THE BEST HEALTHY WAFFLES (LOW FAT)
These are basically the only waffles I make. They are super simple, and a healthy, filling breakfast. I use Robin Hood Nutri Flour Blend for these. You can add fresh fruit or chocolate chips to the batter for a twist. I have also make chocolate waffles with this recipe, substituting milk for chocolate milk and adding some cocoa and a handful of chocolate chips.

Steps:
- Sift dry ingrediants in one bowl.
- separate one of the eggs. add the yolk and the rest of the wet ingredients together and whisk.
- beat the egg white in a clean bowl until peaks form.
- Add the wet into the dry, mixing until just combined. fold in the egg white.
- Pour into a preheated greased waffle iron, and I cook mine for 3-4 minutes with my waffle iron. This recipe yeilds 16 small square waffles for me (using just under 1/3 cup of batter per waffle).
- These freeze well.

TASTY LOW FAT, MULTIGRAIN STRAWBERRY ORANGE WAFFLES
I made these waffles by adaptation - I am always trying to adapt my favourite old school recipes into healthier versions without losing the taste. I think I did it with this recipe everyone ate them right up! I am from Canada and used Robin Hood Multigrain flour which contains a variety of grains including flax and millet but still retains a lightness that is nice. This is also really yummy with a dollop of yogurt on top of the fruit!

Steps:
- Preheat your waffle iron.
- Slice your strawberries into a bowl, add vanilla sugar and juice of the orange, stir gently to combine and set aside. (Can be done way ahead of time).
- Pour 'eggs' into a bowl with milk, yogurt, vanilla and stir to mix completely.
- In a separate, large bowl combine sugar, baking powder, salt and flour.
- Pour wet ingredients into dry, stir to completely combine.
- Use cooking spray on your waffle maker, follow your maker's directions to produce tasty waffles.
- While still hot, spoon strawberries on top and slice a half a banana over the berries.
- Enjoy!

ORANGE WAFFLES (LOW-FAT AND HEALTHY!)
I have surfed all the food.com recipes and all I could find were orange waffles with bisquick, or orange waffles with lots of butter/oil. So I resorted to google and came across a recipe for tropical waffles (http://www.recipebridge.com/g/ODAzMzYxODo6Ojo2Ng==), and tailored it to my needs. The results were great, and I hope you enjoy!

- Heat a waffle iron and lightly coat with nonstick canola oil spray.
- In a large bowl, combine flour, baking powder, sugar and salt.
- In a medium bowl combine orange juice, egg, canola oil, orange zest, and vanilla and mix well.
- Add wet ingredients to dry ingredients and mix until smooth.
- Cook until golden brown or until waffle begins to separate from iron, I found it took about 4 minutes for my iron.

ORANGE WAFFLES
This comes from the Red Lion B&B website. These can be made OAMC. Just make the waffles then flash freeze them (individually) before putting them in ziplock bags. Label and date. To reheat, put in the toaster or microwave.

- Heat a waffle maker, or if you don't have one, use a griddle pan (see tip, below). Meanwhile, mix the eggs and milk in a jug.
- Combine the flour, cocoa and sugar in a bowl, then gradually whisk in the egg and milk mixture until there are no lumps. Slowly pour in the melted butter, still whisking, then add the orange essence, zest and chocolate.
- Pour a ladleful of the batter into the waffle iron or griddle pan (see below), and cook for 5-6 mins, then repeat - don't worry if the waffles look dark, it's simply the cocoa. Cut in half and top with the oranges, maple syrup, more chocolate and whipped cream.

ORANGE NUT WAFFLES WITH ORANGE SYRUP
All thoughts of calories must be set aside while you plunge into these interesting special-day waffles. Orange Nut Waffles with Orange Syrup were originally printed in Bon Appetit (December 1981). I haven't tried these waffles yet but am planning on trying this very soon. When I make them I will be omitting the liquor in the syrup, replacing with juice.

- Preheat waffle iron.
- Sift flour, sugar, baking powder and salt into small bowl.
- Beat egg yolks in medium bowl until thickened.
- Add milk, orange juice and orange peel and mix thoroughly.
- Gradually add flour mixture, blending well.
- Stir in walnuts and butter.
- Beat egg whites in small bowl until stiff.
- Fold into walnut mixture.
- Bake waffles in waffle iron, according to manufacturer's instructions.
- Serve immediately with Orange Syrup.
- Orange Syrup (makes 1 2/3 cups).
- Combine sugar and orange juice in small saucepan and bring to bowl over low heat, stirring constantly.
- Remove from heat.
- Blend in remaining ingredients.
- Let cool completely.
- Strain into jar with tight-fitting lid.
- Refrigerate.
- Reheat syrup before serving.
PUMPKIN WAFFLES WITH ORANGE SYRUP (LOW FAT)

- In a medium bowl stir together the flour, brown sugar, baking powder, salt, and pumpkin pie spice. Make a well in the center of the flour mixture.
- In another medium bowl combine the milk, pumpkin, egg substitute, and oil. Add milk mixture all at once to flour mixture. Stir just until moistened (batter should be lumpy).
- Pour about 3/4 cup batter onto grids of a preheated, lightly greased waffle baker. close lid quickly; do not open until golden brown. Bake according to manufacturer's directions. When done, use a fork to lift waffle off grids. Repeat with remaining batter.
- For Orange Syrup: In a small saucepan stir together the orange juice, honey, cornstarch and cinnamon. Cook and stir until thickened and bubbly. Cook and stir for 2 minutes more. Serve warm. Makes about 1 cup.
