to a boil; cook and stir until thickened, about 2 minutes.
  • Stir in carrot and onion; heat through.
  • Serve meatballs and sauce over noodles.

1 tablespoon vegetable oil
1 pound ground pork
1 pound ground turkey
2 large eggs
2 garlic cloves, finely chopped
1 cup fresh breadcrumbs
2/3 cup whole milk
1/2 teaspoon crushed fennel seeds
4 teaspoons finely chopped sage, plus whole leaves for garnish (optional)
2 1/2 teaspoons kosher salt, divided
3/4 teaspoon freshly ground black pepper, divided
1 (14-ounce) can jellied cranberry sauce
2 tablespoons fresh orange juice
2 tablespoons dark brown sugar
1 tablespoon finely chopped fresh ginger

Steps:

  • Preheat oven to 450°F. Coat a rimmed baking sheet with oil.
  • Using your hands, mix pork, turkey, eggs, garlic, breadcrumbs, milk, fennel, 4 tsp. chopped sage, 2 tsp. salt, and 1/2 tsp. pepper in a large bowl until incorporated. Roll into 1" balls, making sure to pack firmly.
  • Transfer balls to prepared baking sheet, packing them snuggly. Roast meatballs until firm and cooked through, about 15 minutes.
  • Meanwhile, cook cranberry sauce, orange juice, brown sugar, ginger, and remaining 1/2 tsp. salt and 1/4 tsp. pepper in a medium saucepan over medium heat, whisking constantly, until smooth, about 5 minutes.
  • Using a pastry brush, generously coat meatballs with 1/3 cup cranberry sauce mixture. Return meatballs to oven and continue to bake until glaze is shiny and caramelized, about 5 minutes more.
  • Shake sheet to coat meatballs with sauce. Transfer remaining sauce to a serving bowl and transfer meatballs to a serving platter. Top meatballs with sage leaves before serving, if using.

This recipe is the most requested recipe in our household. It is the result of many attempts to get the right combination of seasonings for turkey instead of hamburger meatballs that still have that Swedish meatball taste. We much prefer the taste to the original hamburger recipe.

2 lbs ground turkey (7% lean)
1 egg
3/4 cup breadcrumbs
1 teaspoon salt
1/2 cup milk
2 teaspoons lemon pepper seasoning
1 teaspoon paprika
1/2 teaspoon nutmeg
2 tablespoons chopped parsley
1 tablespoon onion flakes
2 cans chicken broth
2 -3 cups home made white sauce
hot cooked egg noodles

Steps:

  • Combine the first ten ingredients and shape into 1 1/2" meatballs.
  • In a large non-stick Dutch oven, brown meatballs in 1 tbsp of butter, turning carefully every few minutes to brown all sides, maintaining meatball shape.
  • Add chicken broth and simmer for 15 minutes.
  • Add white sauce.
  • (Note: I have used cream gravy or 2 cans cream soup such as mushroom or chicken to substitute for the white sauce. Both options work very well.) Stir, heat and serve over hot cooked egg noodles.

1-1/2 pounds lean ground turkey
SAUCE:
1 can (15 ounces) tomato sauce
1 can (14-1/2 ounces) diced tomatoes, undrained
1 small zucchini, chopped
1 medium green pepper, chopped
1 medium onion, chopped
1 can (6 ounces) tomato paste
2 bay leaves
2 garlic cloves, minced
1 teaspoon dried oregano
1 teaspoon dried basil
1 teaspoon dried parsley flakes
1/4 teaspoon crushed red pepper flakes
1/4 teaspoon pepper
1 package (16 ounces) whole wheat spaghetti

Steps:

  • In a large bowl, combine the egg substitute, bread crumbs, onion, pepper and seasoning blend. Crumble turkey over mixture and mix well. Shape into 1-in. balls; place on a rack coated with cooking spray in a shallow baking pan. Bake at 400° for 15 minutes or until no longer pink., Meanwhile, in a 4- or 5-qt. slow cooker, combine the tomato sauce, tomatoes, zucchini, green pepper, onion, tomato paste, bay leaves, garlic and seasonings. Stir in meatballs. Cover and cook on low for 6 hours. Cook spaghetti according to package directions; serve with meatballs and sauce.
