1 medium onion, thinly sliced
1/2 medium green bell pepper, diced
2 cups Minute® White Rice
1can (8 oz) tomato sauce
1 cup water
1 tsp salt
1 tsp black pepper
1 tsp prepared mustard (optional)
Chopped cilantro and lime wedges (optional)

Steps:

  • Pronto, meaning "quickly" or "soon" in Spanish, is part of this Spanish Rice, Pronto recipe because it is just that, fast to cook! Make sure to use our Minute® Instant White Rice so this comes together in minutes. Step 1
  • Heat oil in a large skillet over medium heat. Step 2
  • Add the onions and green peppers. Cook and stir until lightly browned. Step 3
  • Add rice, tomato sauce, water, salt, pepper and mustard powder, if desired. Stir well and bring to a boil. Step 4
  • Cover tightly and simmer for 5 minutes. Step 5
  • Serve with chopped cilantro and lime wedges, if desired.

1 1/2 cups long grain white rice
2 garlic cloves, minced
2 tablespoons vegetable oil
1/4 cup onion, finely diced
4 ounces el pato salsa fresca (or tomato sauce if you cant find el pato sauce)
2 1/2 cups chicken broth
1 teaspoon cumin
1 tablespoon chili powder
1/2 teaspoon sea salt
pepper

Steps:

  • in a bowl combine broth, cumin, chili powder, salt & half a can of el pato sauce (if you can't find el pato use regular tomato sauce).
  • brown rice, in hot oil, in a large skillet for approximately 5 minutes flipping occasionally.
  • add diced onion, minced garlic, sauté for 1 minute.
  • add seasoned broth, bring to a boil.
  • reduce heat to low, cover and simmer for 15 minutes. do not check on the rice before the 15 minutes is up, this will allow steam to escape and may make your rice turn out undercooked.
  • most of the water will absorb before the 15 minute time limit but keep covered and continue to steam for the entire 15 minutes. this will make for perfect rice that isnt crunchy.
  • after 15 minutes turn heat off, uncover & flip rice over. recover & let sit until everything else is ready. you can let the rice sit covered for up to 25 minutes which will cook out most of the moisture & leave perfect fluffy rice.

1 (15 ounce) can stewed tomatoes
1 1/2 cups chicken stock
1 1/4 cups rice
1 tablespoon butter or 1 tablespoon margarine
2 teaspoons chili powder
3/4 teaspoon oregano
1/2 teaspoon garlic salt
1 teaspoon cumin

Steps:

  • In medium saucepan, combine all ingredients (I usually mash tomatoes with potato masher or give them a quick spin in food processor).
  • Bring to a boil; reduce heat to low.
  • Cover and simmer 25 minutes or until rice is done. (Unless you like sticky, gooey rice, don't take off the lid and stir at all until it is done).
  • Garnish with green onions and/or cheddar cheese.

½ green pepper, chopped
1 cup rice
1 cup water
1 tsp salt
dash of pepper
½ tsp chili powder (or more to taste)
2 (8 oz) cans of tomato sauce

Steps:

  • Pre-heat the solar oven while preparing the recipe.
  • Put all ingredients in to a solar safe pot. Cook in the hot solar oven 1 to 1.5 hours until the liquid is absorbed and the rice is tender.
  • The amount of time needed to fully cook this recipe will depend on how hot your oven gets. The temperature of a solar oven is affected by many variables including the type of oven being used; the type of cookware being used - dark pot vs shiny pot; the weather - bright & sunny or partly cloudy; and how focused the oven is to the sun.

1/2 cup thinly sliced onion
1/3 cup diced green pepper
2 cups Minute Rice
1/4 cup vegtable oil or butter
2 cups hot water
2 (8 ounce) cans tomato sauce, or 4 cups (2 cans, l pound each) canned tomatoes and omit the water
1 teaspoon salt
1/2 teaspoon Chili powder (or to taste)
Dash pepper
Optional: 1/2 cup frozen or canned corn, can of sliced black olives
For an entree, add 1 pound of cooked hamburger

Steps:

  • Saute onion, green pepper, and Minute Rice (right from box) in the oil. Add remaining ingredients; mix well. Bring to a boil. Then reduce heat and simmer, uncovered, 5 to 10 minutes or until rice is done. Makes 4 to 6 servings. Here are some ways to mix it up a bit: Cheese Spanish Rice: Stir 1/2 cup grated Cheddar cheese into prepared rice; place in serving dish and top with additional 1/2 cup grated cheese. Beef Spanish Rice: Prepare as above, sauteing 1/2 to 1 pound ground beef with the rice. Mushroom Spanish Rice: Prepare as above, sauteing 1/4 pound sliced fresh mushrooms with the rice.

My Mom used to make this, and I found her recipe - it's from a 1968 Minute Rice calendar as September's feature. I've made a few changes though - using a little olive oil instead of 1/4 cup of fat like the original recipe, and adding 1 can of tomatoes and 1 small can of tomato sauce, sometimes I use black olives instead of green ones or both. This is a quick and hearty dinner, excellent with a salad.

1 -2 teaspoon olive oil or 1 -2 teaspoon canola oil
3/4-1 lb lean ground beef or 3/4-1 lb extra lean ground beef
1/2 green pepper, diced
1 medium onion, sliced or chopped
1 1/3 cups Minute Rice
2 (7 1/2 ounce) cans tomato sauce
1 1/2 cups hot water
1 teaspoon salt
1 dash ground black pepper
1/4 cup sliced green olives

Steps:

  • Heat oil in frypan and saute onion and green pepper till just soft, then add ground beef and break up as cooking so it is well crumbled.
  • Cook meat very well& drain fat if any.
  • Add tomato sauce and hot water, salt and pepper- bring to a boil.
  • Once boiling add in Minute Rice, stir, reduce heat and simmer uncovered for 5 minutes.
  • Garnish with sliced olives.
